El cigk\u00f6fte est\u00e1 profundamente arraigado en la cultura turca, especialmente en <em>\u015eanl\u0131urfa<\/em>.<\/p>\n\n<p>Hoy en d\u00eda, se pueden encontrar cigk\u00f6fte en muchos pa\u00edses. Debido a las normas de higiene, la preparaci\u00f3n de carne cruda ya no est\u00e1 permitida en muchas otras regiones. Por ello, se ha desarrollado y ganado popularidad una versi\u00f3n <strong>vegetariana<\/strong> y <strong>vegana<\/strong> de este manjar turco. Pero no cualquier bulgur. Para preparar el cigk\u00f6fte vegano se utiliza un tipo especial de bulgur: <strong>K\u00f6ftelik bulgur<\/strong>. Antes de seguir proces\u00e1ndolo, este <strong>bulgur fino<\/strong> se remoja primero en agua caliente para prepararlo.  <\/p>\n\n<p>Tambi\u00e9n puede encontrar este bulgur con el nombre de<strong>\u00abs\u00e9mola de trigo<\/strong>\u00ab. No suena tan sabroso, pero lo es. Esta especia es conocida por su sabor \u00e1cido y agrio y confiere al cigk\u00f6fte un gusto especial. Pero las especias no lo son todo. Tiene un color muy oscuro (parecido al del zumaque) y un sabor acre y ligeramente <strong>ahumado<\/strong>.
