Sin la salsa de s\u00e9samo, el hummus ser\u00eda simplemente una papilla de garbanzos con ajo y lim\u00f3n. La cremosidad del tahini es lo que hace que las salsas y cremas populares de Levante sean lo que son: \u00a1Verdaderas delicias!<\/p>\n\n\n\n<p>Sol\u00eda comprar tahini a granel en el supermercado oriental. Ya sabes c\u00f3mo es: el tahini que compras suele ser un poco m\u00e1s viejo y ha recorrido un largo camino. As\u00ed que tarda mucho en llegar a la estanter\u00eda de la tienda. Tambi\u00e9n se queda en la tienda durante un tiempo. Esto hace que el aceite de s\u00e9samo se separe de la espuma de s\u00e9samo. El resultado es un bonito doblete, pero hay que mezclarlo bien antes de poder utilizarlo como ingrediente. La calidad tambi\u00e9n suele ser variable. A veces se obtiene un tahini realmente bueno y otras, por desgracia, demasiado amargo.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-100-sesamo\">100% s\u00e9samo<\/h5>\n\n\n\n<p>Mientras tanto, prefiero comprar muchas semillas de s\u00e9samo sin c\u00e1scara y hacer mi propia tahina. Porque todo lo que necesitas son semillas de s\u00e9samo. \u00a1Es todo lo que necesitas!<\/p>\n\n\n\n<p>Por supuesto, tambi\u00e9n necesitas una batidora que tenga un poco de potencia y que no tenga un colapso circulatorio a los 5 minutos y abandone el fantasma por jadear. Mis dudas se reduc\u00edan con cada segundo que las peque\u00f1as semillas de s\u00e9samo giraban en la batidora. Al principio parec\u00eda que no pasaba nada y que s\u00f3lo giraban en c\u00edrculos como un tiovivo, pero al cabo de unos minutos ocurri\u00f3 algo.<\/p>\n\n\n\n<p>En primer lugar, la consistencia se volvi\u00f3 escamosa y se pod\u00eda ver directamente c\u00f3mo los granos se convert\u00edan en harina gruesa. Unos momentos despu\u00e9s, la batidora ya pod\u00eda contener m\u00e1s semillas de s\u00e9samo. Entonces todo pas\u00f3 muy r\u00e1pido. Las semillas, que antes estaban solas, se convirtieron en una masa, luego en una bola, despu\u00e9s se volvieron cremosas y, en alg\u00fan momento, realmente l\u00edquidas. \u00a1Encantador! Cuando acerqu\u00e9 la mano a la batidora, not\u00e9 que la masa del interior estaba muy caliente. Eso se debi\u00f3 a la fricci\u00f3n. Y precisamente por eso el aceite sali\u00f3 de las semillas de s\u00e9samo hasta que todo se mezcl\u00f3 en una papilla. El resultado: \u00a1el mejor tahini!<\/p>\n\n\n\n<p>Despu\u00e9s de licuar, pongo el tahini en un frasco esterilizado y siempre tengo un poco para las siguientes porciones de hummus. Y cuando se vac\u00eda, la batidora se tiene que poner a trabajar de nuevo \ud83d\ude09 .<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-antes-de-la-mezcla-viene-el-asado\">Antes de la mezcla viene el asado<\/h5>\n\n\n\n<p>La belleza del tahini casero es que resulta como uno quiere. Antes de introducir las semillas de s\u00e9samo en la batidora, se tuestan suavemente en una sart\u00e9n. Es importante seguir con ello y no dejar de mover y remover las semillas de s\u00e9samo para que no se quemen. Me encanta cuando el maravilloso olor a s\u00e9samo tostado se extiende por la cocina. Usted mismo puede determinar el grado de tueste y, por tanto, la intensidad del sabor de su tahini. Tuesto las semillas de s\u00e9samo durante un m\u00e1ximo de 10 minutos a fuego medio. Las semillas de s\u00e9samo se mantienen m\u00e1s bien ligeras, pero reciben el calor suficiente para intensificar su sabor.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-el-primer-mutabbal-con-su-propio-tahini\">El primer mutabbal con su propio tahini<\/h5>\n\n\n\n<p>Hay muchas leyendas sobre el mutabbal. Algunos dicen que el mutabbal es una crema hecha con berenjena y tahini. Eso es correcto. Otros dicen que el mutabbal es una crema hecha con garbanzos y tahini. Eso tambi\u00e9n es correcto. Ser\u00e9 breve. El mutabbal es una forma de hacer una crema. Una crema hecha con ajo, lim\u00f3n y mucho tahini. Mi primer mutabbal con tahini casero fue el hummus. Date un capricho con las semillas de s\u00e9samo org\u00e1nicas peladas. Determine la intensidad del sabor tostando usted mismo el s\u00e9samo.
