Mi madre es la maestra del Moghrabieh (as\u00ed se llama este guiso) y siempre parec\u00eda un poco complicado. Pero no quiero privaros de esta fant\u00e1stica receta, as\u00ed que la he probado. Sinceramente, es tan f\u00e1cil y r\u00e1pido de hacer que despu\u00e9s me di una bofetada por no haber probado nunca el Moghrabieh. Pero ahora, \u00a1\u2026.!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cuscus-perlado-moghrabieh\">Cusc\u00fas perlado = Moghrabieh<\/h3>\n\n\n\n<p>Como ocurre con otros platos \u00e1rabes o levantinos, el plato suele llevar simplemente el nombre del ingrediente principal. <a href=\"https:\/\/bistrobadia.de\/es\/humus\/\" target=\"_blank\" rel=\"noreferrer noopener\">Hummus<\/a>, por ejemplo, significa garbanzo en \u00e1rabe. Y moghrabieh se refiere a este cusc\u00fas grande y esf\u00e9rico. As\u00ed que si pides moghrabieh en el Levante, te dan este delicioso guiso&#8230; O eh&#8230; Bueno, no en todas partes. En otros pa\u00edses de Levante, este cusc\u00fas se llama maftoul, cusc\u00fas israel\u00ed o cusc\u00fas turco.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cuscus-probablemente-la-pasta-mas-pequena-del-mundo\">Cusc\u00fas: probablemente la pasta m\u00e1s peque\u00f1a del mundo<\/h3>\n\n\n\n<p>Cada vez que veo una <a href=\"https:\/\/bistrobadia.de\/es\/taboule\/\" target=\"_blank\" rel=\"noreferrer noopener\">receta de tabul\u00e9<\/a> con cusc\u00fas, se me erizan los pelos de la nuca y tengo que intervenir. \u00ab\u00bfC\u00f3mo? \u00bfPor qu\u00e9? \u00bfNo es lo mismo?\u00bb No, el bulgur y el cusc\u00fas son fundamentalmente diferentes. El bulgur es trigo rallado (a menudo precocido). El cusc\u00fas, sin embargo, se hace con s\u00e9mola y agua en forma de bolitas. Y probablemente conozcas el habitual cusc\u00fas minifino &#8211; s\u00ed, incluso eso se enrolla hasta que todo es finalmente cusc\u00fas. Luego se seca todo. Con la pasta no es muy diferente. (Salvo que aqu\u00ed adquiere dimensiones de forma completamente diferentes) Por eso siempre llamo al cusc\u00fas probablemente la pasta m\u00e1s peque\u00f1a del mundo.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-comida-reconfortante-de-levante\">Comida reconfortante de Levante<\/h3>\n\n\n\n<p>Para m\u00ed, el moghrabieh es una comida t\u00edpica de domingo. Cuando voy de visita, mi madre suele cocinar el caldo de pollo por la ma\u00f1ana o incluso la noche anterior y luego prepara el guiso de cusc\u00fas perlado para el almuerzo. Es el caldo casero lo que siempre me ha echado para atr\u00e1s a la hora de cocinar este cl\u00e1sico. Pero para ser honesto, realmente se hace solo. Y es f\u00e1cil de preparar. Se puede utilizar uno comprado en la tienda, pero entonces no se obtiene el verdadero sabor de Moghrabieh. Las especias principales son la canela y el comino. Pero eso no es todo: tambi\u00e9n se a\u00f1ade cardamomo, semillas de cilantro, comino, nuez moscada, clavo y pimienta de Jamaica.<\/p>\n\n\n\n<p>Y para que quede realmente \u00abperlado\u00bb, a\u00f1ade al cusc\u00fas perlado garbanzos tiernos y cebollas perladas. Si no encuentras cebollas perladas (como yo), tambi\u00e9n puedes utilizar chalotas. Las cebollas y los garbanzos se cocinan directamente con el cusc\u00fas. Las cebollas adquieren un dulzor realmente grande. Por \u00faltimo, a\u00f1ada el pollo del caldo, ya sea en trozos enteros o finamente desmenuzado.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-moghrabieh-tambien-va-de-verduras\">\u00a1Moghrabieh tambi\u00e9n va de verduras!<\/h3>\n\n\n\n<p>El Moghrabieh se cocina cl\u00e1sicamente con pollo, pero, por supuesto, tambi\u00e9n se puede preparar una versi\u00f3n vegetariana o vegana. Simplemente cocine un caldo de verduras con las especias mencionadas a continuaci\u00f3n y sustituya el pollo por m\u00e1s cebollas y garbanzos o utilice un sustituto de la carne de su
