Para m\u00ed, el asador es tambi\u00e9n un recuerdo familiar, un recuerdo de d\u00edas soleados al aire libre.<\/p>\n\n<p>Cada familia tiene su propia receta, pero lo b\u00e1sico es lo mismo. Los tipos de carne y verduras pueden variar, pero todas las regiones coinciden en la preparaci\u00f3n: la carne debe asarse al fuego o a la parrilla. Y para que puedas preparar tu <strong>brocheta<\/strong> tierna y jugosa, en esta <strong>receta<\/strong> de brocheta encontrar\u00e1s los consejos adecuados.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-shish-kebab-ein-kulinarisches-erlebnis-aus-der-levante\">Shish kebab: una experiencia culinaria de Levante<\/h2>\n\n<p>El nombre <em>shish kebab<\/em> procede del turco \u015ei\u015f <strong>kebab<\/strong>, que significa <em>\u00abbrocheta\u00bb<\/em> y <em>\u00abcarne asada o a la parrilla\u00bb<\/em>. Este nombre lo dice todo. Es una brocheta de barbacoa con carne, y va en mi barbacoa durante la temporada de barbacoas.<\/p>\n\n<p>Por supuesto, el arte de ensartar y asar peque\u00f1os trozos de carne se practica en todo el mundo. Pero cada regi\u00f3n tiene sus peculiaridades. Con el tiempo, el kebab de cordero ha evolucionado en Levante y ha adoptado distintas formas regionales, como el <strong>kebab Adana<\/strong> de Turqu\u00eda, que utiliza una mezcla de cordero y ternera. Ser\u00eda una brocheta con carne picada. Un aut\u00e9ntico shish kebab se hace tradicionalmente con <strong>cordero<\/strong>. El cordero es conocido por su intenso sabor. Pero tambi\u00e9n se pueden ensartar otros tipos de carne o alternativas a la carne.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-lammfleisch-der-klassiker\">Cordero &#8211; el cl\u00e1sico<\/h3>\n\n<p>Cuando se menciona el shish kebab, mucha gente piensa inmediatamente en el cordero, y con raz\u00f3n. El cordero es la carne <strong>cl\u00e1sica<\/strong> para este pincho de barbacoa e impresiona por su sabor inconfundible. Sin embargo, para aprovechar todo el potencial del cordero, necesitas el adobo adecuado, que te contar\u00e9 m\u00e1s adelante.<\/p>\n\n<p>La calidad del cordero desempe\u00f1a un papel decisivo en el resultado final. Merece la pena prestar atenci\u00f3n a la frescura y el origen y comprar la carne directamente al carnicero.  <\/p>\n\n<p>Para resaltar todos los sabores al asarlo, debes utilizar cordero con <strong>grasa<\/strong>. Esto se debe a que la grasa es un portador de sabor y tambi\u00e9n mantiene la carne a la parrilla agradable y jugosa. As\u00ed que es mejor pedir una <strong>pierna de cord<\/strong> ero o una <strong>paletilla de cordero<\/strong>.<\/p>\n\n<p>Mis padres sol\u00edan coger trocitos de pura grasa de cordero y ponerla entre los trozos de carne y las verduras. Esto hizo que la brocheta quedara a\u00fan m\u00e1s jugosa.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-welche-fleischsorten-kann-ich-fur-shish-kebab-verwenden-wenn-ich-kein-lammfleisch-mag\">\u00bfQu\u00e9 tipos de carne puedo utilizar para el shish kebab si no me gusta el cordero?<\/h3>\n\n<p>Si no te gusta el cordero, por supuesto tambi\u00e9n puedes utilizar otras carnes. El Shish Kebab es vers\u00e1til y tambi\u00e9n te ofrece espacio para tus preferencias personales y experimentos creativos. Adem\u00e1s de cordero, tambi\u00e9n se puede utilizar <strong>ternera<\/strong> o <strong>pollo<\/strong>, cada uno de los cuales aporta su propio car\u00e1cter al plato. Para las <strong>brochetas de pollo<\/strong>, puedes probar mi receta de <a href=\"https:\/\/bistrobadia.de\/es\/brochetas-de-pollo-shish-taouk\/\">shish taouk<\/a>.<\/p>\n\n<p>Puedes utilizar <strong>cuadril<\/strong> o <strong>entrecot de<\/strong> ternera. Estos cortes tienen un buen contenido en grasa, para que tu brocheta quede bien jugosa.  <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-veganer-kebab-eine-pflanzliche-alternative\">Kebab vegano: una alternativa vegetal<\/h3>\n\n<p>Para quienes prefieran una dieta <strong>vegetariana<\/strong> o <strong>vegana<\/strong>, hay <strong>alternativas<\/strong> igualmente deliciosas. El tofu, el seit\u00e1n o incluso el jackfruit, que ofrecen una textura similar a la carne, pueden utilizarse para hacer una brocheta de barbacoa. Puedes utilizar simplemente la marinada y dejar marinar el <strong>tofu<\/strong> o el jackfruit durante toda la noche, por ejemplo, o si haces tu propio <strong>seit\u00e1n<\/strong>, puedes mezclar las especias directamente.<\/p>\n\n<p>Aunque estas alternativas vegetales son una <strong>experiencia de barbacoa<\/strong> completamente diferente, demuestran que la preparaci\u00f3n de brochetas puede ser vers\u00e1til. As\u00ed todo el mundo puede disfrutar de un jugoso shish kebab, independientemente de sus h\u00e1bitos diet\u00e9ticos personales, aunque en realidad yo llamar\u00eda al pincho otra cosa.  <\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-gewurze-und-marinaden-das-aroma-entscheidet\">Especias y adobos: el sabor es lo que cuenta<\/h2>\n\n<p>En cuanto se colocan las primeras brochetas en la parrilla, comienza el espect\u00e1culo de sabores. El aroma que se desarrolla entonces me hace la boca agua. Y esto no se debe s\u00f3lo a la carne, sino tambi\u00e9n a las especias.<\/p>\n\n<p>El <strong>secreto<\/strong> de todo shish kebab reside en el adobo. No s\u00f3lo aporta flexibilidad a la carne, sino que tambi\u00e9n garantiza que las especias se distribuyan uniformemente.<\/p>\n\n<p>Luego a\u00f1ade ajo, lim\u00f3n, especias y hierbas para hacer el adobo perfecto. Si quieres algo realmente b\u00e1sico, en realidad basta con los siguientes ingredientes. Mi receta personal sigue a continuaci\u00f3n. Aqu\u00ed tienes lo b\u00e1sico:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Aceite de oliva<\/li>\n\n\n\n<li>Dientes de ajo<\/li>\n\n\n\n<li>Zumo de lim\u00f3n (tambi\u00e9n puedes utilizar la ralladura de lim\u00f3n)<\/li>\n\n\n\n<li>Sal y pimienta<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-gewurze-und-aromatische-krauter\">Especias y hierbas arom\u00e1ticas<\/h3>\n\n<p>La cocina levantina se caracteriza por el uso intenso pero sutil de las especias. Hay que resaltar el sabor natural de los alimentos y no enmascararlo. As\u00ed que presta siempre atenci\u00f3n a esto cuando sazones y marines.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-das-essentielle-die-zutaten-fur-shish-kebab\">Lo esencial: los ingredientes del shish kebab<\/h2>\n\n<p><strong>Necesitar\u00e1s los siguientes ingredientes para las brochetas:<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Cordero o ternera (con un grano graso)<\/li>\n\n\n\n<li>Ajo<\/li>\n\n\n\n<li>Zumo de lim\u00f3n<\/li>\n\n\n\n<li>Especias: Piment\u00f3n en polvo, comino, cardamomo, nuez moscada, canela, zumaque, escamas de guindilla, pimienta de Jamaica, sal y pimienta.<\/li>\n\n\n\n<li>Aceite de oliva<\/li>\n\n\n\n<li>Cebollas<\/li>\n\n\n\n<li>opcional: pimientos de colores<\/li>\n<\/ul>\n\n<p>Tradicionalmente, siempre servimos las brochetas a la parrilla con una deliciosa ensalada de cebolla con perejil fresco y zumaque.<\/p>\n\n<p>Para la ensalada de cebolla necesitas<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Cebolla grande<\/li>\n\n\n\n<li>Perejil de hoja plana<\/li>\n\n\n\n<li>Sumac<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-lange-sollte-das-fleisch-marinieren\">\u00bfCu\u00e1nto tiempo debe marinarse la carne?<\/h3>\n\n<p>La carne para el shish kebab debe marinarse durante al menos <strong>60 minutos<\/strong> y hasta <strong>12 horas<\/strong>. Sin embargo, como no todo el mundo es capaz de hacer <strong>fuego<\/strong>, por supuesto tambi\u00e9n es posible utilizar una parrilla de <strong>gas<\/strong>, una <strong>parrilla de contacto<\/strong> o una <strong>sart\u00e9n para asar<\/strong>, pero en mi opini\u00f3n los mejores resultados se consiguen sin duda en una <strong>parrilla de carb\u00f3n<\/strong>.<\/p>\n\n<p><strong>Los pasos de preparaci\u00f3n de las brochetas de carne son los siguientes:<\/strong><\/p>\n\n<figure class=\"wp-block-image size-large\"><a href=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8.jpg\"><img decoding=\"async\" width=\"1024\" height=\"576\" data-src=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8-1024x576.jpg\" alt=\"Se prepara el shish kebab: Se ensartan en brochetas cebollas, pimientos y carne.\" class=\"wp-image-34813 lazyload\" data-srcset=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8-1024x576.jpg 1024w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8-300x169.jpg 300w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8-768x432.jpg 768w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8-480x270.jpg 480w, https:\/\/bistrobadia.de\/wp-content\/uploads\/2024\/04\/shish-kebab-8.jpg 1500w\" data-sizes=\"(max-width: 1024px) 100vw, 1024px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/576;\" \/><\/a><\/figure>\n\n<ol class=\"wp-block-list\">\n<li>Corta la carne en dados.<\/li>\n\n\n\n<li>Para el adobo, pica finamente el ajo y m\u00e9zclalo con el aceite, el zumo de lim\u00f3n y las especias.<\/li>\n\n\n\n<li>Introduce la carne en la marinada y d\u00e9jala marinar toda la noche o al menos 4 horas para que la carne absorba todos los sabores.<\/li>\n\n\n\n<li>Corta los pimientos y las cebollas en dados.<\/li>\n\n\n\n<li>Ahora coloca la cebolla, el pimiento y la carne en dados en una brocheta tras otra.<\/li>\n\n\n\n<li>Asa las brochetas por todos los lados, aprox. 1-2 minutos por cada lado. Si quieres que la carne quede <strong>a t\u00e9rmino medio<\/strong>, lo mejor es trabajar con un term\u00f3metro<strong>(temperatura central<\/strong> de <strong>unos 58 &#8211; 60\u00b0C<\/strong>). Pero siempre puedes probar directamente un trozo del pincho.<\/li>\n\n\n\n<li>Para la ensalada de cebolla, corta las cebollas en aros finos, pica el perejil, m\u00e9zclalo todo bien con el zumaque y d\u00e9jalo infusionar.<\/li>\n<\/ol>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/d742b65e-4c19-44fa-a21a-7d58e306628b.jpeg\" alt=\"Pon a marinar las cebollas de zumaque con el perejil en un cuenco.\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n<p>La preparaci\u00f3n y cocci\u00f3n de la receta es, por tanto, superf\u00e1cil y perfecta para cualquier velada de barbacoa.  <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-mein-geheimtipp-fur-shish-kebab\">Mi consejo para el shish kebab<\/h3>\n\n<p>Aprend\u00ed esto de mis padres: cuando ases las brochetas de carne, debes poner a un lado un poco de <a href=\"https:\/\/bistrobadia.de\/es\/pan-de-pita-liban%c3%a9s\/\" target=\"_blank\" rel=\"noreferrer noopener\">pan plano liban\u00e9s<\/a> fresco. A continuaci\u00f3n, abro el pan plano, lo pongo sobre la mano como si fuera un pa\u00f1o y luego coloco encima la brocheta asada.  <\/p>\n\n<p>Esto me permite eliminar los <strong>jugos de la carne<\/strong> de las brochetas. El pan plano se aromatiza con el adobo y los jugos de la carne, y es el aperitivo perfecto para acompa\u00f1ar la brocheta. Combina perfectamente con hummus, por ejemplo.<\/p>\n\n<p>Tambi\u00e9n puedes utilizar el pan plano como una fuente muy sencilla. Cuando termino de asar las brochetas, las coloco sobre un pan plano y vuelvo a untar la carne con \u00e9l. Esto permite que el pan absorba <strong>los<\/strong> fant\u00e1sticos <strong>sabores de la barbacoa<\/strong>. A continuaci\u00f3n, el pan plano relleno de brochetas se cubre con otro pan plano. La carne se mantiene caliente m\u00e1s tiempo y se puede servir enseguida.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/8ce04693-51e5-45d9-9e6e-033e00504433.jpeg\" alt=\"El shish kebab se saca del asador en un pan plano.\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n<h3 class=\"wp-block-heading\" id=\"h-die-perfekten-begleiter-fur-aromatische-grillspiesse\">El acompa\u00f1amiento perfecto para unas sabrosas brochetas de barbacoa<\/h3>\n\n<p>Aunque pod\u00eda comer hasta hartarme de las brochetas, las estupendas <strong>guarniciones<\/strong> lo redondean todo muy bien.  <\/p>\n\n<p>Siempre tenemos <a href=\"https:\/\/bistrobadia.de\/es\/taboule\/taboule-3\/\" target=\"_blank\" rel=\"noreferrer noopener\">tabul\u00e9<\/a> o <a href=\"https:\/\/bistrobadia.de\/es\/ensalada-de-colores-fattoush\/\" target=\"_blank\" rel=\"noreferrer noopener\">fattoush<\/a> en nuestras barbacoas. Estas dos ensaladas tienen una gran y fresca acidez y ofrecen una buena contrapartida a la sabrosa carne del shish kebab.<\/p>\n\n<p>Para m\u00ed, el shish kebab siempre va acompa\u00f1ado de ensalada de cebolla con perejil y zumaque, as\u00ed como de una buena cucharada de hummus y pan plano. O bien arranco un trozo de pan y cojo un trozo de carne del pincho y un poco de ensalada de cebolla y luego lo paso todo por hummus cremoso, o me hago un <strong>wrap<\/strong> con los mismos ingredientes.<\/p>\n\n<p>Para el wrap, unto hummus en el pan plano, esparzo la ensalada de cebolla y coloco la brocheta en el centro del pan. Luego s\u00f3lo tengo que sacar la brocheta de la carne y puedo enrollar el pan.<\/p>\n\n<p>Otro gran acompa\u00f1amiento de las brochetas de barbacoa es la <a href=\"https:\/\/bistrobadia.de\/es\/ensalada-de-freekeh-con-zaatar\/\">ensalada de freekeh<\/a> sutilmente ahumada.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/fafb06d7-764d-47af-94d0-1ecaee620c45.jpeg\" alt=\"Ensalada de Freekeh servida en plato.\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n<p>Otro cl\u00e1sico del plato es <a href=\"https:\/\/bistrobadia.de\/es\/tsatsiki\/\">el tzatziki<\/a>, una cremosa <strong>salsa de yogur griego<\/strong> con ajo finamente picado, pepino y un chorrito de vinagre de vino blanco. La frescura \u00e1cida del tsatsiki armoniza maravillosamente con los ricos sabores de la carne a la parrilla.
