Cuando se pone un poco m\u00e1s oscuro, me gusta servir el guiso con las vainas verdes. Para m\u00ed, es un plato realmente reconfortante. Mucha gente siempre pregunta: \u00ab\u00bfQu\u00e9 es la okra?\u00bb. &#8211; Pues que lo prueben. La receta es muy sencilla. Le ense\u00f1ar\u00e9 a preparar el guiso liban\u00e9s de okra llamado <strong>Bamya<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-es-la-okra\">\u00bfQu\u00e9 es la okra?<\/h2>\n\n\n\n<p>Apuesto a que la <strong>okra<\/strong> pronto ser\u00e1 muy popular tambi\u00e9n en este pa\u00eds. Las vainas de la planta malva <strong>okra<\/strong> apenas tienen grasa, pero s\u00ed una elevada proporci\u00f3n de fibra diet\u00e9tica, muy saludable y buena para la digesti\u00f3n. Las vainas vegetales tienen un sabor entre suave y muy ligeramente \u00e1cido y una consistencia y textura entre tierna y ligeramente le\u00f1osa, dependiendo de su tama\u00f1o. Creo que se puede comparar su sabor con el de las jud\u00edas verdes. Puede utilizar la vaina poligonal para ensaladas, <a href=\"https:\/\/bistrobadia.de\/es\/humus-con-okra\/\" target=\"_blank\" rel=\"noreferrer noopener\">cremas<\/a>, <a href=\"https:\/\/bistrobadia.de\/es\/okra-en-salsa-de-tomate\/\" target=\"_blank\" rel=\"noreferrer noopener\">guisos<\/a> y mucho m\u00e1s.<\/p>\n\n\n\n<p>En el L\u00edbano, la okra se llama bamya o bamyeh. Y este guiso debe su nombre simplemente a esta fant\u00e1stica vaina. En L\u00edbano, es un cl\u00e1sico absoluto y realmente sencillo de preparar. Se rehoga todo brevemente, se tapa y se deja cocer a fuego lento.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparar-la-okra\">Preparar la okra<\/h2>\n\n\n\n<p>Hay que tener en cuenta una o dos cosas a la hora de preparar las vainas. Al <strong>cocer<\/strong> el quimbomb\u00f3, segrega una especie de <strong>baba<\/strong>, \u00a1no hay que asustarse! Esto suena m\u00e1s poco apetecible de lo que realmente es. Esta propiedad permite <strong>espesar<\/strong> el guiso sin a\u00f1adir almid\u00f3n. Si no quieres que se espese, hay un remedio.<\/p>\n\n\n\n<p>Antes de cocer las vainas, puedes escaldarlas en <strong>agua<\/strong> con <strong>vinagre<\/strong> o <strong>zumo de<\/strong> lim\u00f3n, y te librar\u00e1s de la baba. Mi madre ten\u00eda otro truco para m\u00ed. \u00abFr\u00edelas primero, as\u00ed ya no tendr\u00e1n baba &#8211; como los caracoles\u00bb. &#8211; \u00abVale, entonces fr\u00edo las vainas en caliente\u00bb.<\/p>\n\n\n\n<p>Adem\u00e1s de la okra, necesitar\u00e1 los siguientes ingredientes para el guiso:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>carne de vacuno magra<\/li>\n\n\n\n<li>Cebolla<\/li>\n\n\n\n<li>Ajo<\/li>\n\n\n\n<li>Caldo de verduras<\/li>\n\n\n\n<li>Tomates colados<\/li>\n\n\n\n<li>buen aceite de oliva<\/li>\n\n\n\n<li>Especias<\/li>\n\n\n\n<li>Jarabe de granada<\/li>\n\n\n\n<li>y con mucho gusto tambi\u00e9n un poco de chile<\/li>\n<\/ul>\n\n\n\n<p>Por cierto, para este guiso utilizo la variedad <strong>peque\u00f1a<\/strong> de okra, ya que es <strong>m\u00e1s tierna<\/strong> que las vainas m\u00e1s grandes y largas. A continuaci\u00f3n encontrar\u00e1 los ingredientes exactos y la preparaci\u00f3n del plato.<\/p>\n\n\n\n<p>Tradicionalmente, el bamya -como casi todos los guisos- se sirve con <a href=\"https:\/\/bistrobadia.de\/es\/arroz-con-mantequilla\/\" target=\"_blank\" rel=\"noreferrer noopener\">arroz<\/a> o <a href=\"https:\/\/bistrobadia.de\/es\/bulgur-de-mantequilla\/\" target=\"_blank\" rel=\"noreferrer noopener\">bulgur<\/a> como guarnici\u00f3n.
