It is best to do this over the sink, otherwise the fish scales will fly all over the place. <\/li>\n\n\n\n<li><strong>Gutting:<\/strong> Cut open the belly with a sharp knife (from anus to gills), remove the innards and rinse thoroughly under cold water.<\/li>\n\n\n\n<li><strong>Remove the gills:<\/strong> Remove with kitchen scissors or a knife. Not essential, but improves the taste.
