Red cabbage salad with dried mint

This red cabbage salad with dried mint is somehow a kind of wallflower. On the one hand so unimpressive, but on the other hand still beautiful. Even as a child, I have made the red cabbage salad also like times to my main meal and just leave the rest. I love it simply the crunchiness, the fine acidity and the freshness of the dried mint.

By the way, the salad is really super easy to prepare. You simply cut the cabbage into fine strips and then marinate them in a delicious dressing of olive oil, apple cider vinegar (or another vinegar), freshly crushed garlic and a good pinch of dried mint. After that, you just knead everything nicely with your hands so that the red cabbage can absorb the marinade well and soften up a bit. That’s it! My mom used to give me a little taste after marinating and see if I liked the ratio with the acidity. The salad needs to have a good acidity to really be perfect. Let the red cabbage salad with dried mint marinate for a while so that the flavors can develop well and meanwhile you can still take care of the main course, for example the fantastic potato casserole with minced meat. Ingredients

  • 1 Garlic clove
  • 4 Tablespoon Olive oil
  • 8 Tablespoon  Apple cider vinegar
  • 1 teaspoon dried mint
  • 400 g Red cabbage
  • Salt, pepper

Zubereitung

  • Peel garlic and crush in a mortar or grate finely with a grater.
  • Whisk together garlic, olive oil, apple cider vinegar, mint, salt and pepper to make dressing.
  • Cut red cabbage into fine strips and mix with the dressing.
  • Let red cabbage salad stand for about 30 minutes. The more time you give it, the more aromatic it will be.
