Classiquement, la d\u00e9licieuse cr\u00e8me de pois chiches est souvent agr\u00e9ment\u00e9e <a href=\"https:\/\/bistrobadia.de\/fr\/hummus-tartar\/\" target=\"_blank\" rel=\"noreferrer noopener\">de viande<\/a> ou de poisson, m\u00eame au Levant. Mais il existe aussi de nombreuses options v\u00e9g\u00e9taliennes. Et comme ma recette de <a href=\"https:\/\/bistrobadia.de\/fr\/houmous-aux-choux-de-bruxelles-grill\u00e9s\/\" target=\"_blank\" rel=\"noreferrer noopener\">houmous aux choux de Bruxelles grill\u00e9s<\/a> a \u00e9t\u00e9 tr\u00e8s appr\u00e9ci\u00e9e, j&rsquo;ai directement entrepris le projet suivant : Houmous aux champignons et aux oignons sumac caram\u00e9lis\u00e9s. Je suis vraiment une tr\u00e8s grande fan de champignons et j&rsquo;ai donc tr\u00e8s vite su ce que j&rsquo;allais faire cette fois-ci. Mais il ne suffit pas de faire revenir quelques champignons dans une po\u00eale. Il faut un peu de piquant&#8230;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-houmous-aux-champignons-et-au-sirop-de-grenade\">Houmous aux champignons et au sirop de grenade<\/h3>\n\n\n\n<p>Pour les champignons, j&rsquo;opte toujours pour la vari\u00e9t\u00e9 brune. Et puis aussi volontiers les plus petits, car ils sont un peu plus fermes et j&rsquo;aime mieux la texture. Pour la combinaison avec le <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">houmous<\/a>, je les ai fait revenir dans de l&rsquo;huile d&rsquo;olive, puis j&rsquo;ai d\u00e9glac\u00e9 avec un peu de sirop de grenade et j&rsquo;ai ajout\u00e9 une pinc\u00e9e de cannelle et une poign\u00e9e de coriandre. C&rsquo;est assez bon en soi.<\/p>\n\n\n\n<p>C&rsquo;est d&rsquo;ailleurs un ami \u00e0 moi qui a fait le sirop de grenade (MERCI Daniel !!!) &#8211; et on le sent bien. Au Levant, il est courant de d\u00e9glacer les fritures avec du sirop de grenade. Cela apporte non seulement une belle note fruit\u00e9e, mais aussi une d\u00e9licieuse et discr\u00e8te amertume et une merveilleuse acidit\u00e9. Et cela se marie parfaitement avec les ar\u00f4mes grill\u00e9s des champignons frits.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-houmous-oignons-sumac-amp-le-knack\">Houmous, oignons sumac &amp; le knack<\/h3>\n\n\n\n<p>Je pourrais me gaver d&rsquo;oignons caram\u00e9lis\u00e9s au sumac par cuiller\u00e9es enti\u00e8res. J&rsquo;adore le go\u00fbt des oignons doux, les ar\u00f4mes grill\u00e9s et l&rsquo;\u00e2pret\u00e9 acidul\u00e9e du sumac. On ne peut pas faire plus umami. D\u00e9sol\u00e9, mais Maggi n&rsquo;est pas \u00e0 la hauteur !<\/p>\n\n\n\n<p>Pour un croustillant particulier, le tout est surmont\u00e9 de noisettes fra\u00eechement grill\u00e9es. Pr\u00e9pare-toi une assiette comme celle-ci et mets ton nez dessus.
