{"id":15015,"date":"2020-07-16T16:30:00","date_gmt":"2020-07-16T14:30:00","guid":{"rendered":"https:\/\/bistrobadia.de\/manakish\/"},"modified":"2024-01-23T13:29:40","modified_gmt":"2024-01-23T12:29:40","slug":"manakish","status":"publish","type":"post","link":"https:\/\/bistrobadia.de\/fr\/manakish\/","title":{"rendered":"Manakish : la \u00ab\u00a0pizza\u00a0\u00bb du Levant"},"content":{"rendered":"\n<p class=\"has-drop-cap\">Il y a une chose dont je ne pourrais jamais me passer pendant ma visite \u00e0 la famille au Liban :&nbsp;<strong>le manakish<\/strong>!<br>Rien que de penser \u00e0 ces d\u00e9licieuses galettes napp\u00e9es de za&rsquo;atar, par exemple, me met l&rsquo;eau \u00e0 la bouche. Pour le petit-d\u00e9jeuner, je ne peux presque rien imaginer de mieux. La recette est super simple !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-aley-la-cite-des-nuages\">Aley : La cit\u00e9 des nuages<\/h2>\n\n\n\n<p>Quand je suis au Liban, ma tante pr\u00e9pare le&nbsp;<a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/gewuerz-zatar-zaatar-oder-zaatar\/\" target=\"_blank\"><em>m\u00e9lange de za&rsquo;atar<\/em><\/a>, le transvase dans un tupperware et m&rsquo;envoie avec \u00e0 la boulangerie.<br>Le credo du boulanger pourrait \u00eatre : \u00ab\u00a0Tu apportes le nappage, j&rsquo;ai la p\u00e2te et le four en pierre\u00a0\u00bb. C&rsquo;est donc avec le petit tupperware \u00e0 la main &#8211; et l&rsquo;estomac qui gargouille &#8211; que je traverse Aley.<\/p>\n\n\n\n<p>La plupart des membres de ma famille maternelle vivent \u00e0 Aley. Cette petite ville de montagne se trouve \u00e0 environ 16 km \u00e0 l&rsquo;est de Beyrouth &#8211; directement sur la route de Damas. Le tourisme joue un r\u00f4le tr\u00e8s important \u00e0 Aley. En \u00e9t\u00e9, les cheikhs de la p\u00e9ninsule arabique aiment passer leurs vacances dans la \u00ab\u00a0ville du brouillard\u00a0\u00bb. En raison de sa situation dans les montagnes, il arrive en effet souvent que la ville enti\u00e8re disparaisse dans les nuages.<\/p>\n\n\n\n<p>Par rapport \u00e0 Beyrouth, le climat est moins chaud et moins \u00e9touffant, mais il est tout de m\u00eame d\u00e9licieusement estival. C&rsquo;est pourquoi Aley est volontiers appel\u00e9e \u00ab\u00a0Ahru\u00df il Saif\u00a0\u00bb &#8211; la&nbsp;<em>fianc\u00e9e de l&rsquo;\u00e9t\u00e9<\/em>. Et c&rsquo;est ainsi que l&rsquo;air des soir\u00e9es d&rsquo;\u00e9t\u00e9 est rempli de musique et que les odeurs de nourriture et de parfum sont partout.<\/p>\n\n\n\n<p>Arriv\u00e9 chez le boulanger, je fais la queue. En g\u00e9n\u00e9ral, quelques voisins attendent d\u00e9j\u00e0 avec leurs Tupperware, tandis que le boulanger d\u00e9roule la p\u00e2te lev\u00e9e fra\u00eeche, y fait des petits creux avec les seringues \u00e0 doigts et la recouvre des toppings qu&rsquo;il a apport\u00e9s.<\/p>\n\n\n\n<p>Tout va si vite ! \u00c0 peine ai-je d\u00e9pos\u00e9 le m\u00e9lange de zatar qu&rsquo;il est d\u00e9j\u00e0 sur les galettes de p\u00e2te et ensuite rapidement dans le four. L&rsquo;odeur est envo\u00fbtante ! Il existe d&rsquo;ailleurs plusieurs variantes de manakish, que j&rsquo;ai tr\u00e8s envie de te pr\u00e9senter bient\u00f4t. Mais la variante au za&rsquo;atar est la plus classique.<\/p>\n\n\n\n<p>Le bruit du poussoir du four lorsqu&rsquo;il glisse le long du fond du four en pierre et sort les d\u00e9licieuses galettes de p\u00e2te du feu me fait gargouiller l&rsquo;estomac. Le boulanger emballe agilement et habilement les manakish dans du papier \u00e0 pain et me glisse le paquet chaud et parfum\u00e9 dans la main. Sur le chemin du retour chez ma tante, on perd toujours un mankushi (singulier de manakish) \ud83d\ude09<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\"
