Ma m\u00e8re est la ma\u00eetresse du moghrabieh (c&rsquo;est le nom de ce rago\u00fbt) et tout semblait toujours un peu compliqu\u00e9. Mais je ne voulais en aucun cas vous priver de cette recette fantastique et je l&rsquo;ai tout simplement essay\u00e9e. Honn\u00eatement, c&rsquo;est tellement simple et rapide \u00e0 faire que je me suis ensuite f\u00e9licit\u00e9 de n&rsquo;avoir jamais essay\u00e9 le moghrabieh. Mais maintenant\u2026. !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-couscous-perle-moghrabieh\">Couscous perl\u00e9 = moghrabieh<\/h3>\n\n\n\n<p>Comme pour d&rsquo;autres plats arabes ou levantins, le plat est souvent simplement nomm\u00e9 d&rsquo;apr\u00e8s l&rsquo;ingr\u00e9dient principal. <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">Hummus<\/a>, par exemple, signifie pois chiche en arabe. Et moghrabieh d\u00e9signe justement ce grand couscous sph\u00e9rique. Donc, si tu commandes du moghrabieh au Levant, tu obtiens ce d\u00e9licieux rago\u00fbt&#8230; Ou euh&#8230; Enfin, pas partout. Dans d&rsquo;autres pays du Levant, ce couscous s&rsquo;appelle maftoul, couscous isra\u00e9lien ou couscous turc.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-le-couscous-probablement-les-plus-petites-pates-du-monde\">Le couscous : probablement les plus petites p\u00e2tes du monde<\/h3>\n\n\n\n<p>Chaque fois que je vois une <a href=\"https:\/\/bistrobadia.de\/fr\/taboul\u00e9\/\" target=\"_blank\" rel=\"noreferrer noopener\">recette de taboul\u00e9<\/a> avec du couscous, mes cheveux se dressent directement sur ma nuque et je dois intervenir. \u00ab\u00a0Comment, pourquoi ? Ce n&rsquo;est pas la m\u00eame chose ?\u00a0\u00bb Nope, le boulgour et le couscous sont fondamentalement diff\u00e9rents. Le boulgour est du bl\u00e9 concass\u00e9 (souvent pr\u00e9cuit). Le couscous, lui, est fait de petites boules de semoule et d&rsquo;eau. Et tu connais certainement le couscous mini-fin habituel &#8211; Oui, m\u00eame celui-ci est roul\u00e9 jusqu&rsquo;\u00e0 ce que tout soit enfin couscous. Ensuite, tout est s\u00e9ch\u00e9. Pour les p\u00e2tes, ce n&rsquo;est gu\u00e8re diff\u00e9rent. (C&rsquo;est pourquoi j&rsquo;appelle toujours le couscous les plus petites p\u00e2tes du monde.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-comfort-food-du-levant\">Comfort Food du Levant<\/h3>\n\n\n\n<p>Pour moi, le moghrabieh est un repas typique du dimanche. Lorsque je suis en visite, ma m\u00e8re pr\u00e9pare g\u00e9n\u00e9ralement le bouillon de poulet le matin ou m\u00eame la nuit pr\u00e9c\u00e9dente, puis concocte le rago\u00fbt de couscous perl\u00e9 pour le d\u00e9jeuner. C&rsquo;est justement le bouillon fait maison qui m&rsquo;a toujours dissuad\u00e9 de cuisiner ce classique. Mais honn\u00eatement, il se fait vraiment tout seul. Et on peut bien le pr\u00e9parer \u00e0 l&rsquo;avance. Tu peux certes en utiliser un achet\u00e9, mais tu n&rsquo;auras alors pas le vrai go\u00fbt du moghrabieh. Les principales notes d&rsquo;\u00e9pices sont en effet la cannelle et le cumin. Mais ce n&rsquo;est pas tout : la cardamome, les graines de coriandre, le cumin, la muscade, les clous de girofle et le piment entrent \u00e9galement dans la composition.<\/p>\n\n\n\n<p>Et pour que cela \u00ab\u00a0perle\u00a0\u00bb vraiment, on ajoute au couscous perl\u00e9 des pois chiches tendres et des oignons perl\u00e9s. Si tu ne trouves pas d&rsquo;oignons perl\u00e9s (comme moi), tu peux tr\u00e8s bien opter pour des \u00e9chalotes. Les oignons et les pois chiches sont cuits directement avec le couscous. Les oignons d\u00e9veloppent ainsi une saveur sucr\u00e9e vraiment g\u00e9niale. Pour finir, on ajoute le poulet du bouillon, soit en morceaux entiers, soit en fines lamelles.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-le-moghrabieh-peut-aussi-etre-vegetal\">Le moghrabieh peut aussi \u00eatre v\u00e9g\u00e9tal !<\/h3>\n\n\n\n<p>Le moghrabieh est classiquement cuisin\u00e9 avec du poulet, mais tu peux bien s\u00fbr aussi pr\u00e9parer une variante v\u00e9g\u00e9tarienne ou v\u00e9g\u00e9talienne. Il suffit alors de faire cuire un bouillon de l\u00e9gumes avec les \u00e9pices mentionn\u00e9es ci-dessous et de remplacer la volaille soit par plus d&rsquo;oignons et de pois chiches, soit par un
