Y por calentar, no me refiero s\u00f3lo a la temperatura de la sopa. Me refiero a la dedicaci\u00f3n en la preparaci\u00f3n que se siente con cada cucharada. Pienso en los d\u00edas de lluvia en el sof\u00e1, cuando a mis hermanos y a m\u00ed nos gustaba acurrucarnos bajo las s\u00e1banas y absorber virtualmente el programa de televisi\u00f3n con los ojos cuadrados mientras las copas de los \u00e1rboles se inclinaban de un lado a otro en el exterior. Pienso en los d\u00edas en que yac\u00eda enferma en la cama y era pacientemente atendida, cuchara a cuchara. Tambi\u00e9n pienso en el trabajo que hace un calentador de almas como \u00e9ste; pienso en mi madre separando hasta el m\u00e1s peque\u00f1o trozo de carne de pollo del hueso con la m\u00e1xima precisi\u00f3n y dedicaci\u00f3n y reserv\u00e1ndolo para la sopa: Con calma y respeto por el animal.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La cl\u00e1sica sopa de pollo con garbanzos y probablemente los fideos m\u00e1s peque\u00f1os del mundo<\/h3>\n\n\n\n<p>Hacer tu propia sopa de pollo no es una tarea r\u00e1pida, pero eso no significa que sea dif\u00edcil de preparar. B\u00e1sicamente, es muy sencillo. Hay que poner el pollo en la olla y cubrirlo con abundante agua. Mientras se cuece a fuego lento en la olla y le quitas la espuma de vez en cuando, puedes ocuparte de las especias y de las verduras de la sopa. La mitad de las verduras van directamente a la olla, picadas groseramente, y a\u00f1aden su aroma al caldo junto con el pollo y las especias. La otra mitad es para el refinamiento al final.<\/p>\n\n\n\n<p>Me gusta tostar las especias brevemente para que desarrollen todo su aroma. Luego van a la olla. Puedes poner especias gruesas en un filtro de t\u00e9 y luego atarlo con un poco de hilo de cocina. De este modo, no tendr\u00e1 que buscar las especias en la sopa de pollo y podr\u00e1 eliminarlas directamente con la bolsa. Me gusta utilizar hojas de laurel, cardamomo, clavo, pimienta de Jamaica y canela en rama, como hac\u00eda mi madre.<\/p>\n\n\n\n<p>Despu\u00e9s de que todo haya cocido a fuego lento durante una hora y media, es el momento de sacar el pollo y utilizarlo realmente en su totalidad, excepto los huesos. \u00a1Esto es trabajo! Hay que invertir tiempo y no hay que ser demasiado t\u00edmido para engrasarse las manos. Los trozos m\u00e1s grandes de carne se cortan en trozos del tama\u00f1o de un bocado y se apartan junto a las verduras picadas, los garbanzos y el cusc\u00fas perlado.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Lo casero es simplemente lo mejor<\/h3>\n\n\n\n<p>En el pasado, los trozos especialmente jugosos nunca llegaban a la olla. Nuestra madre siempre nos los daba como muestra durante la preparaci\u00f3n, directamente de su mano a la boca. Para m\u00ed, eso fue siempre un peque\u00f1o fuego de artificio en mi coraz\u00f3n que me dio amor y seguridad. Pero cuando pienso en ello, tambi\u00e9n siento el gran aprecio que sent\u00eda por el animal.<\/p>\n\n\n\n<p>Una vez que todo est\u00e1 preparado y listo, se termina la sopa de pollo: Los trozos de pollo, las verduras cortadas en dados finos y el cusc\u00fas perlado simplemente se a\u00f1aden al caldo de pollo reci\u00e9n hecho y se llevan a ebullici\u00f3n de nuevo hasta que todo est\u00e9 bien caliente y el cusc\u00fas perlado est\u00e9 cocido. Por cierto, no es necesario utilizar todo el caldo para esto. S\u00f3lo tienes que embotellar la cantidad no utilizada y congelarla o guardarla en un tarro de conserva esterilizado, as\u00ed siempre tendr\u00e1s a mano caldo casero para una sopa.<\/p>\n\n\n\n<p>Por cierto, por favor, no se dejen desanimar por el cusc\u00fas de perlas. S\u00e9 que no se puede comprar en todas partes. Como alternativa, puede utilizar fideos de concha u otros fideos peque\u00f1os. Por si no lo sab\u00edas, el cusc\u00fas se hace en realidad como la pasta. Esto se nota especialmente en el cusc\u00fas perlado. Personalmente, me encanta la textura que el perl\u00f3n da a la sopa de pollo. Pero con o sin perlcouscous: una sopa de pollo casera es sencillamente el colof\u00f3n &#8211; \u00a1buen provecho!<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity
