Le ghee est \u00e9galement tr\u00e8s r\u00e9pandu dans la cuisine du Levant, o\u00f9 il est utilis\u00e9 dans de nombreux plats sal\u00e9s, mais aussi dans des desserts, par exemple pour le <a href=\"https:\/\/bistrobadia.de\/fr\/recette-du-baklava\/\" target=\"_blank\" rel=\"noreferrer noopener\">baklava<\/a>. Faire du ghee soi-m\u00eame est vraiment super simple. Dans cet article, tu apprendras comment faire.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00ab\u00a0Le ghee est plus que du beurre clarifi\u00e9 !\u00a0\u00bb<\/h3>\n\n\n\n<p>On l&rsquo;appelle d&rsquo;ailleurs samneh en arabe. Rien qu&rsquo;\u00e0 l&rsquo;odeur, avant m\u00eame que le beurre clarifi\u00e9 ne soit mis dans la po\u00eale ou la casserole, je trouve cela incroyablement d\u00e9licieux. Le samneh a une l\u00e9g\u00e8re odeur de noisette, mais curieusement aussi une odeur sucr\u00e9e. Mais l&rsquo;odeur est vraiment folle lorsque tu fais revenir le ghee. Fais frire par exemple ton \u0153uf au plat avec du ghee &#8211; tu vas l&rsquo;adorer !<\/p>\n\n\n\n<p><strong>Le ghee est en fait une mati\u00e8re grasse d\u00e9barrass\u00e9e de l&rsquo;eau et des prot\u00e9ines du lait.<\/strong><\/p>\n\n\n\n<p>Le ghee a une temp\u00e9rature de fusion \u00e9lev\u00e9e, ce qui lui permet de se conserver plus longtemps que le beurre non clarifi\u00e9. Mais c&rsquo;est la m\u00e9decine ayurv\u00e9dique qui a rendu le ghee vraiment c\u00e9l\u00e8bre. On y dit que le ghee am\u00e9liore la digestion et fournit des nutriments au corps. Il est donc souvent qualifi\u00e9 de \u00ab\u00a0super graisse\u00a0\u00bb. On pourrait donc dire que le ghee est plus qu&rsquo;un simple beurre clarifi\u00e9. Mais en fin de compte, ce n&rsquo;est qu&rsquo;une \u00ab\u00a0\u00e9tiquette\u00a0\u00bb &#8211; le ghee et le beurre clarifi\u00e9 ne sont donc pas diff\u00e9rents dans les faits.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Comment faire du ghee soi-m\u00eame<\/h3>\n\n\n\n<p>L&rsquo;avantage du ghee fait maison est bien s\u00fbr que tu sais exactement ce qu&rsquo;il contient et que tu \u00e9vites d&rsquo;\u00e9ventuels additifs ou conservateurs. Et tr\u00e8s honn\u00eatement, le ghee est vraiment tr\u00e8s facile et rapide \u00e0 faire soi-m\u00eame ! Mon exp\u00e9rience m&rsquo;a \u00e9galement montr\u00e9 que la production maison a un bien meilleur go\u00fbt et que la texture est bien plus cr\u00e9meuse que la version achet\u00e9e.<\/p>\n\n\n\n<p>Pour te donner un peu de spoil et un raccourci, voici comment fonctionne la clarification :<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Lors de la cuisson, les mol\u00e9cules d&rsquo;eau du beurre s&rsquo;\u00e9vaporent.<\/li>\n\n\n\n<li>Les prot\u00e9ines du lait se transforment en mousse, qui flotte sur le beurre et peut \u00eatre facilement recueillie ou \u00e9cum\u00e9e.<\/li>\n\n\n\n<li>Pendant la cuisson, le beurre prend de d\u00e9licats ar\u00f4mes de grill\u00e9.<\/li>\n<\/ol>\n\n\n\n<p><strong>Pour faire du ghee soi-m\u00eame, il suffit de quelques \u00e9l\u00e9ments :<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Beurre<\/li>\n\n\n\n<li>Un bocal propre et st\u00e9rilis\u00e9 avec un couvercle<\/li>\n\n\n\n<li>Un tamis<\/li>\n\n\n\n<li>Une louche ou une grande cuill\u00e8re<\/li>\n\n\n\n<li>Un chiffon propre ou simplement du papier essuie-tout<\/li>\n<\/ul>\n\n\n\n<p>Tout d&rsquo;abord, fais fondre le beurre \u00e0 feu doux. Veille \u00e0 ce que le beurre soit compl\u00e8tement fondu et qu&rsquo;il ne reste pas un ou deux morceaux entiers. Si le beurre n&rsquo;est pas compl\u00e8tement fondu, il ne se clarifiera pas correctement.<\/p>\n\n\n\n<p>Tu peux ensuite augmenter l\u00e9g\u00e8rement le feu jusqu&rsquo;\u00e0 ce que le beurre fr\u00e9misse tr\u00e8s l\u00e9g\u00e8rement. Une mousse se forme alors dessus et tu pourrais voir des taches l\u00e9g\u00e8rement brunes au fond de la casserole. Cela se fait tr\u00e8s rapidement, en g\u00e9n\u00e9ral en 10 minutes environ. Il est vraiment important de surveiller le beurre pendant qu&rsquo;il mijote. Sinon, il pourrait br\u00fbler et devenir tr\u00e8s amer et immangeable.<\/p>\n\n\n\n<p>Ensuite, tu retires la casserole du feu et tu peux laisser refroidir le beurre quelques instants pour ne pas te br\u00fbler les doigts. Pendant ce temps, tu peux d\u00e9j\u00e0 pr\u00e9parer le verre. Il suffit de placer une passoire sur le bocal et d&rsquo;y placer un chiffon propre ou du papier absorbant.<\/p>\n\n\n\n<p>Tu peux maintenant verser le beurre dans le bocal \u00e0 travers le tamis et le tissu. Il te suffit ensuite de laisser refroidir le ghee dans le bocal et de le stocker ensuite au r\u00e9frig\u00e9rateur. <strong>Le ghee se solidifie \u00e0 temp\u00e9rature ambiante et se conserve plusieurs mois au r\u00e9frig\u00e9rateur.<\/strong> Il n&rsquo;est toutefois pas n\u00e9cessaire de r\u00e9frig\u00e9rer le ghee.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Encore quelques conseils<\/h3>\n\n\n\n<p>En fait, c&rsquo;est \u00e0 peu pr\u00e8s tout. Mais j&rsquo;ai quand m\u00eame quelques conseils importants \u00e0 te donner ! Le ghee est un produit fantastique qui doit \u00eatre de la meilleure qualit\u00e9 possible. Veille donc \u00e0 acheter du beurre de bonne qualit\u00e9. Opte donc plut\u00f4t pour une <strong>variante bio<\/strong> et, de pr\u00e9f\u00e9rence, pour un beurre issu <strong>de lait de p\u00e2turage<\/strong>. C&rsquo;est non seulement mieux pour toi, mais c&rsquo;est aussi plus savoureux et plus respectueux du climat.<\/p>\n\n\n\n<p>J&rsquo;aime surtout le ghee sous sa forme classique. Mais si tu le souhaites, tu peux aussi aromatiser le beurre clarifi\u00e9 \u00e0 ta guise. Tu peux par exemple ajouter du curcuma, de la cannelle, du clou de girofle ou du cumin \u00e0 ton ghee fait maison pour lui donner une touche particuli\u00e8re.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Qu&rsquo;est-ce qu&rsquo;il y a d&rsquo;autre \u00e0 savoir ?<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le ghee contient une grande quantit\u00e9 d&rsquo;acide butyrique qui, selon certaines \u00e9tudes, peut avoir un effet anti-inflammatoire.<\/li>\n\n\n\n<li>Le ghee convient parfaitement \u00e0 la cuisson, car il a une temp\u00e9rature de fusion \u00e9lev\u00e9e et ne br\u00fble pas aussi facilement que le beurre normal.<\/li>\n\n\n\n<li>Le ghee ne contient g\u00e9n\u00e9ralement pas de lactose, car la teneur en lactose du beurre est \u00e9limin\u00e9e pendant le processus de clarification. Cela le rend appropri\u00e9 pour les personnes qui souffrent d&rsquo;une intol\u00e9rance au lactose. Notez toutefois que le ghee est toujours un produit laitier et ne convient donc pas aux personnes allergiques au lait.<\/li>\n<\/ul>\n\n\n\n<p>Le ghee est vraiment une alternative incroyable au beurre normal ! Il se conserve plus longtemps, a un go\u00fbt plus intense et peut \u00eatre utilis\u00e9 de mani\u00e8re fantastique pour faire revenir des aliments.
