All you have to do is marinate the chicken pieces, place them on the tray and bake in the oven until crispy.<\/p>\n\n\n\n<p>The <strong>chicken recipe<\/strong> is not only a great <strong>oven dish<\/strong> for everyday use, but also for special occasions or larger groups. You can easily scale it up for several people, add the marinade and flavor a whole chicken. For intense roasted flavors, you can also prepare it on the grill &#8211; I particularly like it grilled over charcoal.<\/p>\n\n\n\n<p>Chicken is a good source of <strong>protein <\/strong>, which your body needs to build muscle and boost your immune system. If you cut away the skin before cooking, it can also contribute to a balanced diet &#8211; or you can use chicken breast directly.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-selecting-the-ingredients-for-aromatic-lemon-chicken\">Selecting the ingredients for aromatic lemon chicken<\/h2>\n\n\n\n<p>Of course, the best ingredients are needed for heavenly good taste. Put everything in a freezer bag or bowl and cover it. The chicken can then marinate well in the refrigerator.<\/p>\n\n\n\n<p>Not a fan of coriander? For some, the green herb tastes like soap &#8211; not for me. I love fresh coriander! But the recipe for lemon chicken can of course be varied and adapted as desired. Here is an example of a lemon marinade with <strong>thyme<\/strong> and <strong>rosemary<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Olive oil<\/li>\n\n\n\n<li>Organic lemons<\/li>\n\n\n\n<li>Garlic<\/li>\n\n\n\n<li>Rosemary<\/li>\n\n\n\n<li>Thyme<\/li>\n\n\n\n<li>Salt and pepper<\/li>\n<\/ul>\n\n\n\n<p>The ingredients are mixed together to create an aromatic marinade that infuses the chicken with <strong>Mediterranean<\/strong> flavors. You can also mix in some <strong>honey<\/strong> &#8211; it caramelizes during roasting and makes the skin crispy.<\/p>\n\n\n\n<p>You can also place whole or halved garlic bulbs on the baking tray, as well as lemon slices or sprigs of fresh herbs such as rosemary, thyme or oregano.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-how-long-should-the-chicken-marinate\">How long should the chicken marinate?<\/h3>\n\n\n\n<p>I actually always recommend <strong>4 hours<\/strong> so that the flavors can infuse well into the meat. <strong>Overnight<\/strong> is best, of course, as this makes it very flavorful. But if you don&#8217;t have that much time, let it steep <strong>for 30-60 minutes<\/strong>. During this time, the chicken also absorbs the marinade, but only superficially and not as intensively.<\/p>\n\n\n\n<p>While roasting, you can brush the chicken with the remaining marinade again and again. Here you can find the <strong>quick guide<\/strong> to preparing them in the oven:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Grate the zest from the lemon and squeeze out the juice. Chop the garlic and coriander.<\/li>\n\n\n\n<li>Mix the oil, garlic and coriander paste, lemon zest and juice, spices, salt and pepper to make a marinade.<\/li>\n\n\n\n<li>Divide the chicken thighs into upper and lower legs and leave to marinade for at least <strong>30 minutes<\/strong> (I recommend approx. <strong>4 hours<\/strong> or <strong>overnight<\/strong>).<\/li>\n\n\n\n<li>Bake the chicken at 200\u00b0C top\/bottom heat for approx. <strong>25 minutes<\/strong> and then roast for <strong>5 minutes<\/strong> using the grill function.<\/li>\n\n\n\n<li>Serve the lemon chicken with Lebanese flatbread and tabouleh or smashed potatoes, for example.<\/li>\n<\/ol>\n\n\n\n<p>This <strong>oven dish<\/strong> is so easy: you can prepare the chicken recipe in <strong>10 minutes<\/strong> and cook it in <strong>30 minutes<\/strong>. And because it&#8217;s sizzling away in the oven, you can do other things at the same time.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-a-real-treat-in-the-oven-baking-time-and-temperature\">A real treat in the oven: baking time and temperature<\/h3>\n\n\n\n<p>The baking time varies depending on whether you opt for a whole chicken or just chicken pieces. I used <strong>chicken legs<\/strong> for our lemon chicken because you can make smaller portions that way.<\/p>\n\n\n\n<p>The chicken pieces need <strong>approx. 30 minutes<\/strong> in a preheated oven at <strong>200 \u00b0C top\/bottom heat<\/strong>.<\/p>\n\n\n\n<p>Would you like to cook sustainably and save some electricity? Then save yourself the preheating and put the tray in the oven immediately after you have started the oven. This only extends the baking time by a few minutes.<\/p>\n\n\n\n<p>If you want to make sure that the meat doesn&#8217;t get too dry, I advise you to use a thermometer. The core temperature of chicken thighs is approx. <strong>80-85 \u00b0C<\/strong>. With <strong>chicken breast<\/strong> it is a few degrees less: <strong>75-80 \u00b0C<\/strong>. When the cooking level is reached, it starts to beep.<\/p>\n\n\n\n<p>But you <strong>don&#8217;t<\/strong> have a thermometer to hand? There is another way to test whether the meat is cooked &#8211; using the<strong>&#8220;juice test<\/strong>&#8220;. To do this, cut a thick area of fat on the thigh: if the juices run clear, the lemon chicken is ready.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tips-and-tricks-for-juicy-meat-and-crispy-skin\">Tips and tricks for juicy meat and crispy skin<\/h2>\n\n\n\n<p>Why does everyone love chicken so much? Clearly because of the spicy, crispy <strong>skin<\/strong>! Ok, the athletes tend to leave it out and treat themselves to <strong>chicken breast<\/strong> &#8211; but they love it too! This is because the protein content of meat is very high and keeps you satiated for a long time. Back to the crispy skin&#8230;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Season the chicken on all sides. Rub it in well to give it flavor.<\/li>\n\n\n\n<li>Brush it with oil or your own stock from time to time.<\/li>\n\n\n\n<li>If the skin is not crispy despite the specified cooking time, turn on the grill function of the oven. But then sit in front of it &#8211; sometimes it heats up so quickly and so hot that the chicken legs burn quickly.<\/li>\n\n\n\n<li>Brush the chicken skin with honey a few minutes before the end of the cooking time. It caramelizes under the heat and the chicken becomes nice and crispy.<\/li>\n\n\n\n<li>For particularly succulent meat, place it in a roasting tin and only remove the lid a few minutes before the end of the cooking time. This allows the skin to roast and crisp up while the meat remains incredibly aromatic.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-side-dishes-with-lemon-chicken\">Side dishes with lemon chicken<\/h2>\n\n\n\n<p>There are so many delicious and great things you can serve with <strong>lemon wedges<\/strong>. First, of course, I recommend the three <strong>classics<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/bistrobadia.de\/en\/lebanese-pita-bread\/\">Lebanese flatbread<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/bistrobadia.de\/en\/tabouleh\/\">Taboul\u00e9<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/bistrobadia.de\/en\/butter-rice-lebanese\/\">Butter rice<\/a><\/li>\n<\/ul>\n\n\n\n<p>However, if you want to save time or you have something to do on the side, then do everything in the oven. Then listen to your body and only eat as much as you really need. Simply put the remaining lemon chicken in a Tupperware container. Packed airtight, it will keep for <strong>2-3 days<\/strong> at approx. <strong>4 \u00b0C<\/strong> in the refrigerator. You can then <strong>wrap<\/strong> the leftovers in a <strong>wrap<\/strong> or mix them into a <strong>salad<\/strong>.<\/p>\n\n\n\n<p>I don&#8217;t even know what you&#8217;re waiting for! Pop the chicken in the oven, because it&#8217;s perfect for any time of year &#8211; in summer it brings fresh flavors to the table and in winter it conjures up some sunshine in the house.
