La idea general ya estaba ah\u00ed, pero los detalles m\u00e1s finos s\u00f3lo surgen durante la cocci\u00f3n. Muchas gracias a Patrick, que cocin\u00f3 el plato conmigo y anot\u00f3 diligentemente todos los ingredientes.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cusc\u00fas perlado y jud\u00edas blancas: \u00a1Un gran partido!<\/h3>\n\n\n\n<p>Siempre me parece s\u00faper emocionante cuando convenzo a mis amigos para que prueben el <strong>cusc\u00fas de perlas por<\/strong> primera vez. \u00a1La textura es \u00fanica y siempre genial! La reacci\u00f3n es especialmente divertida cuando les digo que este cusc\u00fas grueso es una especie de pasta. En Italia (Cerde\u00f1a) existe incluso una variante similar llamada pasta <strong>fregola<\/strong>. Peque\u00f1as bolas que no encajan en la red. Personalmente, crec\u00ed con el cusc\u00fas perlado. En el L\u00edbano, esta variante se llama <a href=\"https:\/\/bistrobadia.de\/es\/guiso-de-cusc\u00fas-perlado-liban\u00e9s-moghrabieh\/\" target=\"_blank\" rel=\"noreferrer noopener\">moghrabieh<\/a>, por el cl\u00e1sico guiso con mucha cebolla y pollo.<\/p>\n\n\n\n<p>No encontrar\u00e1s carne en este fant\u00e1stico plato (pero tampoco la echar\u00e1s de menos), porque es completamente vegano. Pero no hay que perderse una buena raci\u00f3n de prote\u00ednas saludables, porque el cusc\u00fas perlado va acompa\u00f1ado de tiernas jud\u00edas blancas, que dan al plato una agradable cremosidad. \u00a1El cusc\u00fas grande y las jud\u00edas blancas van incre\u00edblemente bien juntos!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00a1Setas en lugar de carne!<\/h3>\n\n\n\n<p>Siempre he sido un gran fan de las setas. Especialmente cuando se saltean con cebollas y se sazonan bien, son una gran <a href=\"https:\/\/bistrobadia.de\/es\/hummus-con-champi\u00f1ones-y-cebollas-al-zumaque\/\" target=\"_blank\" rel=\"noreferrer noopener\">cobertura para el humus<\/a>. Por regla general, siempre utilizo champi\u00f1ones para esto. Sin embargo, para el cusc\u00fas perlado en salsa de tomate, decid\u00ed utilizar <strong>setas de ostra<\/strong>. La forma, la consistencia y el tama\u00f1o de las setas de ostra las hacen perfectas para hacer una especie de falso shawarma. Basta con marinarlos con abundantes especias, ajo y aceite de oliva, dejarlos marinar durante poco tiempo y fre\u00edrlos. El resultado es incre\u00edblemente sabroso y a\u00f1ade una nueva capa de <strong>umami<\/strong> al plato.<\/p>\n\n\n\n<p>Cualquiera que haya probado otras recetas m\u00edas sabe que los frutos secos crujientes y las hierbas frescas son imprescindibles al final. No es broma, no s\u00f3lo queda muy bien, sino que realmente redondea el cusc\u00fas perlado en salsa de tomate.
