{"id":21667,"date":"2023-06-29T09:48:00","date_gmt":"2023-06-29T07:48:00","guid":{"rendered":"https:\/\/bistrobadia.de\/kibbeh-kroketten\/"},"modified":"2024-01-18T10:56:35","modified_gmt":"2024-01-18T09:56:35","slug":"croquetas-de-kibbeh","status":"publish","type":"post","link":"https:\/\/bistrobadia.de\/es\/croquetas-de-kibbeh\/","title":{"rendered":"Croquetas de kibbeh: \u00a1un cl\u00e1sico de Levante!"},"content":{"rendered":"\n<p class=\"has-drop-cap\">No creo que haya un manjar que sea m\u00e1s sin\u00f3nimo de la cocina levantina que <strong>el kibbeh<\/strong>, junto con <a href=\"https:\/\/bistrobadia.de\/es\/humus\/\" target=\"_blank\" rel=\"noreferrer noopener\">el hummus<\/a>, el <a href=\"https:\/\/bistrobadia.de\/es\/falafel-haz-tu-propio\/\" target=\"_blank\" rel=\"noreferrer noopener\">falafel<\/a> y el <a href=\"https:\/\/bistrobadia.de\/es\/queso-fresco-liban\u00e9s-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a>. No s\u00e9 cu\u00e1ntas veces he comido este plato en diferentes variantes. <strong>Las croquetas<\/strong> de kibbeh o kibbeh maklieh son parte indispensable de las <a href=\"https:\/\/bistrobadia.de\/es\/categor\u00eda\/mezze-rezepte\/\" target=\"_blank\" rel=\"noreferrer noopener\">mesas de mezze<\/a> profusamente repletas &#8211; y desde que era ni\u00f1a, siempre he robado la primera croqueta preparada de la cocina de mi madre. Y as\u00ed sigue siendo hoy.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kibbeh: \u00bfQu\u00e9 es eso en realidad?<\/h3>\n\n\n\n<p>El kibbeh es una especialidad incre\u00edblemente deliciosa de la cocina oriental, sobre todo en Levante. B\u00e1sicamente, el kibbeh consiste en una masa hecha con carne molida muy fina y bulgur fino, adem\u00e1s de algunas especias. La masa del kibbeh sirve de envoltorio para un relleno de carne picada frita bien condimentada y pi\u00f1ones. A partir de ah\u00ed se pueden preparar variaciones muy diferentes.<\/p>\n\n\n\n<p>Una de las variantes m\u00e1s famosas del kibbeh es la croqueta kibbeh, con una forma realmente peculiar. Es <strong>ovalada<\/strong> y tiene <strong>las esquinas<\/strong> ligeramente puntiagudas. La primera vez que las hice yo mismo, fue un poco dif\u00edcil. Pero con un poco de pr\u00e1ctica, pronto dej\u00f3 de ser un problema.<\/p>\n\n\n\n<p>Adem\u00e1s de las croquetas de kibbeh, este manjar tambi\u00e9n est\u00e1 disponible como una especie de pastel (puede encontrar la receta en mi libro de cocina), en el que la masa sirve de base y cubierta y el relleno picado est\u00e1 en el centro. Esta versi\u00f3n se hornea, a diferencia de las croquetas fritas.<\/p>\n\n\n\n<p>Las croquetas de kibbeh saben mejor cuando est\u00e1n reci\u00e9n hechas. Est\u00e1n muy crujientes por fuera y deliciosamente jugosas por dentro. Sin embargo, hay que dejar que se enfr\u00eden un poco, de lo contrario podr\u00eda quemarse con el relleno caliente. Estas croquetas tambi\u00e9n se llaman <strong>Kibbeh Maklieh<\/strong>.<\/p>\n\n\n\n<p>En ocasiones especiales, las peque\u00f1as croquetas suelen formar parte de un suntuoso mezze relleno.<\/p>\n\n\n\n\n\n<h3 class=\"wp-block-heading\">Lo especial de nuestra receta familiar<\/h3>\n\n\n\n<p>Cuando le ped\u00ed a mi madre la receta del kibbeh, le sal\u00eda a borbotones y yo apenas pod\u00eda seguirla. Anot\u00e9 los siguientes ingredientes para el kibbeh:<\/p>\n\n\n\n<p><strong>Para la masa del kibbeh:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Carne de vacuno (magra)<\/li>\n\n\n\n<li>bulgur fino<\/li>\n\n\n\n<li>Comino<\/li>\n\n\n\n<li>Canela<\/li>\n\n\n\n<li>Pimienta de Jamaica<\/li>\n\n\n\n<li>Nuez moscada<\/li>\n\n\n\n<li>albahaca fresca<\/li>\n<\/ul>\n\n\n\n<p>Despu\u00e9s de haber anotado apresuradamente al menos los ingredientes aproximados de la masa, mi madre me dijo que <strong>la albahaca<\/strong> es su ingrediente secreto personal y que le da a su versi\u00f3n del kibbeh un aroma estupendo y fresco. Puedo confirmarlo.<\/p>\n\n\n\n<p><strong>Para el relleno del kibbeh necesitar\u00e1<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Carne picada<\/li>\n\n\n\n<li>Cebolla<\/li>\n\n\n\n<li>Aceite de oliva<\/li>\n\n\n\n<li>Pi\u00f1ones (a veces tambi\u00e9n utiliza nueces)<\/li>\n\n\n\n<li>Canela<\/li>\n\n\n\n<li>Sal, pimienta<\/li>\n<\/ul>\n\n\n\n<p>Luego me puse manos a la obra y prepar\u00e9 las croquetas de Kibbeh. Me result\u00f3 muy emocionante y conseguir la forma adecuada fue un poco complicado al principio, pero despu\u00e9s de una o dos croquetas funcion\u00f3&#8230; \u00a1y estaban incre\u00edblemente sabrosas!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Hacer la masa y el relleno del kibbe<\/h3>\n\n\n\n<p><strong>Preparar el relleno<\/strong><\/p>\n\n\n\n<p>Ya conoc\u00eda este tipo de relleno de la receta de sambousek, las alb\u00f3ndigas rellenas y fritas. As\u00ed que fue muy r\u00e1pido de hacer. Simplemente picaba cebollas y las fre\u00eda con la carne picada y los pi\u00f1ones en una sart\u00e9n hasta que se desmenuzaban y se sazonaban con sal, pimienta y canela. Es realmente r\u00e1pido y f\u00e1cil.<\/p>\n\n\n\n<p><strong>Preparar la masa del kibbeh<\/strong><\/p>\n\n\n\n<p>La masa del kibbeh tambi\u00e9n era bastante f\u00e1cil de hacer. Hay que triturar la carne muy fina hasta obtener una especie de farsa. Para ello, simplemente puse la carne en una batidora y la tritur\u00e9 una vez muy fina. Una vez que la carne estaba lo suficientemente fina, a\u00f1ad\u00ed la albahaca y volv\u00ed a triturar todo hasta obtener una masa homog\u00e9nea.<\/p>\n\n\n\n<p>El bulgur fino es muy importante para la masa del kibbeh. Si no encuentra bulgur fino en el supermercado, pida <strong>s\u00e9mola de trigo<\/strong>, que es como tambi\u00e9n se llama este tipo de bulgur. Y si a\u00fan as\u00ed no lo encuentras, puedes moler t\u00fa mismo el bulgur m\u00e1s grueso en una batidora. Despu\u00e9s, basta con cubrir el bulgur fino con un poco de agua y dejar que se hinche brevemente.<\/p>\n\n\n\n<p>A continuaci\u00f3n, puede amasar a mano la mezcla de carne fina con la albahaca, las especias y el bulgur hinchado.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Forma de croquetas de kibbeh<\/h3>\n\n\n\n<p>Ahora es el momento de dar forma a las croquetas. Para dar forma a las croquetas, ya debes haber preparado la masa kibbeh y el relleno. Aseg\u00farate de tener preparado un cuenco con agua fresca y fr\u00eda. Necesitar\u00e1s el agua para mojarte las manos y dar forma a las croquetas.<\/p>\n\n\n\n<p>A continuaci\u00f3n, coge un poco de la masa y presi\u00f3nala sobre la mano humedecida para formar un c\u00edrculo bastante fino. Pon un poco del relleno en el centro y cierra el c\u00edrculo para formar una bola.<\/p>\n\n\n\n<p>Ahora es el momento de cerrar bien la bola y dar forma concisa al kibbeh. Yo siempre humedezco una mano y acaricio las costuras con los dedos para sellarlas bien. El agua hace que la masa exterior sea m\u00e1s flexible y f\u00e1cil de trabajar.<\/p>\n\n\n\n<p>Una vez cerradas las costuras, me encargo de darle forma. Para ello, cojo la bola de kibbeh rellena y presiono un poco una mitad de la bola para hacer una especie de abolladura. Luego le doy forma de punta y hago lo mismo con el otro lado. La primera croqueta de kibbeh est\u00e1 lista. Ahora las dem\u00e1s. No te preocupes, con el tiempo se hace cada vez m\u00e1s r\u00e1pido.<\/p>\n\n\n\n<p>Si no te apetece darle esta forma, puedes hacer una especie de croqueta redonda o alb\u00f3ndiga rellena.<\/p>\n\n\n\n<p>A continuaci\u00f3n, se fr\u00eden las croquetas en aceite caliente durante unos minutos hasta que est\u00e9n doradas.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e1s variaciones del Kibbeh<\/h3>\n\n\n\n<p>El kibbeh es realmente muy vers\u00e1til y no se limita s\u00f3lo a esta forma tan famosa. B\u00e1sicamente, puedes darle la forma que quieras.<\/p>\n\n\n\n<p>Tambi\u00e9n puede utilizar las croquetas de kibbeh de muchas maneras. Hay kibbeh en salsa de yogur o kibbeh en salsa de tomate con verduras. Tambi\u00e9n hay kibbeh crudo, que se sirve como una especie de tartar (sin relleno) en un plato con aceite de oliva.<\/p>\n\n\n\n<p>Y por \u00faltimo, pero no por ello menos importante, hay <strong>kibbeh<\/strong> <strong>vegetarianos<\/strong> y <strong>veganos<\/strong>. Ya he comido kibbeh de <a href=\"https:\/\/bistrobadia.de\/es\/kibbeh-de-patata\/\" target=\"_blank\" rel=\"noreferrer noopener\">patata<\/a>, calabaza y lentejas, y puedo decir que todos ellos son incre\u00edblemente deliciosos. Con el tiempo, sin duda habr\u00e1 recetas para otras variedades de kibbeh.
