I&#8217;ve always loved spinach, so I was probably a rather unusual child. That&#8217;s why I honestly still can&#8217;t understand why so many children supposedly have an aversion to this divine vegetable. Yet you can make such incredibly tasty things with it. Spinach can not only be made into a stew, but can also be put into <a href=\"https:\/\/bistrobadia.de\/en\/spinach-pastries-fatayer\/\" target=\"_blank\" rel=\"noreferrer noopener\">dumplings<\/a> with feta or used to make a <a href=\"https:\/\/bistrobadia.de\/en\/green-spinach-shakshuka\/gruene-spinat-shakshuka-3\/\" target=\"_blank\" rel=\"noreferrer noopener\">green shakshuka<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Levantine home cooking<\/h2>\n\n\n\n<p>I used to come home from school and sometimes it smelled like&#8230; <strong>nothing<\/strong>. Catastrophic, not at all possible, an absolute impertinence. (I would then always immediately rush to the reserves of our small but always full chocolate stash). After all, you shouldn&#8217;t keep a hungry child who has just had a whole 3 hours of school waiting (I was a diva as a hungry child&#8230; I still am today). But as if by magic, a delicious <strong>spinach stew<\/strong> appeared on the table about 30 minutes later. My mother is quick at cooking, but Yakhnet Sabanegh is actually prepared in no time at all.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Spinach stew according to mom&#8217;s recipe<\/h2>\n\n\n\n<p><em>Yakhnet Sabanegh<\/em> simply means &#8220;<em>spinach stew<\/em>&#8220;. My family has <strong>two<\/strong> different <strong>recipes<\/strong> for this. My mother leaves out the meat, which makes the dish immediately <strong>vegan<\/strong>. And she has it on the table within <strong>30 minutes<\/strong>! So if you want to make the stew vegan, increase the amount of pine nuts for extra crunch.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">And the grandma-style version<\/h2>\n\n\n\n<p>I have used my grandmother&#8217;s recipe and also use some <strong>minced beef<\/strong>, which gives the spinach stew a stronger, heartier character. But freshly roasted pine nuts are a must here too!<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/43adae93-04e6-4d07-bb3e-56c523f5906a.jpeg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Spinach: fresh or from the freezer?<\/h2>\n\n\n\n<p>I personally love using fresh, young spinach in salads. I prefer to use the <strong>frozen<\/strong> version for stews. The spinach is washed and shock-frozen immediately after harvesting. This means that most of the nutrients remain in the vegetables. What&#8217;s more, the spinach is then conveniently already chopped and I can use it straight away.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients for the stew<\/h2>\n\n\n\n<p>You will need the following ingredients for this aromatic spinach stew:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Chopped spinach, frozen (or fresh baby spinach)<\/li>\n\n\n\n<li>Minced beef<\/li>\n\n\n\n<li>Vegetable stock (dried powder or fresh from the jar)<\/li>\n\n\n\n<li>Onion<\/li>\n\n\n\n<li>Garlic (fresh or as a paste)<\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/36Vq6LL\" target=\"_blank\" rel=\"noreferrer noopener\">Olive oil<\/a><\/li>\n\n\n\n<li>Lemon, untreated<\/li>\n\n\n\n<li>Pine nuts<\/li>\n\n\n\n<li>Coriander, ground<\/li>\n\n\n\n<li>Salt, pepper<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">And what comes with it?<\/h2>\n\n\n\n<p>I recommend serving with buttery rice or bulgur. In Lebanon, the Yakhnet Sabanekh is eaten incl. She doesn&#8217;t eat rice with cutlery, by the way, but scoops it all up with fresh <a href=\"https:\/\/bistrobadia.de\/en\/lebanese-pita-bread\/\" target=\"_blank\" rel=\"noreferrer noopener\">flatbread<\/a>. So of course you can also serve it with fresh flatbread.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How easy it is to prepare the spinach dish<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Chop the onion and garlic.<\/li>\n\n\n\n<li>Fry the minced beef with onion and garlic<\/li>\n\n\n\n<li>Add the coriander and spinach and deglaze with the stock.<\/li>\n\n\n\n<li>Add the lemon juice to the stew and simmer.<\/li>\n\n\n\n<li>Toast the pine nuts and add to the pan.<\/li>\n\n\n\n<li>Season to taste with salt and pepper.<\/li>\n\n\n\n<li>Prepare buttered rice or side dish of your choice.<\/li>\n\n\n\n<li>Serve the spinach stew with buttered rice and lemon wedges if desired.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Tips<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>For a <strong>vegan<\/strong> version of the dish, simply leave out the meat or replace it with <strong>chickpeas<\/strong>.<\/li>\n\n\n\n<li>Use <strong>frozen spinach<\/strong>! You can of course also use fresh spinach, but the preparation of the spinach would take longer.<\/li>\n\n\n\n<li>To roast the pine nuts, use a <strong>non-stick<\/strong> pan and leave out the oil. Heating the kernels releases their own fats and makes them nice and buttery.<\/li>\n\n\n\n<li>The spinach stew is a real <strong>summer stew<\/strong>, by the way!
