Melon salad with feta and olives

As soon as there are the first watermelons on the market, the big knocking begins for me. I run from melon to melon and hold my ear to it and begin my extensive investigation. What does the perfect melon sound like? It sounds a little hollow, but still not too hollow – you know what I mean?! The sound needs to be balanced, harmonious, and kind of juicy. Anyway, I always need the most perfect watermelons for my melon salad with feta and olives.

Refreshing watermelon salad

Besides taboulé and fattoush, there is actually hardly a better salad for me in the summer than the watermelon salad. The sweet freshness of watermelon combined with hearty feta, aromatic olives and mint is simply an absolute dream. Especially the mint gives the salad again a proper freshness kick!

With the melon salad I treat myself to a cool homemade lemonade and the summer cooling program starts: Legs up and enjoy!

Aromatic olives go super well with it!

With olives I am actually always an absolute advocate of olives with stone. These have more flavor, but must be nibbled off. In order not to diminish the fun of the melon salad and not to have to bite again and again on a stone, I reach here then but rather to the already pitted olives.

If you need a tip on the olive variety for the melon salad, I can really recommend the super aromatic Kalamata olives! I could also eat away like that.

I know I could pit them by hand myself, but… nooooo. The melon salad also lives from the fact that it is prepared so quickly. Oh yeah: If you, like me, are also totally into cilantro, then swap out the mint for it. That tastes then again a whole number different.

By the way, the big knock on the watermelon continues after the meal: on my full belly! Bon appetite!


Recipe for melon salad with feta and olives

Ingredients

  • 1 KG Watermelon
  • 200 g Feta
  • 3 Handful  Mint
  • 150 g Olives
  • 2 El Olive oil

Zubereitung

  • Cut the melon open and cut the flesh into bite-sized cubes.
  • Coarsely chop the mint.
  • Crumble the feta over the melon.
  • Add olives and mint.
  • Dress the salad with olive oil and serve.
