{"id":17190,"date":"2023-01-02T20:15:00","date_gmt":"2023-01-02T19:15:00","guid":{"rendered":"https:\/\/bistrobadia.de\/shish-barak\/"},"modified":"2024-01-17T10:21:13","modified_gmt":"2024-01-17T09:21:13","slug":"shish-barak","status":"publish","type":"post","link":"https:\/\/bistrobadia.de\/fr\/shish-barak\/","title":{"rendered":"Shish Barak : raviolis libanais \u00e0 la sauce au yaourt"},"content":{"rendered":"\n<p class=\"has-drop-cap\">Avant, quand il y avait du <strong>Shish Barak<\/strong>, c&rsquo;\u00e9tait toujours parce que la sc\u00e8ne suivante se d\u00e9roulait \u00e0 la maison : \u00ab\u00a0Les enfants, que voulez-vous manger demain ?\u00a0\u00bb \u00ab\u00a0SHISH BAAARAAAK\u00a0\u00bb &#8211; \u00ab\u00a0Super, pas encore&#8230;\u00a0\u00bb<br>Mes fr\u00e8res et s\u0153urs et moi adorons simplement les <strong>raviolis<\/strong> libanais <strong>dans une sauce au yaourt<\/strong>; une sorte de <strong>tortelloni<\/strong> pourrait-on dire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un coup de gueule, s&rsquo;il vous pla\u00eet<\/h3>\n\n\n\n<p>D&rsquo;ailleurs, mon fr\u00e8re Rami \u00e9tait toujours le premier \u00e0 hurler. Il aimerait bien s&rsquo;en nourrir tous les jours. C&rsquo;\u00e9tait comme \u00e7a \u00e0 l&rsquo;\u00e9poque et c&rsquo;est encore comme \u00e7a aujourd&rsquo;hui.<\/p>\n\n\n\n<p>C&rsquo;est peut-\u00eatre parce que, depuis toujours, notre m\u00e8re Badia n&rsquo;utilise pas de p\u00e2tes achet\u00e9es, mais fait tout \u00e0 la main. Entre-temps, ma s\u0153ur et moi aidons \u00e0 farcir les shish barak &#8211; du moins parfois. Mais je peux te dire que ce travail manuel est tout simplement d\u00e9licieux !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ce-sac-c-est-toi-qui-l-as-fait-rafik-il-est-moche\">\u00ab\u00a0Ce sac, c&rsquo;est toi qui l&rsquo;as fait, Rafik &#8211; il est moche !\u00a0\u00bb<\/h3>\n\n\n\n<p>Oui, mes premiers raviolis ressemblaient \u00e0 de petites boulettes de p\u00e2te et ma m\u00e8re m&rsquo;a taquin\u00e9 \u00e0 ce sujet, mais m&rsquo;a ensuite fait un bisou. Depuis, j&rsquo;ai pris le coup de main.<\/p>\n\n\n\n<p>Ce que j&rsquo;aime dans la pr\u00e9paration du shish barak, c&rsquo;est le fait de ralentir le rythme. Il n&rsquo;est pas possible d&rsquo;acheter les sacs remplis de viande hach\u00e9e (soit de b\u0153uf, soit la viande hach\u00e9e v\u00e9g\u00e9tarienne) et de pignons de pin. On ne peut donc pas simplement ouvrir un sachet ou un emballage et c&rsquo;est fini. Il faut prendre son temps !<\/p>\n\n\n\n<p>C&rsquo;est peut-\u00eatre aussi la raison pour laquelle on appelle famili\u00e8rement ces sacs \u00ab\u00a0D\u00e4ijnt il Sch\u00e4jib\u00a0\u00bb &#8211; <em>les oreilles des grisonnants<\/em>. Mais je ne pense pas que quiconque ait \u00e9t\u00e9 grisonn\u00e9 lors de la fabrication. \ud83d\ude09<\/p>\n\n\n\n<p><br>J&rsquo;associe toujours ce plat \u00e0 une grande portion de Quality-Time avec ma m\u00e8re et ma s\u0153ur. Nous nous asseyons alors ensemble \u00e0 la table de la cuisine et nous nous mettons \u00e0 jour. Les mains sont occup\u00e9es, le smartphone reste dans la poche et chacun est fier de ses <em>petites oreilles<\/em> individuelles.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Une fois, tout dans la sauce cr\u00e9meuse au yaourt et \u00e0 la menthe<\/h3>\n\n\n\n<p>D\u00e8s que les raviolis pour le shish barak sont pr\u00eats, on les recouvre d&rsquo;un linge propre et on fait cuire la sauce.<\/p>\n\n\n\n<p>Contrairement aux raviolis, la sauce cr\u00e9meuse au yaourt et \u00e0 la menthe est tr\u00e8s rapide \u00e0 pr\u00e9parer. Il suffit de faire chauffer le yaourt avec l&rsquo;eau et la f\u00e9cule dans une casserole et d&rsquo;y ajouter de l&rsquo;ail fra\u00eechement hach\u00e9 et de la menthe s\u00e9ch\u00e9e ainsi que de la cannelle, du sel et du poivre.<\/p>\n\n\n\n<p>Les boulettes de p\u00e2te pour le shish barak sont ensuite plong\u00e9es encore crues dans la sauce \u00e9pic\u00e9e et y cuisent \u00e0 point. Le moment le plus agr\u00e9able est celui o\u00f9 l&rsquo;on ouvre le premier ravioli \u00e0 la cuill\u00e8re et o\u00f9 le festin commence.
