Tout le monde le conna\u00eet et tout le monde l&rsquo;aime. Bien s\u00fbr, chaque famille a sa propre recette et il y a parfois des diff\u00e9rences notables d&rsquo;un pays \u00e0 l&rsquo;autre. Cette version s&rsquo;appelle <strong>Knefeh Na&rsquo;ahme<\/strong> et est la variante <strong>libanaise<\/strong> de ce dessert tr\u00e8s appr\u00e9ci\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-qu-est-ce-que-knefeh\">Qu&rsquo;est-ce que Knefeh?<\/h2>\n\n\n\n<p><strong>Le knefeh, knefe, knafeh, kunafa<\/strong> ou encore <strong>kunefe<\/strong> est une p\u00e2tisserie qui, dans la plupart des cas, se compose de deux couches. La couche sup\u00e9rieure est un couvercle ou, mieux encore, une cro\u00fbte <strong>croustillante<\/strong>. En dessous se trouve la deuxi\u00e8me couche de <strong>fromage<\/strong> fondant. Et parfois aussi d&rsquo;une <strong>cr\u00e8me de pouding<\/strong> (<a href=\"https:\/\/bistrobadia.de\/fr\/ashta-pudding-au-lait-aux-fruits-de-la-passion\/\">ashta<\/a>). Pour servir, on verse ensuite \u00e0 volont\u00e9 du <strong>sirop de sucre<\/strong> affin\u00e9 avec de l&rsquo;eau de fleur d&rsquo;oranger et de rose.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-le-couvercle-la-croute-croustillante\">Le couvercle \u2013 la cro\u00fbte croustillante<\/h3>\n\n\n\n<p>Dans la plupart des cas, le couvercle du knefeh est en <strong>kadaifi<\/strong> (ou en <em>kataifi<\/em>). Il s&rsquo;agit d&rsquo;une p\u00e2te tr\u00e8s fine qui est transform\u00e9e en p\u00e2tes super fines. Le kadaifi est \u00e9galement surnomm\u00e9 \u00ab\u00a0<strong>cheveux d&rsquo;ange<\/strong>\u00ab\u00a0, pr\u00e9cis\u00e9ment parce que ses fils sont si fins et d\u00e9licats.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-le-fromage\">Le fromage<\/h3>\n\n\n\n<p>Le fromage utilis\u00e9 est g\u00e9n\u00e9ralement dessal\u00e9 dans la mesure du possible. Il vaut donc mieux \u00e9viter d&rsquo;utiliser un gouda. Traditionnellement, on utilise un fromage blanc typique du pays. Mais ne t&rsquo;inqui\u00e8te pas, tu n&rsquo;as pas besoin de prendre l&rsquo;avion pour pr\u00e9parer du knafeh.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/090878e5-1b8c-4726-b976-91bddb0f7c33.jpeg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-variantes-du-dessert\">Variantes du dessert<\/h2>\n\n\n\n<p>Le couvercle varie d&rsquo;ailleurs selon le pays et la recette. Il peut \u00eatre tendre et fin, grossier ou un m\u00e9lange de fin et de grossier.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>khishneh ou knishna<\/strong>: c&rsquo;est la variante grossi\u00e8re avec les fils du kadaifi qui ressemblent \u00e0 des nouilles.<\/li>\n\n\n\n<li><strong>na&rsquo;ama ou na&rsquo;ahme<\/strong>: c&rsquo;est la variante fine, pr\u00e9par\u00e9e avec de la semoule.<\/li>\n\n\n\n<li><strong>mhayara<\/strong>: est un m\u00e9lange des deux autres variantes.<\/li>\n<\/ul>\n\n\n\n<p>Au Liban, on utilise volontiers un couvercle en <strong>semoule<\/strong>. C&rsquo;est le cas de la variante que j&rsquo;aimerais te pr\u00e9senter ici.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-d-ou-vient-knefeh\">D&rsquo;o\u00f9 vient Knefeh?<\/h2>\n\n\n\n<p>Les sp\u00e9culations vont bon train sur l&rsquo;origine de ce dessert. Il existe diff\u00e9rentes histoires &#8211; la recette originale proviendrait de la ville de <em>Naplouse<\/em> en <strong>Palestine<\/strong>. De l\u00e0, ce dessert se serait r\u00e9pandu dans d&rsquo;autres pays et adapt\u00e9 \u00e0 leurs r\u00e9gions. Certains r\u00e9cits affirment que ce dessert a ses racines en <strong>\u00c9gypte<\/strong> ou en <strong>Syrie<\/strong>. Je ne peux donc <strong>pas<\/strong> r\u00e9pondre \u00e0 la question de savoir d&rsquo;o\u00f9 vient exactement Knefeh. Ce que je peux te dire, c&rsquo;est que ce dessert rassemble les gens et renforce le sentiment d&rsquo;appartenance et de communaut\u00e9. Car on le mange rarement seul. C&rsquo;est pourquoi le go\u00fbt est directement doubl\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-petit-dejeuner-sucre\">Petit d\u00e9jeuner sucr\u00e9<\/h2>\n\n\n\n<p>Knefeh <em>Na&rsquo;ahme<\/em> signifie \u00ab\u00a0<em>Knefeh tendre<\/em>\u00a0\u00bb ou \u00ab\u00a0<em>Knefeh doux<\/em>\u00ab\u00a0. On a donn\u00e9 ce surnom au dessert parce que le couvercle est constitu\u00e9 d&rsquo;une p\u00e2te de semoule. Cette p\u00e2te de semoule est pr\u00e9cuite et moulue une seconde fois apr\u00e8s la cuisson pour obtenir une poudre. Ce n&rsquo;est qu&rsquo;ensuite qu&rsquo;il est transform\u00e9 en couvercle avec du beurre ou du ghee. Ok, tu vois, tu n&rsquo;as donc pas forc\u00e9ment besoin de l&rsquo;ingr\u00e9dient sp\u00e9cial kadaifi. Mais tu n&rsquo;es pas non plus oblig\u00e9 de ma\u00eetriser la proc\u00e9dure de la p\u00e2te de semoule. Gr\u00e2ce \u00e0 ma s\u0153ur, je connais un super raccourci<\/p>\n\n\n\n<p>Avant que je ne te donne le raccourci, il faut absolument que tu saches que les Libanais sont totalement fous du knefeh au petit-d\u00e9jeuner. Mais pas n&rsquo;importe comment, on s&rsquo;en fait vraiment un sandwich! Pour le pain, on prend un d\u00e9licieux <strong>kaak<\/strong>, on le bourre de knefeh (ou knafeh) et on y verse encore une bonne dose de sirop de sucre.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/801ede62.rocketcdn.me\/wp-content\/uploads\/2020\/08\/Knefeh-mit-Kaak-1024x683.jpg\" alt=\"Knefeh avec Kaak\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/683;\" \/><\/figure>\n\n\n\n<p>Le knefeh au petit-d\u00e9jeuner: il suffit de remplir <strong>le pain libanais au s\u00e9same<\/strong> de knefeh et d&rsquo;y verser encore un peu de sirop de sucre.<\/p>\n\n\n\n<p>Le pain de rue libanais <strong>kaak<\/strong>, que tu peux porter comme un sac, est \u00e9galement d\u00e9licieux avec le <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\">labneh<\/a> ou la <a href=\"https:\/\/bistrobadia.de\/fr\/oliventapenade-2\/\">tapenade d&rsquo;olives<\/a>. On ne trouve pas de kadaifi partout, ni de fromage de toute fa\u00e7on. Mais j&rsquo;aimerais vraiment que tout le monde soit capable de faire du knefeh chez soi. Je vais donc te donner les ingr\u00e9dients principaux que tu peux trouver ici dans n&rsquo;importe quel supermarch\u00e9 ou que tu as peut-\u00eatre m\u00eame chez toi.<\/p>\n\n\n\n<p><strong>Ingr\u00e9dients pour ma recette de famille:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Biscottes<\/li>\n\n\n\n<li>Beurre<\/li>\n\n\n\n<li>Mozzarella<\/li>\n\n\n\n<li>Lait<\/li>\n\n\n\n<li>Semoule de bl\u00e9 tendre<\/li>\n\n\n\n<li>Sucre<\/li>\n\n\n\n<li>Eau de rose<\/li>\n\n\n\n<li>Orangenbl\u00fctenwasser<\/li>\n\n\n\n<li>Zitronensaft<\/li>\n\n\n\n<li>pistaches hach\u00e9es<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-la-preparation-le-secret-de-ma-soeur\"><strong>La pr\u00e9paration \u2013 Le secret de ma s\u0153ur<\/strong><\/h3>\n\n\n\n<p>Ma s\u0153ur m&rsquo;a parl\u00e9 du knefeh \u00ab\u00a0kisbeh\u00a0\u00bb. <em>Kisbeh<\/em> signifie \u00ab\u00a0<em>tricherie<\/em>\u00a0\u00bb ou \u00ab\u00a0mensonge\u00a0\u00bb. Ne t&rsquo;inqui\u00e8te pas, je ne veux pas que tu mentes. Il s&rsquo;agit ici d&rsquo;imiter des ingr\u00e9dients et d&rsquo;acc\u00e9l\u00e9rer la pr\u00e9paration: un raccourci.<\/p>\n\n\n\n<p>Au lieu du <strong>kadaifi<\/strong> ou de la <strong>p\u00e2te de semoule<\/strong>, nous utilisons maintenant des <strong>biscottes<\/strong> du commerce et au lieu d&rsquo;un fromage du Liban, nous utilisons de la <strong>mozzarella<\/strong>. La variante avec de la mozzarella est d&rsquo;ailleurs m\u00eame d\u00e9j\u00e0 tr\u00e8s r\u00e9pandue chez Knefeh, car le fromage est \u00e9galement doux, fond tr\u00e8s bien et forme de beaux fils.<\/p>\n\n\n\n<p>Et pour que la couche de fromage soit vraiment super cr\u00e9meuse et cheesy, nous ajoutons encore une couche de d\u00e9licieux <strong>pudding \u00e0 la semoule<\/strong>. Le Knefeh sera alors encore plus savoureux, plus moelleux et plus cr\u00e9meux.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/801ede62.rocketcdn.me\/wp-content\/uploads\/2020\/08\/Knefeh-servieren-1024x683.jpg\" alt=\"Servir Knefeh knafeh\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/683;\" \/><\/figure>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pour le sirop de sucre, faire r\u00e9duire le sucre et l&rsquo;eau en un sirop et affiner avec l&rsquo;eau de fleur d&rsquo;oranger et le jus de citron.<\/li>\n\n\n\n<li>Pour le couvercle, broyer les biscottes dans un mixeur et les m\u00e9langer avec le beurre et les eaux de rose et de fleur d&rsquo;oranger.<\/li>\n\n\n\n<li>R\u00e9partir le m\u00e9lange de biscottes dans un moule \u00e0 charni\u00e8re et appuyer l\u00e9g\u00e8rement.<\/li>\n\n\n\n<li>Couper la mozarella en tranches et la placer sur le couvercle.<\/li>\n\n\n\n<li>M\u00e9langer tous les ingr\u00e9dients du pudding, porter \u00e0 \u00e9bullition et laisser \u00e9paissir jusqu&rsquo;\u00e0 obtention d&rsquo;un pudding cr\u00e9meux.<\/li>\n\n\n\n<li>Verser le pudding sur la couche de fromage et faire cuire le knefeh au four jusqu&rsquo;\u00e0 ce qu&rsquo;il soit croustillant.<\/li>\n\n\n\n<li>Arroser le dessert encore chaud de sirop de sucre avant de le servir et d\u00e9corer avec des pistaches.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-combien-de-temps-le-dessert-au-fromage-peut-il-etre-conserve\">Combien de temps le dessert au fromage peut-il \u00eatre conserv\u00e9?<\/h2>\n\n\n\n<p>Tu peux pr\u00e9parer la kunafa <strong>1 \u00e0 2 jours<\/strong> avant de la servir et la conserver couverte au r\u00e9frig\u00e9rateur. Il te suffit ensuite de l&rsquo;enfourner et de le servir encore chaud pour que le fromage fasse de beaux fils et que la cro\u00fbte soit croustillante.<\/p>\n\n\n\n<p>Une autre m\u00e9thode de pr\u00e9paration est la cong\u00e9lation. Il suffit de pr\u00e9parer le knefeh selon la recette et tu peux ensuite le congeler jusqu&rsquo;\u00e0 <strong>6 mois<\/strong>.<\/p>\n\n\n\n<p>Je te souhaite beaucoup de plaisir \u00e0 r\u00e9aliser
