The golden grain of Levantine cuisine"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>What is couscous?<\/strong> &#8211; I am often asked this question during my cooking courses when someone is asked to prepare a portion of it. <strong>Couscous<\/strong> refers to both the <strong>dish<\/strong> and the small, grainy <strong>balls<\/strong> of <strong>semolina<\/strong> that form the basis. You can find out all about this versatile grain product here. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-is-couscous-made\">How is couscous made?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Couscous<\/strong> originally comes from North Africa, from the so-called Maghreb countries, and is made from wheat in a similar way to <a href=\"https:\/\/bistrobadia.de\/en\/what-is-bulgur\/\" target=\"_blank\" rel=\"noreferrer noopener\">bulgur<\/a>. More precisely, they are made from <strong>durum wheat semolina<\/strong>, a coarser flour. However, the wheat pellets can also be made from <strong>millet<\/strong> or <strong>barley<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bulgur and couscous are often confused, but the wheat products differ in a few ways. You can find out more about this in the article <strong>Difference between bulgur and couscous<\/strong>. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Traditionally, couscous is made from durum wheat semolina. Mixed by hand and sometimes with a little flour, the <strong>semolina<\/strong> is spread out on a large surface and sprinkled with salt water. This creates small <strong>lumps<\/strong>, which in turn are rubbed between the palms of the hands and turn into small <strong>balls<\/strong>. The semolina balls are then laid out in the sun to <strong>dry<\/strong>. In the final step, the couscous is <strong>sieved<\/strong> and <strong>sorted<\/strong> to remove lumps and ensure a uniform product.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">As couscous is made from wheat, <strong>couscous<\/strong> is <strong>not gluten-free<\/strong>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><a href=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2025\/05\/was-ist-couscous-2.avif\"><img decoding=\"async\" width=\"768\" height=\"1024\" data-src=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2025\/05\/was-ist-couscous-2-768x1024.jpg\" alt=\"Couscous close-up: individual grains can be seen\" class=\"wp-image-50690 lazyload\" data-srcset=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2025\/05\/was-ist-couscous-2-768x1024.jpg 768w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2025\/05\/was-ist-couscous-2-225x300.jpg 225w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2025\/05\/was-ist-couscous-2.avif 1125w\" data-sizes=\"(max-width: 768px) 100vw, 768px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 768px; --smush-placeholder-aspect-ratio: 768\/1024;\" \/><\/a><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparing-couscous-from-simple-to-traditional\">Preparing couscous &#8211; from simple to traditional<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The production process has now been <strong>industrialized<\/strong> and you can buy couscous in the supermarket, which you only need to pour <strong>hot<\/strong> water over and leave to swell.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is classically steamed in a <strong>couscousi\u00e8re<\/strong>. This is a pot with an attachment. Meat, fish or vegetables are cooked in the lower pot, while the <strong>steam<\/strong> rises to the top and cooks the couscous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you would like to find out more about <strong>preparing couscous<\/strong>, read the article <strong>Preparing couscous &#8211; how to make it extra fluffy<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Couscous is used in many different ways in Levantine cuisine, but <strong>pearl couscous<\/strong> in particular is more common there than fine couscous. Here are a few <strong>couscous salad recipes<\/strong> to try out: <a href=\"https:\/\/bistrobadia.de\/en\/couscous-salad-with-halloumi-and-courgette\/\" target=\"_blank\" rel=\"noreferrer noopener\">Couscous salad with halloumi and zucchini<\/a>, <a href=\"https:\/\/bistrobadia.de\/en\/couscous-salad-with-tuna\/\" target=\"_blank\" rel=\"noreferrer noopener\">couscous salad with tuna and tahini dressing<\/a> or <a href=\"https:\/\/bistrobadia.de\/en\/couscous-salad-with-strawberries-and-green-asparagus\/\" target=\"_blank\" rel=\"noreferrer noopener\">couscous salad with strawberries and green asparagus<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is often combined with vegetables, <a href=\"https:\/\/bistrobadia.de\/en\/legumes\/\" target=\"_blank\" rel=\"noreferrer noopener\">pulses<\/a> and spices such as <a href=\"https:\/\/bistrobadia.de\/en\/baharat-spice\/\" target=\"_blank\" rel=\"noreferrer noopener\">baharat<\/a> or <a href=\"https:\/\/bistrobadia.de\/en\/harissa-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">harissa<\/a> and served steamed. It can also be served as a side dish with meat or fish dishes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-couscous-variety-these-different-types-are-available\">Couscous variety &#8211; these different types are available<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">If you&#8217;re asking yourself: what is couscous, then also ask yourself: what varieties are there? With handmade couscous, every grain is unique! Couscous is not only available in one type, but in three different types, from fine to coarse:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li> <strong>Fine couscous: <\/strong>suitable for salads or stuffed vegetables.<\/li>\n\n\n\n<li><strong>Medium-fine couscous (Moyen):<\/strong> available in most stores. This is the easiest to prepare and is nice and fluffy.   <\/li>\n\n\n\n<li><strong>Coarse couscous:<\/strong> is a great side dish and can be enriched with vegetables and aromatic spices.  <\/li>\n\n\n\n<li><strong>Pearl couscous<\/strong>: is the coarsest form of couscous and actually looks a bit like pearls.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">However, the variants from the supermarket all have one thing in common: they are instant products that are already pre-cooked and can be prepared in just a few minutes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-moghrabieh-lebanese-pearl-couscous\">Moghrabieh &#8211; Lebanese pearl couscous<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Pearl couscous <strong>moghrabieh<\/strong> is very widespread and popular in Lebanon. If you take a closer look at moghrabieh, you can already see its relationship to pasta. Moghrabieh also has more in common with Italian pasta than with the fine North African couscous in terms of bite and taste. For example, the Israeli <strong>ptitim<\/strong> or the Greek <strong>kritharaki<\/strong> (also known as orzo or manestra). <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Nutritional values and health benefits<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Now you know what couscous is. But what are the nutritional values of this small grain and how healthy is it? Couscous is not only delicious, but also rich in nutrients: it is an excellent <strong>source of vegetable protein<\/strong> and contains important <strong>B vitamins<\/strong> and minerals such as <strong>potassium<\/strong>, <strong>phosphorus<\/strong> and <strong>manganese<\/strong>.
