On trouve deux noms sur le net et dans les livres de cuisine : Mujadara et Mudardara. On dit que ces deux noms d\u00e9signent ce plat levantin \u00e0 base de riz, de lentilles et d&rsquo;oignons frits. Mais comme tu l&rsquo;as probablement d\u00e9j\u00e0 compris, ce n&rsquo;est pas vrai. Je vais t&rsquo;\u00e9clairer sur ce point et te pr\u00e9senter un plat incroyablement d\u00e9licieux.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-la-difference-entre-mujadara-et-mudardara\">La diff\u00e9rence entre mujadara et mudardara<\/h3>\n\n\n\n<p>Des lentilles, du riz, du cumin et des oignons bien grill\u00e9s. Ce sont les points communs entre le mujadara et le mudardara. La plus grande diff\u00e9rence entre les deux plats v\u00e9g\u00e9taliens est la vari\u00e9t\u00e9 des lentilles et leur consistance. Pour le <strong>mujadara<\/strong> (tu trouveras la recette <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/mujadara\/\" target=\"_blank\">ici<\/a>), on utilise des lentilles rouges. Celles-ci sont cuites avec du riz et des \u00e9pices jusqu&rsquo;\u00e0 ce qu&rsquo;elles se d\u00e9sagr\u00e8gent correctement et forment une pur\u00e9e. On y ajoute ensuite des oignons caram\u00e9lis\u00e9s hach\u00e9s.<\/p>\n\n\n\n<p>Pour la <strong>mudardara<\/strong>, en revanche, on utilise des lentilles vertes, qui sont beaucoup plus fermes que les rouges. Ici, nous ne voulons pas cuisiner une pur\u00e9e, mais une sorte de pilaf &#8211; c&rsquo;est-\u00e0-dire un plat de riz. Le riz et les lentilles sont pr\u00e9par\u00e9s de mani\u00e8re \u00e0 ce qu&rsquo;ils soient l\u00e9gers et floconneux sur la fourchette ou la cuill\u00e8re et qu&rsquo;ils ne collent pas ou ne deviennent pas boueux. Pour la mudardara, les oignons ne sont pas seulement caram\u00e9lis\u00e9s, mais aussi grill\u00e9s \u00e0 feu vif et peuvent \u00eatre bien color\u00e9s. Les oignons grill\u00e9s sont ensuite en partie incorpor\u00e9s et en partie servis comme garniture.<\/p>\n\n\n\n<p>Les noms en disent d&rsquo;ailleurs long sur les plats et leur pr\u00e9paration. Mujadara signifie librement \u00ab\u00a0m\u00e9lang\u00e9\u00a0\u00bb. Mudardara signifie \u00ab\u00a0boutonneux\u00a0\u00bb &#8211; ce qui signifie que les lentilles individuelles sont conserv\u00e9es dans le plat et sont visibles comme des \u00ab\u00a0v\u00e9roles\u00a0\u00bb. J&rsquo;admets que ce n&rsquo;est pas une fa\u00e7on tr\u00e8s charmante d&rsquo;appeler un plat aussi d\u00e9licieux. Mais c&rsquo;est comme \u00e7a \ud83d\ude42<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-riz-et-lentilles-une-fete-pour-les-sens\">Riz et lentilles : une f\u00eate pour les sens<\/h3>\n\n\n\n<p>Je suis toujours \u00e9tonn\u00e9 de voir le spectacle de saveurs qui peut \u00eatre cr\u00e9\u00e9 \u00e0 partir d&rsquo;une poign\u00e9e d&rsquo;ingr\u00e9dients. Riz, lentilles et oignons : ce sont les principaux ingr\u00e9dients de la mudardara. S&rsquo;y ajoutent la meilleure huile d&rsquo;olive, le cumin, la cannelle et les graines de coriandre. C&rsquo;est \u00e0 peu pr\u00e8s tout. Et en plus, c&rsquo;est rapide ! Pendant que les oignons grillent, il te suffit de faire cuire rapidement les lentilles, puis de mettre le tout dans une casserole et de terminer la cuisson. Il ne reste plus qu&rsquo;\u00e0 ajouter les oignons pour obtenir un d\u00e9lice v\u00e9g\u00e9talien riche en prot\u00e9ines et incroyablement d\u00e9licieux. Je te conseille de l&rsquo;accompagner d&rsquo;une salade fra\u00eeche et\/ou d&rsquo;un yaourt (v\u00e9g\u00e9talien). Cela donne au plat l&rsquo;acidit\u00e9 dont il a besoin. Tu peux aussi ajouter quelques gouttes de jus de citron dans ton assiette de mudardara. Je te recommande en tout cas <a href=\"https:\/\/bistrobadia.de\/fr\/salade-color\u00e9e-fattoush\/\" target=\"_blank\" rel=\"noreferrer noopener\">le fattoush<\/a> pour accompagner ta
