Il existe une grande vari\u00e9t\u00e9 de garnitures telles que le <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a>, le pudding ou les noix hach\u00e9es. Le sirop joue \u00e9galement un r\u00f4le important, car il apporte un ar\u00f4me magique.<\/p>\n\n\n\n<p>Au Liban et dans le reste du Moyen-Orient, on trouve des atayef dans toutes les boulangeries pendant le <strong>ramadan<\/strong>. Et \u00e0 la maison, ma m\u00e8re aime les pr\u00e9parer pour les anniversaires &#8230; et quand j&rsquo;en ai envie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-sont-les-atayef\">Que sont les atayef?<\/h2>\n\n\n\n<p>Les atayef sont des <strong>cr\u00eapes<\/strong> fourr\u00e9es d&rsquo;une sorte de pudding au lait appel\u00e9 <a href=\"https:\/\/bistrobadia.de\/fr\/ashta-pudding-au-lait-aux-fruits-de-la-passion\/\" target=\"_blank\" rel=\"noreferrer noopener\">ashta<\/a>. Ils sont ensuite garnis de <strong>pistaches<\/strong> hach\u00e9es et arros\u00e9s de <strong>sirop de sucre<\/strong>. Mon oncle ne se contente pas de les arroser, il les noie &#8211; mais bon, c&rsquo;est un accro au sucre.<\/p>\n\n\n\n<p>La p\u00e2te et le pudding ne contiennent pratiquement pas de sucre. Le sirop de sucre <strong>(attir)<\/strong> joue donc un r\u00f4le d\u00e9terminant. Cela permet \u00e0 chacun de d\u00e9terminer lui-m\u00eame le degr\u00e9 de sucrosit\u00e9. L&rsquo;eau de <strong>rose<\/strong> et de <a href=\"https:\/\/bistrobadia.de\/fr\/eau-de-sang-dorange-guide\/\" target=\"_blank\" rel=\"noreferrer noopener\">fleur d&rsquo;oranger<\/a> conf\u00e8re \u00e0 l&rsquo;atayef sa saveur orientale typique, qui, pour moi, a sa place dans un dessert parfait.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-atayef-faites-vos-propres-crepes-farcies\">Atayef \u2013 faites vos propres cr\u00eapes farcies<\/h2>\n\n\n\n<p>Vous pouvez diviser la recette de l&rsquo;atayef en <strong>quatre blocs<\/strong>, pour ainsi dire. Il faut pr\u00e9parer la <strong>p\u00e2te<\/strong>, la <strong>garniture<\/strong>, le <strong>sirop<\/strong> et <strong>assembler<\/strong> le tout.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pour la p\u00e2te, vous pr\u00e9parez une eau de levure, que vous m\u00e9langez aux autres ingr\u00e9dients pour former une p\u00e2te lisse et que vous laissez lever pendant environ 2 heures. 1 heure.<\/li>\n\n\n\n<li>Cuire la p\u00e2te une cuiller\u00e9e \u00e0 la fois dans une po\u00eale \u00e0 frire antiadh\u00e9sive pour obtenir de petites cr\u00eapes.<\/li>\n\n\n\n<li>Pour le pudding ashta, m\u00e9langer le lait avec la vanille, le sucre et la ma\u00efzena et faire bouillir le liquide pour obtenir un pudding cr\u00e9meux.<\/li>\n\n\n\n<li>Parfumez ensuite le pudding avec de l&rsquo;eau de rose et de fleur d&rsquo;oranger.<\/li>\n\n\n\n<li>Pour pr\u00e9parer le sirop, faites bouillir l&rsquo;eau avec le sucre et parfumez-la avec de l&rsquo;eau de rose et de fleur d&rsquo;oranger.<\/li>\n\n\n\n<li>Pour finaliser l&rsquo;atayef, prenez une cr\u00eape, tartinez-la de lait au lait et pliez-la en entonnoir. Tremper ensuite la partie avant de la cr\u00eape fourr\u00e9e dans les pistaches hach\u00e9es. Enfin, arroser le tout d&rsquo;un peu de sirop de sucre.<\/li>\n<\/ol>\n\n\n\n<p><strong>Lorsque ma m\u00e8re pr\u00e9pare ces cr\u00eapes fourr\u00e9es, le spectacle suivant se produit:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Elle pr\u00e9pare les cr\u00eapes, \u00e9tale la cr\u00e8me p\u00e2tissi\u00e8re une par une, plie la cr\u00eape en entonnoir et trempe le tout dans des pistaches hach\u00e9es.<\/li>\n\n\n\n<li>Elle passe ensuite \u00e0 la cr\u00eape suivante : Elle l&rsquo;enrobe, la plie en entonnoir, la trempe dans des pistaches hach\u00e9es et veut la mettre avec l&rsquo;autre cr\u00eape fourr\u00e9e.<\/li>\n\n\n\n<li>MAIS&#8230; La premi\u00e8re cr\u00eape a disparu! Et bizarrement, il manque aussi un peu de sirop de sucre&#8230; C&rsquo;est comme \u00e7a avec les quatre premiers Atayef \u2013 <strong>myst\u00e9rieux<\/strong>!<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-conseils-pour-la-preparation\">Conseils pour la pr\u00e9paration<\/h2>\n\n\n\n<p>La particularit\u00e9 de la friture de l&rsquo;atayef est qu&rsquo;elle ne peut se faire que <strong>d&rsquo;un seul c\u00f4t\u00e9<\/strong>!<\/p>\n\n\n\n<p>Tandis que la <strong>face inf\u00e9rieure<\/strong> frit l\u00e9g\u00e8rement dans la po\u00eale, la <strong>face sup\u00e9rieure<\/strong> fait de petites bulles qui se transforment ensuite en une multitude de petits crat\u00e8res. Cela est d\u00fb au fait que la p\u00e2te est une p\u00e2te \u00e0 base de <strong>levure<\/strong> liquide. Il est tr\u00e8s important qu&rsquo;un seul c\u00f4t\u00e9 soit frit. La face sup\u00e9rieure cuit lentement et reste l\u00e9g\u00e8rement <strong>collante<\/strong>. Cela signifie que les cr\u00eapes restent coll\u00e9es les unes aux autres apr\u00e8s avoir \u00e9t\u00e9 garnies.<\/p>\n\n\n\n<p>Et pour \u00e9viter que les petites cr\u00eapes ne collent au fond de la po\u00eale, je recommande d&rsquo;utiliser une <strong>po\u00eale antiadh\u00e9sive<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-combien-de-temps-atayef-peut-il-tenir\">Combien de temps Atayef peut-il tenir?<\/h2>\n\n\n\n<p>Il est pr\u00e9f\u00e9rable de manger les cr\u00eapes fourr\u00e9es imm\u00e9diatement apr\u00e8s les avoir pr\u00e9par\u00e9es. Vous pouvez \u00e9galement les conserver au r\u00e9frig\u00e9rateur pendant 1 \u00e0 2 jours, mais elles risquent alors de se d\u00e9tremper.<\/p>\n\n\n\n<p>Si vous souhaitez servir les atayef comme <strong>dessert<\/strong>, vous pouvez \u00e9galement pr\u00e9parer les cr\u00eapes <strong>quelques jours<\/strong> \u00e0 l&rsquo;avance et les conserver au <strong>r\u00e9frig\u00e9rateur<\/strong> ou les <strong>congeler<\/strong>. Vous pouvez \u00e9galement pr\u00e9parer la garniture et le sirop la <strong>veille<\/strong> si vous conservez le tout au frais par la suite.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-crepes-fourrees-sont-elles-vegetaliennes\">Les cr\u00eapes fourr\u00e9es sont-elles v\u00e9g\u00e9taliennes?<\/h2>\n\n\n\n<p>Cette <strong>recette d&rsquo;atayef<\/strong> est une recette libanaise classique de ma m\u00e8re et n&rsquo;est ni v\u00e9g\u00e9talienne ni sans gluten.
