Lorsque je pr\u00e9pare moi-m\u00eame ce m\u00e9lange d&rsquo;\u00e9pices, je reste en g\u00e9n\u00e9ral dans les environs, comme si j&rsquo;\u00e9tais dans le brouillard, et je r\u00eave devant moi. Je trouve le parfum et l&rsquo;ar\u00f4me des \u00e9pices qui se d\u00e9veloppent si envo\u00fbtants &#8211; comme un esprit qui s&rsquo;\u00e9l\u00e8ve de la lampe pour t&rsquo;ensorceler.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Faire sa propre dukkah est super facile !<\/h3>\n\n\n\n<p>La dukkah est probablement originaire d&rsquo;\u00c9gypte, d&rsquo;o\u00f9 elle s&rsquo;est r\u00e9pandue dans la temp\u00eate au Levant. Je trouve que l&rsquo;id\u00e9e de combiner des \u00e9pices fra\u00eechement grill\u00e9es avec des noix \u00e9galement grill\u00e9es est d\u00e9j\u00e0 super bonne ! Mais ma premi\u00e8re rencontre avec ce fantastique m\u00e9lange d&rsquo;\u00e9pices a effectivement \u00e9t\u00e9 un peu d\u00e9cevante, car j&rsquo;ai achet\u00e9 un produit tout pr\u00eat.<\/p>\n\n\n\n<p>Honn\u00eatement : n&rsquo;ach\u00e8te jamais de dukkah pr\u00e9emball\u00e9e dans le commerce ! Cela se retourne contre toi \u00e0 coup s\u00fbr, \u00e0 moins que tu n&rsquo;aies un torr\u00e9facteur pr\u00e8s de chez toi qui pr\u00e9pare le m\u00e9lange frais pour toi. La diff\u00e9rence entre la dukkah fra\u00eeche et celle qui est emball\u00e9e depuis plus longtemps est \u00e9norme !<\/p>\n\n\n\n<p>La raison en est bien s\u00fbr que les ar\u00f4mes de grillage, vraiment fantastiques et importants, deviennent fades. Et il vaut mieux ne pas laisser les noix trop longtemps, car leur graisse risque de rancir. Mieux vaut donc pr\u00e9parer sa dukkah soi-m\u00eame ! C&rsquo;est tr\u00e8s facile, promis !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mon propre m\u00e9lange<\/h3>\n\n\n\n<p>La dukkah se compose g\u00e9n\u00e9ralement d&rsquo;une poign\u00e9e d&rsquo;\u00e9pices et d&rsquo;une s\u00e9lection de noix. C&rsquo;est \u00e0 toi de choisir celles que tu veux. Les noisettes et les noix sont des exemples classiques. Mais j&rsquo;ai d\u00e9velopp\u00e9 mon propre m\u00e9lange. Il contient les \u00e9l\u00e9ments suivants :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cumin<\/li>\n\n\n\n<li>Coriandre<\/li>\n\n\n\n<li>Fenouil<\/li>\n\n\n\n<li>Graines de s\u00e9same<\/li>\n\n\n\n<li>Fenugrec<\/li>\n\n\n\n<li>Pistaches<\/li>\n\n\n\n<li>Noisettes<\/li>\n\n\n\n<li>Pignons de pin<\/li>\n\n\n\n<li>Flocons de gros sel marin<\/li>\n<\/ul>\n\n\n\n<p>J&rsquo;ai gard\u00e9 la recette ou le m\u00e9lange tr\u00e8s simple et j&rsquo;ai opt\u00e9 pour des proportions plut\u00f4t que des grammes. Une cuill\u00e8re \u00e0 soupe est d\u00e9terminante. Tu peux donc facilement adapter la recette de la dukkah \u00e0 la quantit\u00e9 souhait\u00e9e.<\/p>\n\n\n\n<p>Lors de la composition du m\u00e9lange d&rsquo;\u00e9pices, je ferais en tout cas un peu attention aux diff\u00e9rentes textures. Les \u00e9pices peuvent \u00eatre finement moulues &#8211; c&rsquo;est \u00e9galement le cas pour une partie du s\u00e9same grill\u00e9. Le reste du s\u00e9same reste entier, comme c&rsquo;est le cas pour le m\u00e9lange d&rsquo;\u00e9pices <a href=\"https:\/\/bistrobadia.de\/fr\/faire-un-zaatar-soi-m\u00eame\/\" target=\"_blank\" rel=\"noreferrer noopener\">Za&rsquo;atar<\/a>.<\/p>\n\n\n\n<p>Tu peux simplement hacher les noix avec un couteau jusqu&rsquo;\u00e0 ce que la taille te convienne ou les moudre dans un mixeur. Je ne mettrais toutefois pas le tout dans le mixeur pour en faire une masse uniforme. Les diff\u00e9rentes tailles sont importantes, m\u00eame si la diff\u00e9rence est plut\u00f4t petite. Cela peut para\u00eetre \u00e9trange, mais cela ne fait pas seulement une diff\u00e9rence visuelle, mais aussi sur la langue.<\/p>\n\n\n\n<p>Pour le sel, j&rsquo;ai trouv\u00e9 important d&rsquo;utiliser des flocons de sel et non du sel fin et raffin\u00e9. Tout d&rsquo;abord, le sel de mer naturel a bien meilleur go\u00fbt et la structure des flocons de sel donne encore une fois un l\u00e9ger croustillant qui est vraiment agr\u00e9able en bouche.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Stocker et utiliser la dukkah<\/h3>\n\n\n\n<p>Si tu as fait griller et moudre les \u00e9pices et les noix et que tu as m\u00e9lang\u00e9 le tout, tu en serviras probablement une partie dans une assiette avec un peu d&rsquo;huile d&rsquo;olive et tu la mangeras avec <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">des galettes<\/a> ou de la baguette.<\/p>\n\n\n\n<p>Tu peux simplement mettre le reste dans un bocal propre et le fermer herm\u00e9tiquement. Le m\u00e9lange d&rsquo;\u00e9pices se conserve quelques semaines, si tant est qu&rsquo;il survive aussi longtemps et qu&rsquo;il ne soit pas d\u00e9j\u00e0 mang\u00e9 avant. Il existe de nombreuses fa\u00e7ons d&rsquo;utiliser la dukkah. Le m\u00e9lange d&rsquo;\u00e9pices est par exemple excellent avec :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Huile d&rsquo;olive et pain<\/li>\n\n\n\n<li>Sur \u0153uf au plat<\/li>\n\n\n\n<li>Sur un pain avec du <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a> ou un autre fromage frais<\/li>\n\n\n\n<li>Sur de la viande ou des l\u00e9gumes saut\u00e9s<\/li>\n\n\n\n<li>En salade<\/li>\n\n\n\n<li>Comme assaisonnement pour la feta ou le halloumi<\/li>\n\n\n\n<li>Comme topping pour le <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">houmous<\/a><\/li>\n<\/ul>\n\n\n\n<p>Tu peux utiliser la dukkah de mani\u00e8re tr\u00e8s universelle et elle est vraiment <strong>parfaite comme cadeau ou comme pr\u00e9sent pour les amis et la famille<\/strong>. Je suis s\u00fbr qu&rsquo;une fois que tu l&rsquo;auras go\u00fbt\u00e9, des id\u00e9es te viendront directement \u00e0 l&rsquo;esprit.
