Pourquoi ce Pain pita libanais plat se s\u00e9pare-t-il exactement en deux dans le four ? Pourquoi se gonfle-t-il et se transforme-t-il en mini-ballon ?!<br \/>\u00ab\u00a0Le monde est fou !\u00a0\u00bb pensais-je toujours enfant &#8211; et ma m\u00e8re riait de mon \u00e9tonnement.<\/p>\n\n\n<p>\u00ab\u00a0C&rsquo;est de la p\u00e2te magique !\u00a0\u00bb m&rsquo;a-t-elle chuchot\u00e9 \u00e0 l&rsquo;oreille. \u00ab\u00a0D\u00e8s que je le pointe avec ma cuill\u00e8re de cuisine magique (en fait, elle utilisait une fourchette &#8211; je m&rsquo;en suis rendu compte des ann\u00e9es plus tard&#8230;), je souffle de l&rsquo;air dedans et le pain se transforme *whoooosh* en ballon !\u00a0\u00bb a-t-elle racont\u00e9 en sortant le pain suivant du four. \u00ab\u00a0Tu vois ?<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2016\/09\/scans_badia-1.jpeg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" style=\"--smush-placeholder-width: 1166px; --smush-placeholder-aspect-ratio: 1166\/790;\" \/><\/figure>\n\n\n\n<p>Maintenant, des d\u00e9cennies plus tard, je fais ce Pain pita libanais moi-m\u00eame et je ne sais toujours pas comment il se fait que le pain se gonfle comme un ballon. M\u00eame l&rsquo;omniscient oracle \u00ab\u00a0Google\u00a0\u00bb n&rsquo;a pas encore pu me donner de r\u00e9ponse concr\u00e8te et cr\u00e9dible. Si tu le sais : s&rsquo;il te pla\u00eet, partage ton secret avec moi !<\/p>\n\n\n\n<p>Eh bien, acceptons-le pour l&rsquo;instant&#8230; Le pain pita est en tout cas d\u00e9licieux !<\/p>\n\n\n\n<p>\u00c0 l&rsquo;\u00e9poque, on ne trouvait pas encore de pain pita en vente dans notre r\u00e9gion. Elle n&rsquo;avait donc pas d&rsquo;autre choix que de le faire elle-m\u00eame. Ma m\u00e8re faisait toujours cuire quelques kilos de p\u00e2te pour en faire du pain pita. Mais cela ne durait pas tr\u00e8s longtemps, si l&rsquo;on consid\u00e8re que l&rsquo;on pouvait faire de nombreuses et d\u00e9licieuses brioches enroul\u00e9es (c&rsquo;est ainsi que l&rsquo;on appelle les wraps au Liban). Nous enveloppions simplement tout dans le pain pita. L&rsquo;un de mes wraps pr\u00e9f\u00e9r\u00e9s \u00e9tait avec des frites et du ketchup faits maison ^^.<\/p>\n\n\n\n<p>Mais aussi tremp\u00e9 dans une d\u00e9licieuse huile d&rsquo;olive et <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/gewuerz-zatar-zaatar-oder-zaatar\/\" target=\"_blank\">du zaatar<\/a> &#8211; ou avec <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\">du labneh<\/a> et des concombres&#8230; Je pourrais continuer \u00e0 \u00e9num\u00e9rer ainsi pendant des heures. Mais maintenant, c&rsquo;est \u00e0 toi de jouer ! Pr\u00e9pare ta propre galette et regarde la magie op\u00e9rer dans le four.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-petit-conseil\">Un petit conseil <\/h2>\n\n\n\n<p>La pr\u00e9paration au four seul a toujours \u00e9t\u00e9 un peu compliqu\u00e9e. La temp\u00e9rature et le timing doivent \u00eatre corrects ! Ma m\u00e8re est tr\u00e8s inventive lorsqu&rsquo;il s&rsquo;agit d&rsquo;obtenir les r\u00e9sultats souhait\u00e9s. Avant, elle posait une grille sur la cuisini\u00e8re, ouvrait la plaque \u00e0 fond et faisait chauffer le pain pita directement sur cette grille, avant de le remettre bri\u00e8vement au four. C&rsquo;est beaucoup de travail, mais cela a toujours \u00e9t\u00e9 payant.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-mise-a-jour-j-ai-revu-et-ameliore-la-recette-en-juillet-2021\">Mise \u00e0 jour : J&rsquo;ai revu et am\u00e9lior\u00e9 la recette en juillet 2021<\/h3>\n\n\n\n<p>J&rsquo;ai effectivement r\u00e9ussi \u00e0 rendre le pain pita parfait encore plus parfait ! J&rsquo;ai beaucoup exp\u00e9riment\u00e9 avec diff\u00e9rents types de farine, temps de repos, temp\u00e9ratures et temps de cuisson. Mon objectif \u00e9tait que l&rsquo;on puisse obtenir un pain pita aussi bon que si on l&rsquo;avait achet\u00e9 (et m\u00eame meilleur !!) dans un four tout \u00e0 fait normal. Il fallait en tout cas qu&rsquo;il gonfle toujours comme un ballon, qu&rsquo;il soit parfait pour les dips et qu&rsquo;il soit vraiment bien \u00e9lastique pour qu&rsquo;on puisse aussi le rouler en wraps. J&rsquo;y suis parvenue et bien s\u00fbr, je te donne directement la nouvelle recette.<\/p>\n\n\n\n<p>Il y a une \u00e9tape importante que tu ne dois pas oublier lors de la pr\u00e9paration : Une fois que tu as cuit le pain, tu dois le placer dans un sac en plastique apr\u00e8s l&rsquo;avoir laiss\u00e9 refroidir. C&rsquo;est la seule fa\u00e7on pour qu&rsquo;il reste \u00e9lastique le jour suivant et qu&rsquo;il puisse \u00eatre roul\u00e9 \u00e0 la perfection.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le pain pita peut aussi \u00eatre cuit \u00e0 la po\u00eale<\/h2>\n\n\n\n<p>J&rsquo;ai maintenant essay\u00e9 le pain pita libanais dans la po\u00eale et l\u00e0 aussi, \u00e7a marche \u00e0 merveille. Il faut juste tenir compte du fait que le pain ne gonfle pas comme un ballon et reste plus compact. La chaleur dans la po\u00eale donne quelques ar\u00f4mes grill\u00e9s, ce qui donne au pain un go\u00fbt et une texture l\u00e9g\u00e8rement diff\u00e9rents.<\/p>\n\n\n\n<hr class=\"wp-block-separator
