&#8211; Lebanese lamb confit"},"content":{"rendered":"\n<p class=\"has-drop-cap\"><strong>Awarma<\/strong> is one of my favorite breakfast recipes.\nPut two or three spoonfuls of the <strong>Lebanese lamb confit<\/strong> in a hot pan, then a few eggs on top and straight onto the plate with flatbread, tomatoes and pickles.\nSuper simple, super tasty.\nAnd of course my mom created her very own recipe.   <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-is-awarma\">What is Awarma?<\/h2>\n\n\n\n<p><strong>Awarma<\/strong> or <strong>qawarma<\/strong> is a Lebanese <strong>lamb confit<\/strong>. <strong>Lamb<\/strong> is cooked slowly in <strong>lamb fat<\/strong> and then preserved.\nThis cooking method not only makes the meat particularly <strong>tender<\/strong> and <strong>aromatic<\/strong>, it also <strong>keeps for a long time<\/strong> if it is stored in a cool, dark place. <\/p>\n\n\n\n<p>The recipe is very old and probably comes from villagers in the mountains, as there were no fridges or even supermarkets back then.\nCooking and preserving was a popular way of preserving food&#8230; and also essential for survival. <\/p>\n\n\n\n<p>It&#8217;s a bit like the German lard that some older people like to spread on their bread &#8230; lots of fat and lots of crunch.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a recipe<\/h2>\n\n\n\n<p>As already mentioned, my mom has created her own <strong>awarma recipe<\/strong>.\nInstead of using pieces of lamb, she simply uses <strong>minced lamb<\/strong>.\nThis becomes particularly crispy when left out and is therefore also an excellent combination with <strong>egg<\/strong>.  <\/p>\n\n\n\n<p>You can also try both variants.\nYou can get the lamb and lamb fat from the butcher.\nYou can also have it minced there or you can make it yourself at home.\nBut don&#8217;t let them sell you mutton, otherwise the taste will be too intense.   <\/p>\n\n\n\n<figure fat<\/li>\n\n\n\n<li>Minced lamb<\/li>\n\n\n\n<li>Salt<\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/2NwVHvQ\" target=\"_blank\" rel=\"noreferrer noopener\">Cinnamon<\/a><\/li>\n<\/ul>\n\n\n\n<p>This recipe uses very few spices.\nHowever, you can also spice it up and add <strong>cumin<\/strong>, <strong>cardamom<\/strong> or a little <strong>baharat<\/strong>, for example. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-the-preparation\">The preparation<\/h2>\n\n\n\n<p>When preparing the awarma, we also tried a version with <strong>minced beef<\/strong> and <strong>beef fat<\/strong>.\nThis is a great alternative if you find lamb too intense. <\/p>\n\n\n\n<p>Good meat guarantees you a tasty end result.\nSo don&#8217;t save money when buying meat, but invest in <strong>quality<\/strong>.\nYou&#8217;ll really enjoy it for a long time.  <\/p>\n\n\n\n<p>Once you have the four ingredients together, you&#8217;re ready to go.\nThe preparation is really simple.   <\/p>\n\n\n\n<p>Here are the <strong>quick instructions<\/strong> for<strong> making<\/strong> <strong>awarma yourself <\/strong>.\nYou can find the exact steps in the recipe card below: <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut the fat into small cubes.<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image size-large\"><a pieces of fat float to the surface, it is ready. <\/li>\n\n\n\n<li>Strain the melted fat through a fine sieve and remove the small pieces.<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image year.<\/li>\n<\/ol>\n\n\n\n<p>Make sure that you don&#8217;t leave the fat out too hot, as there may be meat residue in between that will burn.\nThe fat then takes on the burnt flavors and no longer tastes good. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-and-what-do-you-do-with-it-now\">And what do you do with it now?<\/h2>\n\n\n\n<p>What a question &#8211; eat it, of course!\nYou can spread it on a slice of bread while it&#8217;s still cold.\nOr you can leave it out and add a few <strong>eggs<\/strong> to the pan.\nBut the lamb confit also works well as a topping for <a href=\"https:\/\/bistrobadia.de\/en\/hummus\/\">hummus<\/a> or <a href=\"https:\/\/bistrobadia.de\/en\/batata-harra\/\">batata harra<\/a>.   <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a
