Au Levant, il est difficile de dresser une table sans ce d\u00e9licieux <strong>fromage frais \u00e0 base de yaourt<\/strong>. Le fromage frais fait toujours partie d&rsquo;un bon <strong>mezze<\/strong>! La recette de base est non seulement incroyablement polyvalente, mais aussi incroyablement <strong>rapide <\/strong>et<strong> facile<\/strong> \u00e0 pr\u00e9parer. Et en plus, elle est vraiment <strong>bon march\u00e9<\/strong>! Je te montre ici comment cela fonctionne et comment tu peux <strong>pr\u00e9parer<\/strong> ton <strong>propre Labneh<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Qu&rsquo;est-ce que la labneh exactement et d&rsquo;o\u00f9 provient-elle ?<\/strong><\/h2>\n\n\n\n<p>Le labneh est un <strong>fromage frais<\/strong> tr\u00e8s cr\u00e9meux, fabriqu\u00e9 <strong>\u00e0 partir de yaourt<\/strong>. C&rsquo;est pourquoi on l&rsquo;appelle parfois aussi <strong>fromage au yaourt<\/strong>. Selon la r\u00e9gion, le Labneh est parfois aussi appel\u00e9 <strong>Labaneh<\/strong>.&nbsp;<\/p>\n\n\n\n<p>Et comme nous l&rsquo;avons dit plus haut, le fromage frais est issu de la cuisine orientale et est devenu un incontournable de la cuisine du Levant. Le Levant s&rsquo;\u00e9tend sur le Liban, la Syrie, Isra\u00ebl, la Palestine, la Jordanie, une partie de la Turquie ainsi que Chypre.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Voici comment tu peux faire du fromage frais toi-m\u00eame<\/strong><\/h2>\n\n\n\n<p>Tout ce dont tu as besoin pour pr\u00e9parer ce d\u00e9licieux fromage frais :&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Yaourt&nbsp;<\/li>\n\n\n\n<li>une pinc\u00e9e de sel&nbsp;<\/li>\n\n\n\n<li>un passe-plat propre<\/li>\n<\/ul>\n\n\n\n<p>Pour fabriquer du labneh, il te suffit de m\u00e9langer une petite pinc\u00e9e de sel avec le yaourt et de mettre le yaourt sal\u00e9 dans un passe-th\u00e9i\u00e8re et de le laisser reposer pendant quelques heures.<\/p>\n\n\n\n<p>L&rsquo;ajout de sel d\u00e9shydrate le yaourt et lui donne une consistance plus ferme. En outre, le go\u00fbt s&rsquo;intensifie. Le Labneh a un go\u00fbt de yaourt vraiment frais et prononc\u00e9 : l\u00e9g\u00e8rement acidul\u00e9 et d\u00e9licieusement cr\u00e9meux, voire cr\u00e9meux.<\/p>\n\n\n\n<p>Plus tu laisses reposer le yaourt dans la passoire, plus il perdra de liquide (petit-lait) et deviendra ainsi plus ferme et plus intense en go\u00fbt. Tu peux donc d\u00e9cider toi-m\u00eame du degr\u00e9 d&rsquo;onctuosit\u00e9 que tu souhaites donner au fromage frais \u00e0 base de yaourt.&nbsp;<\/p>\n\n\n\n<p>\u00c0 propos d&rsquo;onctuosit\u00e9 : la teneur en mati\u00e8res grasses du yaourt d\u00e9termine \u00e9galement sa consistance et son go\u00fbt. J&rsquo;aime utiliser un yaourt \u00e0 10 % pour mon labneh. Le fait que la mati\u00e8re grasse soit un vecteur de go\u00fbt le rend non seulement plus cors\u00e9, mais aussi plus doux.<\/p>\n\n\n\n<p>Si tu utilises par exemple un yaourt \u00e0 faible teneur en mati\u00e8res grasses, ton fromage frais sera bien s\u00fbr aussi cr\u00e9meux, mais aussi en tout cas plus acide qu&rsquo;avec plus de mati\u00e8res grasses dans le yaourt. Ne t&rsquo;inqui\u00e8te pas, cela semble plus scientifique que n\u00e9cessaire. Tout est clairement expliqu\u00e9 dans ma recette ci-dessous.&nbsp;<\/p>\n\n\n\n<p><strong>Une petite astuce de ma m\u00e8re :<\/strong><\/p>\n\n\n\n<p>La fa\u00e7on la plus amusante de pr\u00e9parer la labneh est sans aucun doute celle de ma m\u00e8re : \u00e0 un moment donn\u00e9, elle a \u00e9gar\u00e9 son passe-partout et a fouill\u00e9 tous les tiroirs de la maison. Rien, pas de passe-partout. Comme quoi, la n\u00e9cessit\u00e9 est toujours source d&rsquo;invention.<\/p>\n\n\n\n<p>Apr\u00e8s avoir fouill\u00e9 la moiti\u00e9 de l&rsquo;appartement, elle a donc de nouveau disparu bri\u00e8vement dans la cuisine, puis est revenue dans le salon avec un moka et un sourire en coin. \u00ab\u00a0Alors, tu as trouv\u00e9 le passe-plat ?\u00a0\u00bb lui ai-je demand\u00e9.&nbsp;<\/p>\n\n\n\n<p>Elle a sirot\u00e9 son moka avec pr\u00e9caution et m&rsquo;a dit tr\u00e8s complaisamment : \u00ab\u00a0Non, ce passe-partout peut rester l\u00e0 o\u00f9 il s&rsquo;est cach\u00e9 !\u00a0\u00bb en me souriant. Je pensais que nous devrions renoncer cette fois au fromage au yaourt cr\u00e9meux, mais d&rsquo;un mouvement de t\u00eate en direction de la cuisine et les yeux rieurs, elle m&rsquo;a indiqu\u00e9 que je devais regarder.<\/p>\n\n\n\n<p>En entrant dans la cuisine, j&rsquo;ai vu le porte-filtre de la machine \u00e0 caf\u00e9 d\u00e9pli\u00e9. En m&rsquo;approchant, j&rsquo;ai vu qu&rsquo;il contenait un filtre \u00e0 caf\u00e9 &#8211; et du yaourt. C&rsquo;est malin ! Je ne pouvais pas m&#8217;emp\u00eacher de rire, c&rsquo;\u00e9tait tellement simple.&nbsp;<\/p>\n\n\n\n<p>Je me suis \u00e9galement servi une tasse de <a href=\"https:\/\/bistrobadia.de\/fr\/kaffee-auf-libanesisch-mokka-mit-kardamom\/\">moka<\/a> fra\u00eechement infus\u00e9 et je suis retourn\u00e9 m&rsquo;asseoir avec ma m\u00e8re. Nous \u00e9tions en train de boire notre moka quand nous avons entendu mon fr\u00e8re crier depuis la cuisine : \u00ab\u00a0B\u00ea\u00ea\u00ea\u00ea\u00ea ! Qu&rsquo;est-ce que tu fais ?!?\u00a0\u00bb &#8211; Mon fr\u00e8re pr\u00e9f\u00e8re boire du caf\u00e9 filtre&#8230;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">O\u00f9<strong> acheter ?<\/strong><\/h2>\n\n\n\n<p>Bien s\u00fbr, on peut aussi acheter du Labneh dans certains supermarch\u00e9s bien achaland\u00e9s, dans les \u00e9piceries fines ou dans les march\u00e9s orientaux. Mais soyons honn\u00eates : tu peux vraiment faire ce fromage frais toi-m\u00eame si facilement et rapidement que cela ne vaut pas la peine de l&rsquo;acheter.<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Comment et avec quoi le labneh est-il consomm\u00e9 ?<\/strong><\/h2>\n\n\n\n<p>Comme nous l&rsquo;avons dit au d\u00e9but, le labneh est tr\u00e8s polyvalent. Traditionnellement, le fromage frais est arros\u00e9 d&rsquo;un peu d&rsquo;huile d&rsquo;olive et garni de za&rsquo;atar. Il est toujours accompagn\u00e9 de l\u00e9gumes frais en guise d&rsquo;en-cas, d&rsquo;olives marin\u00e9es et bien s\u00fbr de <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">pain pita<\/a> frais. Le labneh est alors simplement pass\u00e9 avec un morceau de pain pita dans le labneh avec l&rsquo;huile et le za&rsquo;atar.<\/p>\n\n\n\n<p>Le <a href=\"https:\/\/bistrobadia.de\/fr\/gewuerz-zatar-zaatar-oder-zaatar\/\">za&rsquo;atar<\/a> est d&rsquo;ailleurs un m\u00e9lange d&rsquo;\u00e9pices tr\u00e8s appr\u00e9ci\u00e9 au Levant, compos\u00e9 de thym, de s\u00e9same grill\u00e9, de sumac et d&rsquo;une pinc\u00e9e de sel.&nbsp;<\/p>\n\n\n\n<p>Le labneh peut \u00e9galement \u00eatre utilis\u00e9 comme p\u00e2te \u00e0 tartiner ou m\u00eame comme ingr\u00e9dient pour des plats sal\u00e9s ou sucr\u00e9s. Comme pour les autres yaourts, on trouve dans le Labneh beaucoup de bons probiotiques, qui sont importants pour une bonne digestion et favorisent la sant\u00e9 intestinale.<\/p>\n\n\n\n<p>Si tu fais ton propre labneh et que le yaourt perd du liquide dans le passe-lait, tu dois le r\u00e9cup\u00e9rer. Le liquide est du <strong>petit-lait<\/strong>.&nbsp;<\/p>\n\n\n\n<p>Le petit-lait est un sous-produit de la fabrication de toutes les vari\u00e9t\u00e9s de fromage et de fromage frais. Ce liquide l\u00e9g\u00e8rement jaun\u00e2tre est riche en prot\u00e9ines, vitamines et min\u00e9raux. Tu peux parfaitement utiliser le petit-lait recueilli pour am\u00e9liorer par exemple les smoothies. Note toutefois que le petit-lait contient du lactose, au cas o\u00f9 tu serais intol\u00e9rant. Cela vaut \u00e9galement pour la labneh en g\u00e9n\u00e9ral.<\/p>\n\n\n\n<p>Le labneh est vraiment incroyablement d\u00e9licieux et polyvalent : essayez-le et faites votre propre fromage frais \u00e0 base de yaourt.
