Les galettes de pommes de terre croustillantes, les tomates cerises sucr\u00e9es et l&rsquo;avocat velout\u00e9 forment une trilogie harmonieuse de textures et de saveurs.<\/p>\n\n\n\n<p>Enfant d\u00e9j\u00e0, j&rsquo;adorais&nbsp;<strong>les latkes<\/strong>&nbsp;et j&rsquo;y ajoutais toujours une bonne cuill\u00e8re de sucre pour qu&rsquo;ils soient bien sucr\u00e9s. Croustillant, gras et sucr\u00e9, c&rsquo;est un bon m\u00e9lange ! Plus j&rsquo;ai grandi, plus j&rsquo;ai eu envie d&rsquo;exp\u00e9rimenter. La p\u00e2te est fa\u00e7onn\u00e9e en petites galettes rondes et cuite dans une po\u00eale jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient bien dor\u00e9es.<\/p>\n\n\n\n<p>En Allemagne, les latkes sont plut\u00f4t connues sous le nom de\u00a0<strong>Reibekuchen<\/strong>,\u00a0<strong>Kartoffelpuffer<\/strong>\u00a0ou\u00a0 <strong>Kartoffelr\u00f6sti<\/strong>. Eh bien, ce n&rsquo;est pas aussi simple que cela, car elles se distinguent par leurs ingr\u00e9dients. La plupart du temps, les&nbsp;<strong>\u00ab\u00a0Reibedatschi<\/strong>&nbsp;\u00ab\u00a0, comme on les appelle \u00e9galement, restent neutres et sont servis avec une compote sucr\u00e9e.<\/p>\n\n\n\n<p>Les&nbsp;<strong>r\u00f6stis<\/strong>&nbsp;sont fabriqu\u00e9s \u00e0 partir de pommes de terre cuites (plut\u00f4t rarement crues) et r\u00e2p\u00e9es. Ils sont plus gros et plus \u00e9pais que leurs homologues \u00e0 base de pommes de terre.<\/p>\n\n\n\n<p>Et puis, il y a les&nbsp;<strong>hash browns<\/strong>. Ce sont des g\u00e2teaux r\u00e2p\u00e9s d&rsquo;Am\u00e9rique du Nord. Leur pr\u00e9paration est sans doute la plus simple, car les pommes de terre sont r\u00e2p\u00e9es, d\u00e9barrass\u00e9es de l&rsquo;amidon dans une passoire sous l&rsquo;eau courante, s\u00e9ch\u00e9es par tamponnement, puis frites sous forme de galette directement dans la po\u00eale chaude avec un peu d&rsquo;huile.<\/p>\n\n\n\n<p>Revenons aux latkes et \u00e0 leur contexte historique. Elles sont en effet traditionnellement servies \u00e0 l&rsquo;occasion de&nbsp;<strong>Hanouka<\/strong>. Il s&rsquo;agit donc d&rsquo;un plat&nbsp;<strong>juif<\/strong>&nbsp;qui est servi en&nbsp;<strong>accompagnement<\/strong>. Mais tu peux aussi savourer ces pommes de terre r\u00e2p\u00e9es croustillantes d&rsquo;autres jours &#8211; tu peux par exemple pr\u00e9parer des laktes avec une salade de tomates et de l&rsquo;avocat pour un d\u00e9jeuner ou un d\u00eener rapide.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Quelles pommes de terre pour des latkes croustillants ?<\/h3>\n\n\n\n<p>Pour obtenir des latkes vraiment croustillants et qui ne se d\u00e9font pas, il te faut la bonne pomme de terre. Et maintenant, tu te demandes quel tubercule utiliser ? Tu ne peux pas te tromper avec la\u00a0<strong>pomme de terre \u00e0 chair ferme<\/strong>, car elle est vraiment polyvalente. Sa\u00a0<strong>teneur en amidon<\/strong>\u00a0est\u00a0 <strong>d&rsquo;environ 15%<\/strong>, c&rsquo;est pourquoi elle reste encore bien ferme \u00e0 la cuisson &#8211; l\u00e9g\u00e8rement al
