&#8211; Yemeni pan bread"},"content":{"rendered":"\n<p class=\"has-drop-cap\"><strong>Malawach<\/strong> is a particularly <strong>crispy pan bread<\/strong> because it has several layers, similar to puff pastry.\nI really like crispy things, so I couldn&#8217;t resist trying this <strong>recipe<\/strong>.\nIt takes a little time to prepare, but the effort is worth it because you are rewarded with pure indulgence.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-where-does-pan-bread-come-from\">Where does pan bread come from?<\/h2>\n\n\n\n<p>Malawach or <strong>malawah<\/strong> is a multi-layered bread that is prepared with lots of butter or ghee and fried in a pan.\nThis makes it nice and crispy and it can also be eaten on its own. <\/p>\n\n\n\n<p>Yemeni Jews brought the recipe to Israel and established the pan-fried bread there.  <\/p>\n\n\n\n<p>In the Arab world, there are many variations that have similar names and are prepared in a similar way, such as Iraqi <strong>kahi<\/strong> or Moroccan <strong>meloui<\/strong>.<\/p>\n\n\n\n<p>You can now find malawach in the freezer section of every Arab supermarket.\nYou don&#8217;t even need to defrost it, but can put the bread straight into the pan and fry until crispy.\nBut homemade tastes much better, of course.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-just-a-handful-of-ingredients\">Just a handful of ingredients &#8230;  <\/h2>\n\n\n\n<p>And you certainly have them in your store cupboard.\nAfter all, flour, water, butter and salt are all part of a well-organized pantry.\nIf you don&#8217;t have any black cumin seeds, you can leave them out.  <\/p>\n\n\n\n<p>By the way, you can replace the butter with <strong>ghee<\/strong> &#8211; it adds more flavor and is actually used in the traditional recipe.\nI just didn&#8217;t have any on hand. <\/p>\n\n\n\n<p>Would you like to make the dough <strong>vegan<\/strong>?\nThen simply replace the butter or ghee with <strong>margarine<\/strong>.\nThis works just as well.  <\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a ghee)<\/li>\n\n\n\n<li>Black cumin seeds<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-time-makes-good-dough\">Time makes good dough<\/h2>\n\n\n\n<p>The preparation of the breads reminded me of my first <a href=\"https:\/\/bistrobadia.de\/en\/levante-das-kochbuch\/\">cookbook<\/a>, because I made a similar recipe there: <strong>Tahinov Hatz<\/strong>.\nThese are sugared <strong>tahini buns<\/strong> with hazelnuts, which also have several layers of dough and are therefore super crispy like puff pastry.   <\/p>\n\n\n\n<p>For the fine and crispy layers, the dough is <strong>kneaded<\/strong>, <strong>rolled flat<\/strong>, <strong>twisted<\/strong> and <strong>rolled flat<\/strong> again.\nThis is also how malawach is prepared to give the flatbread its crispy texture. <\/p>\n\n\n\n<p>But first, of course, you need to prepare the dough.\nAnd if you have a little more time to prepare the mala wax, give the dough <strong>longer<\/strong> to rest.\nThe resting time allows the dough to relax, it can be rolled out better and the pastry will be nice and fluffy.  <\/p>\n\n\n\n<p><strong>Brief instructions for preparing malawach<\/strong> (you will find the exact instructions below in the recipe card):<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Mix the flour with the salt, add the water and knead the ingredients into a class=\"wp-block-list\">\n<li>Oil your work surface with olive oil or another vegetable oil.\nThis will allow you to stretch the dough particularly thinly and prevent it from sticking. <\/li>\n\n\n\n<li>Pull the dough apart <strong>carefully<\/strong>, otherwise it will become holey.\nAs you can see from the photos, I was too impatient! <\/li>\n\n\n\n<li>If there are too many at once, you can also <strong>freeze<\/strong> a few flat rolled dough pieces.\nThey will keep in the freezer for approx. <strong>6 months <\/strong>if they are packed airtight. <\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-malawach-variations\">Malawach variations<\/h3>\n\n\n\n<p>If you are not yet sure whether you want to eat the pan bread sweet or savory later, use a little <strong>less<\/strong> <strong>salt<\/strong> and leave out the <strong>black cumin seeds<\/strong>.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Instead of black cumin seeds, you can also use <strong>sesame seeds<\/strong> or <strong>pine nuts<\/strong>.<\/li>\n\n\n\n<li>For more spice, you can try some malawach with <a href=\"https:\/\/bistrobadia.de\/en\/dukkah-recipe\/\">dukkah<\/a>, <a href=\"https:\/\/bistrobadia.de\/en\/zaatar-recipe\/\">za&#8217;atar<\/a> or <a href=\"https:\/\/bistrobadia.de\/en\/sumac-spice-of-the-levant\/\">sumac<\/a>.<\/li>\n\n\n\n<li>But any bread is also a delight with <strong>fried spring onions<\/strong> or <strong>caramelized onions<\/strong>.<\/li>\n<\/ul>\n\n\n\n<p>Since you have a few dough pieces, you can simply <strong>try out<\/strong> one or two variations.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-is-malawach-served\">How is malawach served?<\/h2>\n\n\n\n<p>Traditionally, the pan-fried bread is served with boiled eggs, spicy <a href=\"https:\/\/bistrobadia.de\/en\/zhug-chili-koriander-sauce\/\">zhug<\/a> and <a href=\"https:\/\/bistrobadia.de\/en\/matbucha-tomato-salsa\/\">matbucha<\/a> or sliced tomatoes.\nHowever, you can also serve it as a sweet version with <strong>honey<\/strong> and <a href=\"https:\/\/bistrobadia.de\/en\/ghee-selber-machen\/\">ghee<\/a>. <\/p>\n\n\n\n<figure class=\"wp-block-image
