Hay una gran variedad de rellenos, como <a href=\"https:\/\/bistrobadia.de\/es\/queso-fresco-liban%c3%a9s-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a>, pudding o nueces picadas. El sirope tambi\u00e9n desempe\u00f1a un papel importante, ya que aporta un aroma m\u00e1gico.<\/p>\n\n\n\n<p>En todo el L\u00edbano y el resto de Oriente Pr\u00f3ximo se puede encontrar atayef en todas las panader\u00edas durante el <strong>Ramad\u00e1n<\/strong>. Y en casa, a mi madre le gusta hacerlos para los cumplea\u00f1os&#8230; y cuando yo quiero.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-son-los-atayef\">\u00bfQu\u00e9 son los atayef?<\/h2>\n\n\n\n<p>Los atayef son <strong>tortitas<\/strong> rellenas de una especie de pudin de leche llamado <a href=\"https:\/\/bistrobadia.de\/es\/budin-de-leche-ashta-con-fruta-de-la-pasion\/\" target=\"_blank\" rel=\"noreferrer noopener\">ashta<\/a>. A continuaci\u00f3n, se adornan con <strong>pistachos<\/strong> picados y se roc\u00edan con <strong>sirope de az\u00facar<\/strong>. Mi t\u00edo no solo los roc\u00eda, los ahoga &#8211; pero bueno, es un adicto al az\u00facar.<\/p>\n\n\n\n<p>La masa y el pudin apenas contienen az\u00facar. Por ello, el jarabe de az\u00facar <strong>(attir)<\/strong> desempe\u00f1a un papel decisivo. Esto permite que cada uno determine por s\u00ed mismo el grado de dulzor. El <strong>agua de rosas<\/strong> y <a href=\"https:\/\/bistrobadia.de\/es\/gu%c3%ada-de-agua-de-sangre-naranja\/\" target=\"_blank\" rel=\"noreferrer noopener\">azahar<\/a> confiere al atayef su t\u00edpico sabor oriental, que para m\u00ed pertenece sencillamente al postre perfecto.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-atayef-haz-tus-propias-tortitas-rellenas\">Atayef \u2013 haz tus propias tortitas rellenas<\/h2>\n\n\n\n<p>Puedes dividir la receta de atayef en <strong>cuatro bloques<\/strong>, por as\u00ed decirlo. Hay que preparar la <strong>masa<\/strong>, el <strong>relleno<\/strong>, el <strong>alm\u00edbar<\/strong> y luego <strong>montarlo<\/strong> todo.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Para la masa, se prepara un agua de levadura, que se mezcla con el resto de ingredientes hasta formar una masa lisa y se deja levar durante aprox. 1 hora.<\/li>\n\n\n\n<li>Cocer la masa cucharada a cucharada en una sart\u00e9n antiadherente para hacer peque\u00f1as tortitas.<\/li>\n\n\n\n<li>Para el pudin de ashta, mezclar la leche con la vainilla, el az\u00facar y la harina de ma\u00edz y hervir el l\u00edquido hasta obtener un pudin cremoso.<\/li>\n\n\n\n<li>A continuaci\u00f3n, aromatizar el pudin con agua de rosas y azahar.<\/li>\n\n\n\n<li>Para hacer el alm\u00edbar, hervir el agua con el az\u00facar y aromatizarla con agua de rosas y azahar.<\/li>\n\n\n\n<li>Para finalizar el atayef, se coge una tortita, se unta con el pudin de leche y se dobla en forma de embudo. A continuaci\u00f3n, mojar la parte delantera de la tortita rellena en los pistachos picados. Por \u00faltimo, roc\u00edelo todo con un poco de sirope de az\u00facar.<\/li>\n<\/ol>\n\n\n\n<p><strong>Cuando mi madre hace estas tortitas rellenas, se produce el siguiente espect\u00e1culo:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Hace las tortitas, unta las natillas de una en una, dobla la tortita en forma de embudo y lo moja todo en pistachos picados.<\/li>\n\n\n\n<li>Luego pasa a la siguiente tortita: La recubre, la dobla en forma de embudo, la moja en pistachos picados y quiere ponerla con la otra tortita rellena.<\/li>\n\n\n\n<li>PERO&#8230; \u00a1La primera tortita se ha acabado! Y, curiosamente, tambi\u00e9n falta parte del jarabe de az\u00facar&#8230; As\u00ed pasa al menos con los cuatro primeros Atayef: \u00a1<strong>misterioso<\/strong>!<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-consejos-para-la-preparacion\">Consejos para la preparaci\u00f3n<\/h2>\n\n\n\n<p>Al fre\u00edr atayef hay una particularidad: \u00a1s\u00f3lo se puede fre\u00edr por <strong>un lado<\/strong>!<\/p>\n\n\n\n<p>Mientras la <strong>parte inferior<\/strong> se fr\u00ede ligeramente en la sart\u00e9n, la <strong>superior<\/strong> hace peque\u00f1as burbujas, que luego se convierten en montones de peque\u00f1os cr\u00e1teres. Esto sucede porque la masa es una <strong>masa l\u00edquida de levadura<\/strong>. Es muy importante que s\u00f3lo se fr\u00eda un lado. La parte superior se cocina lentamente y queda ligeramente <strong>pegajosa<\/strong>. Esto significa que las tortitas se pegan entre s\u00ed despu\u00e9s de cubrirlas.<\/p>\n\n\n\n<p>Y para evitar que las peque\u00f1as tortitas se peguen al fondo de la sart\u00e9n, recomiendo utilizar una <strong>sart\u00e9n antiadherente<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-cuanto-tiempo-puede-mantener-atayef\">\u00bfCu\u00e1nto tiempo puede mantener Atayef?<\/h2>\n\n\n\n<p>Es mejor comer las tortitas rellenas inmediatamente despu\u00e9s de haberlas preparado. Tambi\u00e9n se pueden guardar en el frigor\u00edfico durante 1-2 d\u00edas, pero entonces podr\u00edan empaparse.<\/p>\n\n\n\n<p>Si quiere servir atayef como <strong>postre<\/strong>, tambi\u00e9n puede hacer las tortitas <strong>unos d\u00edas<\/strong> antes y guardarlas en la <strong>nevera<\/strong> o <strong>congelarlas<\/strong>. Tambi\u00e9n puede preparar el relleno y el alm\u00edbar el <strong>d\u00eda anterior<\/strong> si despu\u00e9s lo guarda todo en un lugar fresco.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-son-veganas-las-tortitas-rellenas\">\u00bfSon veganas las tortitas rellenas?<\/h2>\n\n\n\n<p>Esta <strong>receta de atayef<\/strong> es una receta libanesa cl\u00e1sica de mi madre y no es vegana ni sin gluten.
