Cuando hago esta mezcla de especias yo misma, suelo quedarme aturdida y so\u00f1ar despierta. El olor y el aroma de las especias que se despliegan me parecen tan buenos &#8211; es como un esp\u00edritu que sale de la l\u00e1mpara para encantarte.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00a1Hacer tu propio dukkah es s\u00faper f\u00e1cil!<\/h3>\n\n\n\n<p>El Dukkah probablemente se origin\u00f3 en Egipto, desde donde se extendi\u00f3 por el Levante. \u00a1La sola idea de combinar especias reci\u00e9n tostadas con frutos secos igualmente tostados me parece s\u00faper buena! Sin embargo, mi primer encuentro con la fant\u00e1stica mezcla de especias fue un poco decepcionante, porque compr\u00e9 un producto ya preparado.<\/p>\n\n\n\n<p>Sinceramente, \u00a1nunca compres dukkah envasado en las tiendas! Est\u00e1 garantizado que te saldr\u00e1 el tiro por la culata, a no ser que tengas un tostadero a la vuelta de la esquina que te haga la mezcla fresca. La diferencia entre el dukkah fresco y el dukkah envasado m\u00e1s largo es enorme.<\/p>\n\n\n\n<p>La raz\u00f3n de esto es, por supuesto, que los sabores tostados realmente fant\u00e1sticos e importantes se vuelven rancios. Y los frutos secos no deben dejarse en reposo durante tanto tiempo, pues de lo contrario su grasa se enrancia. As\u00ed que ser\u00e1 mejor que hagas tu propia dukkah. Es f\u00e1cil, \u00a1lo prometo!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mi propia mezcla<\/h3>\n\n\n\n<p>La Dukkah suele consistir en un pu\u00f1ado de especias y una selecci\u00f3n de frutos secos. Depende de ti cu\u00e1les utilices. Las avellanas o las nueces, por ejemplo, son un cl\u00e1sico. Sin embargo, he desarrollado mi propia mezcla personal. Contiene lo siguiente:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Comino<\/li>\n\n\n\n<li>Cilantro<\/li>\n\n\n\n<li>Hinojo<\/li>\n\n\n\n<li>S\u00e9samo<\/li>\n\n\n\n<li>Alholva<\/li>\n\n\n\n<li>Pistachos<\/li>\n\n\n\n<li>Avellanas<\/li>\n\n\n\n<li>Pi\u00f1ones<\/li>\n\n\n\n<li>Escamas gruesas de sal marina<\/li>\n<\/ul>\n\n\n\n<p>He mantenido la receta o la mezcla muy simple y he decidido no usar n\u00fameros de gramos y en su lugar he optado por las proporciones. Una cucharada es entonces decisiva aqu\u00ed. Se puede escalar f\u00e1cilmente la receta de dukkah a la cantidad deseada.<\/p>\n\n\n\n<p>Al reunir la mezcla de especias, yo tambi\u00e9n prestar\u00eda un poco de atenci\u00f3n a las texturas individuales. Las especias pueden estar finamente molidas &#8211; esto tambi\u00e9n se aplica a una parte del s\u00e9samo tostado. Sin embargo, el resto del s\u00e9samo permanece entero, al igual que con la mezcla de especias <a href=\"https:\/\/bistrobadia.de\/es\/haz-tu-propio-zaatar\/\" target=\"_blank\" rel=\"noreferrer noopener\">za&#8217;atar<\/a>.<\/p>\n\n\n\n<p>Puedes simplemente picar las nueces con un cuchillo hasta que tengan el tama\u00f1o adecuado para ti o molerlas en una batidora. Sin embargo, yo no pondr\u00eda todo junto en la licuadora y har\u00eda una masa uniforme. Los diferentes tama\u00f1os son importantes, aunque la diferencia sea bastante peque\u00f1a. Puede sonar extra\u00f1o, pero marca la diferencia no s\u00f3lo visualmente, sino tambi\u00e9n en la lengua.<\/p>\n\n\n\n<p>En cuanto a la sal, me pareci\u00f3 importante utilizar escamas de sal y no sal fina y refinada. En primer lugar, la sal marina natural sabe mucho mejor y la estructura de los copos de sal le da un ligero crujido que sienta muy bien en la boca.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Almacenar y utilizar Dukkah<\/h3>\n\n\n\n<p>As\u00ed que una vez que hayas tostado y molido las especias y los frutos secos y los hayas mezclado todos, probablemente querr\u00e1s servir un poco en un plato con un poco de aceite de oliva y comerlo con <a href=\"https:\/\/bistrobadia.de\/es\/pan-de-pita-liban\u00e9s\/\" target=\"_blank\" rel=\"noreferrer noopener\">pan de pita<\/a> o baguette.<\/p>\n\n\n\n<p>Puedes simplemente poner el resto en un frasco limpio y cerrarlo lo m\u00e1s herm\u00e9ticamente posible. La mezcla de especias se conservar\u00e1 durante unas semanas, si es que sobrevive tanto tiempo y no se come antes. Hay muchas maneras de utilizar la dukkah.
