Todo el mundo la conoce y a todo el mundo le encanta. Por supuesto, cada familia tiene su propia receta y a veces hay diferencias significativas de un pa\u00eds a otro. Esta versi\u00f3n se llama <strong>Knefeh Na&#8217;ahme<\/strong> y es la versi\u00f3n <strong>libanesa<\/strong> del popular postre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-es-knefeh\">\u00bfQu\u00e9 es Knefeh?<\/h2>\n\n\n\n<p><strong>Knefeh, Knefe, Knafeh, Kunafa<\/strong> o <strong>K\u00fcnefe<\/strong> es un postre que suele constar de dos capas. La capa superior es una tapa o, mejor dicho, una <strong>corteza<\/strong> crujiente. Debajo est\u00e1 la segunda capa de <strong>queso<\/strong> fundido. Y a veces tambi\u00e9n de una <strong>crema pastelera<\/strong> (<a href=\"https:\/\/bistrobadia.de\/es\/budin-de-leche-ashta-con-fruta-de-la-pasion\/\">ashta<\/a>). Para servir, vierta por encima <strong>jarabe de az\u00facar<\/strong> refinado con azahar y agua de rosas al gusto.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-la-tapa-la-corteza-crujiente\">La tapa \u2013 la corteza crujiente<\/h3>\n\n\n\n<p>En la mayor\u00eda de los casos, la tapa del Knefeh est\u00e1 hecha de <strong>kadaifi<\/strong> (o <em>kataifi<\/em>). Se trata de una masa fin\u00edsima con la que se elabora una pasta superfina. El kadaifi tambi\u00e9n recibe el apodo de \u00ab<strong>cabello de \u00e1ngel<\/strong>\u00bb precisamente por lo finos y delgados que son sus hilos.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-el-queso\">El queso<\/h3>\n\n\n\n<p>El queso utilizado suele desalarse en la medida de lo posible. Por lo tanto, es mejor no utilizar Gouda. Tradicionalmente, se utiliza un queso blanco t\u00edpico del pa\u00eds. Pero no se preocupe, no hace falta subirse a un avi\u00f3n para poder preparar knafeh.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/090878e5-1b8c-4726-b976-91bddb0f7c33.jpeg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-variantes-del-postre\">Variantes del postre<\/h2>\n\n\n\n<p>Por cierto, la tapa var\u00eda seg\u00fan el pa\u00eds y la receta. Puede ser delicada y fina, gruesa o una mezcla de fina y gruesa.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>khishneh o knishna<\/strong>: es la versi\u00f3n gruesa con los hilos como fideos del kadaifi.<\/li>\n\n\n\n<li><strong>na&#8217;ama o na&#8217;ahme<\/strong>: es la versi\u00f3n fina, que se prepara con s\u00e9mola.<\/li>\n\n\n\n<li><strong>mhayara<\/strong>: es una mezcla de las otras dos variantes.<\/li>\n<\/ul>\n\n\n\n<p>En el L\u00edbano, a la gente le gusta usar una tapa hecha de <strong>s\u00e9mola<\/strong>. Como la variante que me gustar\u00eda presentarles aqu\u00ed.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-de-donde-viene-knefeh\">\u00bfDe d\u00f3nde viene Knefeh?<\/h2>\n\n\n\n<p>Se especula mucho sobre el origen del postre. Existen varias historias: se dice que la receta original procede de la ciudad de <em>Nablus<\/em>, en <strong>Palestina<\/strong>. Desde all\u00ed, se dice que el postre se extendi\u00f3 a otros pa\u00edses y se adapt\u00f3 a sus regiones. Por otra parte, hay historias que dicen que el postre tiene sus ra\u00edces en <strong>Egipto<\/strong> o <strong>Siria<\/strong>. As\u00ed que <strong>no<\/strong> puedo responder de d\u00f3nde viene exactamente Knefeh. Lo que puedo decirles es que este postre une a la gente y refuerza el sentimiento de uni\u00f3n y comunidad. Porque rara vez se come solo. Por eso sabe el doble de bien.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-desayuno-dulce\">Desayuno dulce<\/h2>\n\n\n\n<p>Knefeh <em>Na&#8217;ahme<\/em> significa tanto como Knefeh <em>tierno<\/em> o <em>suave<\/em>. El postre recibi\u00f3 este apodo porque la parte superior est\u00e1 hecha de masa de s\u00e9mola. Esta masa de s\u00e9mola se precocina y se vuelve a moler hasta convertirla en polvo despu\u00e9s de la cocci\u00f3n. S\u00f3lo entonces se sigue procesando con mantequilla o ghee para formar la tapa. Bien, como ves, no necesitas necesariamente el ingrediente especial kadaifi. Pero tampoco es necesario dominar el procedimiento de la masa de s\u00e9mola. Gracias a mi hermana, conozco un atajo genial&#8230;<\/p>\n\n\n\n<p>Antes de que te cuente el atajo, tienes que saber que los libaneses est\u00e1n absolutamente locos por el Knefeh para desayunar. Pero no de alguna manera, \u00a1en realidad haces un s\u00e1ndwich con \u00e9l! No se puede conseguir kadaifi en todas partes, y no el queso de todos modos. Pero realmente quiero que todo el mundo pueda hacer Knefeh en casa. As\u00ed que te dar\u00e9 los ingredientes principales que puedes conseguir aqu\u00ed en cualquier supermercado o que incluso podr\u00edas tener en casa.<\/p>\n\n\n\n<p><strong>Ingredientes para mi receta familiar:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Rusk<\/li>\n\n\n\n<li>Mantequilla<\/li>\n\n\n\n<li>Mozzarella<\/li>\n\n\n\n<li>Leche<\/li>\n\n\n\n<li>S\u00e9mola de trigo blando<\/li>\n\n\n\n<li>Az\u00facar<\/li>\n\n\n\n<li>Agua de rosas<\/li>\n\n\n\n<li>Agua de azahar<\/li>\n\n\n\n<li>Zumo de lim\u00f3n<\/li>\n\n\n\n<li>pistachos picados<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-la-preparacion-el-secreto-de-mi-hermana\"><strong>La preparaci\u00f3n &#8211; El secreto de mi hermana<\/strong><\/h3>\n\n\n\n<p>Mi hermana me habl\u00f3 de Knefeh \u00abKisbeh\u00bb. <em>Kisbeh<\/em> significa \u00ab<em>enga\u00f1ado<\/em>\u00bb o \u00abmentira\u00bb. No te preocupes, no quiero que mientas. Se trata de imitar ingredientes y acelerar la preparaci\u00f3n: un atajo.<\/p>\n\n\n\n<p>En lugar de <strong>kadaifi<\/strong> o <strong>masa de s\u00e9mola<\/strong>, ahora usamos <strong>galletas<\/strong> est\u00e1ndar y en lugar de un queso del L\u00edbano usamos <strong>mozzarella<\/strong>. Por cierto, la versi\u00f3n con mozzarella ya es muy popular en Knefeh, ya que el queso tambi\u00e9n es suave, se funde muy bien y tira bien.<\/p>\n\n\n\n<p>Y para que la capa de queso sea realmente s\u00faper cremosa y cursi, a\u00f1adimos una capa de delicioso <strong>pudin de s\u00e9mola<\/strong>. Esto hace que el Knefeh sea a\u00fan m\u00e1s sabroso, esponjoso y cremoso.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/801ede62.rocketcdn.me\/wp-content\/uploads\/2020\/08\/Knefeh-servieren-1024x683.jpg\" alt=\"Servir Knefeh knafeh\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/683;\" \/><\/figure>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Para el jarabe de az\u00facar, hervir el az\u00facar y el agua hasta obtener un jarabe y refinar con agua de azahar y zumo de lim\u00f3n.<\/li>\n\n\n\n<li>Para la tapa, triturar los bizcochos en una batidora y mezclar con la mantequilla y el agua de rosas y azahar.<\/li>\n\n\n\n<li>Extender la mezcla de bizcocho en un molde desmontable y presionar ligeramente.<\/li>\n\n\n\n<li>Cortar la mozzarella en rodajas y colocar sobre la tapa.<\/li>\n\n\n\n<li>Mezclar todos los ingredientes del pudin, llevar a ebullici\u00f3n y dejar que espese hasta obtener un pudin cremoso.<\/li>\n\n\n\n<li>Verter el pudin sobre la capa de queso y hornear el Knefeh hasta que est\u00e9 crujiente.<\/li>\n\n\n\n<li>Verter el jarabe de az\u00facar sobre el postre a\u00fan caliente antes de servir y decorar con pistachos.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-cuanto-tiempo-se-conserva-el-postre-de-queso\">\u00bfCu\u00e1nto tiempo se conserva el postre de queso?<\/h2>\n\n\n\n<p>Puede preparar el kunafa <strong>1-2 d\u00edas<\/strong> antes de servirlo y guardarlo tapado en el frigor\u00edfico. Luego s\u00f3lo hay que meterlo en el horno y servirlo caliente para que el queso tire bien y la corteza quede crujiente.<\/p>\n\n\n\n<p>Otro m\u00e9todo de preparaci\u00f3n es la congelaci\u00f3n. Simplemente prepare el Knefeh siguiendo la receta y luego puede congelarlo hasta <strong>6 meses<\/strong>.<\/p>\n\n\n\n<p>Espero que disfrutes preparando la receta y, por supuesto, buen
