Chez nous, ce n&rsquo;\u00e9tait pas une dinde, mais justement une <strong>kabsa<\/strong>! Non, ce fantastique plat de riz avec de <strong>l&rsquo;agneau<\/strong> juteux et <strong>du riz<\/strong> super \u00e9pic\u00e9 n&rsquo;est pas un repas traditionnel de Thanksgiving. Mais c&rsquo;est un plat qui est vraiment c\u00e9l\u00e9br\u00e9 en grande compagnie. Chez nous, c&rsquo;est toujours quand on a de la visite.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Un festin du Levant<\/h3>\n\n\n\n<p>Comme c&rsquo;est g\u00e9n\u00e9ralement le cas pour un vrai repas de f\u00eate, il faut un peu de pr\u00e9paration. Mais cela ne signifie pas du tout que la <strong>recette de la kabsa<\/strong> est difficile. Les composants de la kabsa classique (ou <strong>kabsah<\/strong>ou <strong>kabseh<\/strong>) sont une base de riz basmati incroyablement \u00e9pic\u00e9 et, par-dessus, de l&rsquo;agneau vraiment tendre comme du beurre et de nombreuses noix grill\u00e9es. Pour que le riz soit aussi cors\u00e9 et \u00e9pic\u00e9, il est cuit avec le bouillon obtenu auparavant \u00e0 partir de l&rsquo;agneau. Mais commen\u00e7ons par le d\u00e9but.<\/p>\n\n\n\n<p>La base du kabsa est un <strong>fond d&rsquo;agneau<\/strong> tr\u00e8s aromatique. Pour cela, on fait mijoter de la viande d&rsquo;agneau (j&rsquo;utilise pour cela un gigot) avec toute une s\u00e9rie d&rsquo;\u00e9pices pendant environ trois heures, jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit vraiment tendre comme du beurre. L&rsquo;agneau est accompagn\u00e9 de <strong>cardamome<\/strong>, d&rsquo;ail, de gingembre, de tomate, de cumin, de <strong>curcuma<\/strong>, de coriandre, de <strong>cannelle<\/strong>, de paprika &#8211; ah : jette simplement tout ton arsenal d&rsquo;\u00e9pices dans le bouillon ! Il en r\u00e9sulte un fond d&rsquo;agneau incroyablement bon, dont tu as besoin pour le riz, et un agneau tendre et juteux pour le nappage. Ce sont les deux ingr\u00e9dients principaux. Et comme tu l&rsquo;as peut-\u00eatre d\u00e9j\u00e0 compris, c&rsquo;est la cuisini\u00e8re qui fait le travail pour toi la plupart du temps.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Noix grill\u00e9es, yaourt et probablement la salsa de tomates la plus simple du monde<\/h3>\n\n\n\n<p>Une fois que tu as pr\u00e9par\u00e9 le fond d&rsquo;agneau pour la kabsa, il est pr\u00e9f\u00e9rable de mettre l&rsquo;agneau au four pour le garder au chaud ou d&rsquo;allumer le gril du four pour donner \u00e0 la viande une cro\u00fbte encore plus savoureuse. C&rsquo;est \u00e0 toi de d\u00e9cider. Entre-temps, tu pr\u00e9pares le riz avec le fond. Et pendant que le riz cuit, tu t&rsquo;occupes des garnitures.<\/p>\n\n\n\n<p>Traditionnellement, le kabsa est volontiers accompagn\u00e9 de <strong>yaourt<\/strong> pur. Avec son acidit\u00e9 et son onctuosit\u00e9, le yaourt offre un bon \u00e9quilibre au plat de riz plut\u00f4t gras et savoureux. Mais dans ma famille, on aimait bien aussi une <strong>salsa de tomates<\/strong> fra\u00eechement mix\u00e9e. Pour cela, ma m\u00e8re r\u00e9duisait simplement des tomates en pur\u00e9e avec de l&rsquo;oignon, de l&rsquo;huile d&rsquo;olive, du vinaigre de cidre et un peu de piment. Assaisonnez avec du sel et du poivre et la salsa <strong>la plus simple<\/strong> du monde est pr\u00eate. Le caract\u00e8re fruit\u00e9 des tomates se marie tr\u00e8s bien avec la kabsa et le yaourt.<\/p>\n\n\n\n<p>Comme si cela ne suffisait pas, la kabsa ou la kabseh est accompagn\u00e9e d&rsquo;un petit <strong>mezze<\/strong>. Il est souvent accompagn\u00e9 de <a href=\"https:\/\/bistrobadia.de\/fr\/baba-ghanoush-cr\u00e8me-d'aubergines\/\" target=\"_blank\" rel=\"noreferrer noopener\">baba ghanoush<\/a>, de <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">houmous<\/a> et <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">de pain pita<\/a>. Et c&rsquo;est justement ce que j&rsquo;aime dans la cuisine du Levant : on m\u00e9lange tout et on obtient toujours un excellent plat.<\/p>\n\n\n\n<p>La kabsa n&rsquo;est pas seulement un plat que l&rsquo;on sert lors d&rsquo;occasions sp\u00e9ciales. C&rsquo;est un plat qui rend chaque occasion sp\u00e9ciale. Bon app\u00e9tit !<\/p>\n\n\n\n<p>Conseil : il existe aussi des kabsa au poulet. Et si tu es v\u00e9g\u00e9tarien, essaie avec du bouillon de l\u00e9gumes, les \u00e9pices mentionn\u00e9es ci-dessous et du poulet v\u00e9g\u00e9tal pour le nappage.<\/p>\n\n\n\n<hr
