But not without giving it a Levantine touch with a spicy baba ghanoush cream dressing.<\/p>\n\n\n\n<p>If you search the internet for Smashed Potato Salad or <strong>Crispy Potatoes Salad<\/strong> recipes, you&#8217;ll quickly realize that there isn&#8217;t just <strong>one<\/strong> recipe. For this reason, I gave my version a completely different twist. So it was immediately clear that I wanted to create my own recipe for a Smashed Potatoes Salad. We need a lot of heat for <strong>crispy<\/strong> potatoes and <strong>smoky<\/strong> eggplant. Then it is nice and fresh and crispy and makes a delicious <strong>lunch<\/strong> or <strong>dinner<\/strong>.<\/p>\n\n\n\n<p>So it tastes best fresh. You can also keep it in the fridge for <strong>1-2 days<\/strong>, but then it won&#8217;t crisp up and the smashed potato salad won&#8217;t look particularly appetizing.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-goes-well-with-potato-salad\">What goes well with potato salad?<\/h2>\n\n\n\n<p>Of course, you can also serve the <strong>crispy potato salad<\/strong> with a <strong>BBQ<\/strong>. Then you could roast the eggplant on the <strong>grill<\/strong> in advance.
