These are&nbsp;<strong>Syrian filo pastries<\/strong>&nbsp;that are traditionally filled with&nbsp;<strong>rice<\/strong>,&nbsp;<strong>vegetables<\/strong>&nbsp;and&nbsp;<strong>meat<\/strong>. But the filled dumplings are also popular in other parts of the Levant &#8211; for example in Lebanon.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-hearty-filo-pastries\">Hearty filo pastries<\/h2>\n\n\n\n<p>So let&#8217;s start again: Ouzi are delicious dumplings made from wafer-thin&nbsp;<strong>filo pastry<\/strong>&nbsp;with a super spicy&nbsp;<strong>filling<\/strong>. The filo pastry makes the dumplings wonderfully crispy. If you can&#8217;t find filo pastry in the supermarket, you can also use&nbsp;<strong>strudel dough<\/strong>&nbsp;or&nbsp;<strong>yufka<\/strong>&nbsp;as an alternative.<\/p>\n\n\n\n<p>Everyone has their own recipe: my&nbsp;<strong>ouzi recipe<\/strong>&nbsp;differs slightly from the Syrian classic because I don&#8217;t fill the dumplings with rice, peas and pieces of meat, but with my aromatic&nbsp;<strong>spiced rice<\/strong>&nbsp;<a href=\"https:\/\/bistrobadia.de\/en\/hashweh-lebanese-rice-stuffing\/\">hashweh<\/a>.<\/p>\n\n\n\n<p>This rice filling consists of rice, minced meat, dried fruit, nuts and many traditional Levantine spices. What are they? I&#8217;ve mixed my favorites into the rice: cumin, coriander seeds, cloves, allspice, cardamom,&nbsp;<a href=\"https:\/\/www.amazon.de\/Bio-Ceylon-Zimt-N%C2%B0916-Aromadeckel\/dp\/B00CR2Y65O\/ref=as_li_ss_tl?__mk_de_DE=%C3%85M%C3%85%C5%BD%C3%95%C3%91&amp;keywords=rimoco%2BZimt&amp;qid=1579106525&amp;s=grocery&amp;sr=1-1&amp;linkCode=sl1&amp;tag=bistbadi09-21&amp;linkId=8b5ba2635a8fc152068d449ecad080e7&amp;language=de_DE&amp;th=1\">cinnamon<\/a>, pepper and, of course, a little salt. This mixture harmonizes perfectly with the sweet fruit and the rest of the filling.<\/p>\n\n\n\n<p>Although you can serve hashweh as spiced rice, it is also perfect for stuffing. Translated from Arabic, &#8220;<strong>hashweh<\/strong>&#8221; means &#8220;<strong>filling<\/strong>&#8221; &#8211; ideal for the crispy ouzi. I recommend a large dollop of yogurt and a fresh salad, such as&nbsp;<a href=\"https:\/\/bistrobadia.de\/en\/tabouleh\/\" target=\"_blank\" rel=\"noreferrer noopener\">tabouleh<\/a>&nbsp;or&nbsp;<a href=\"https:\/\/bistrobadia.de\/en\/colourful-salad-fattoush\/\" target=\"_blank\" rel=\"noreferrer noopener\">fattoush<\/a>, to accompany the savory filo pastries.<\/p>\n\n\n\n<p>If you don&#8217;t like mince and butter, you can of course use&nbsp;<strong>vegan<\/strong>&nbsp;products or leave out the (veggie) mince altogether. The rice filling still tastes fantastic.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ouzi-is-very-easy-to-prepare\">Ouzi is very easy to prepare<\/h2>\n\n\n\n<p>Now you already know the individual components: Filling and filo pastry. Once you have cooked the filling, all you have to do is make pockets. This is really very easy.<\/p>\n\n\n\n<p>Brush the pastry sheets with a little melted butter. This will give you nice crispy layers. To fill, simply place the pastry in a small bowl and add the filling.<\/p>\n\n\n\n<p>Then fold the ends over the filling and turn the dumplings out onto a baking tray. If there are a lot of guests, the filo pastries are made a little smaller. This allows them to be served as a&nbsp;<strong>side dish<\/strong>&nbsp;rather than as a main course.<\/p>\n\n\n\n<p>You are of course completely free to choose the size of your dumplings. If you are expecting a few more friends, I recommend making smaller ones and serving them as&nbsp;<strong>finger food<\/strong>.
