Je mords alors \u00e0 pleines dents dans le <strong>sandwich<\/strong> et go\u00fbte \u00e0 l&rsquo;aubergine, aux \u0153ufs, <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/hummus-2\/\">au houmous<\/a>, au tahini et \u00e0 autre chose encore. Quelque chose que je n&rsquo;ai jamais vu dans cette combinaison avec le houmous et le tahini : une <strong>sauce \u00e0 la mangue<\/strong> d\u00e9licieusement fruit\u00e9e, l\u00e9g\u00e8rement \u00e9pic\u00e9e et vraiment complexe en termes de go\u00fbt. Wow, depuis je suis amoureux !<\/p>\n\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que l&rsquo;amba ?<\/h2>\n\n<p>Tout comme l&rsquo;inventeur du sandwich Sabich, Amba est originaire d&rsquo;<em>Irak<\/em>. Et dans l&rsquo;original, la sauce \u00e0 la mangue est faite \u00e0 partir de mangues <strong>ferment\u00e9es<\/strong>. Les mangues sont donc conserv\u00e9es dans un r\u00e9cipient avec beaucoup de sel pendant quelques jours avant d&rsquo;\u00eatre trait\u00e9es. Dans ma recette, j&rsquo;abr\u00e8ge un peu et je ne fais pas de fermentation. Je sais que ce n&rsquo;est pas tout \u00e0 fait original, mais c&rsquo;est quand m\u00eame tr\u00e8s bon !<\/p>\n\n<p>Vous voulez en savoir plus sur le <strong>Levante<\/strong>? En plus des <strong>graines de moutarde<\/strong>, je fais \u00e9galement griller bri\u00e8vement <strong>des graines de fenugrec<\/strong> dans une po\u00eale. Je n&rsquo;\u00e9crase plus les graines, je laisse mon <strong>mixeur s<\/strong>&lsquo;occuper de tout. On y ajoute \u00e9galement <strong>du curcuma<\/strong> et une bonne dose de <a href=\"https:\/\/bistrobadia.de\/fr\/harissa-%c3%a0-leau-de-rose\/\">harissa<\/a> pour le piquant.<\/p>\n\n<p><strong>Pour la sauce amba \u00e0 la mangue, vous avez besoin des ingr\u00e9dients suivants<\/strong> (vous trouverez les quantit\u00e9s exactes plus bas dans la fiche recette) :<\/p>\n\n<ul class=\"wp-block-list\">\n<li>mangues m\u00fbres (mais pas trop molles)<\/li>\n\n\n\n<li>Citron ou jus de citron<\/li>\n\n\n\n<li>Huile d&rsquo;olive<\/li>\n\n\n\n<li>Gousses d&rsquo;ail<\/li>\n\n\n\n<li>Graines de fenugrec<\/li>\n\n\n\n<li>Graines de moutarde<\/li>\n\n\n\n<li>Curcuma (moulu)<\/li>\n\n\n\n<li>Cumin (moulu)<\/li>\n\n\n\n<li>Harissa<\/li>\n\n\n\n<li>Vinaigre de vin rouge<\/li>\n\n\n\n<li>Sel<\/li>\n<\/ul>\n\n<p>Veillez \u00e0 acheter des ingr\u00e9dients de tr\u00e8s bonne qualit\u00e9, en particulier les \u00e9pices. En effet, ce n&rsquo;est qu&rsquo;avec des mangues fruit\u00e9es et des \u00e9pices aromatiques que la sauce devient un d\u00e9lice culinaire.<\/p>\n\n<h2 class=\"wp-block-heading\">Faire sa propre sauce \u00e0 la mangue &#8211; la pr\u00e9paration<\/h2>\n\n<p>Traditionnellement, l&rsquo;amba est pr\u00e9par\u00e9 avec des mangues ferment\u00e9es. Mais je suis trop impatient pour cela. Il est certainement possible de faire r\u00e9duire la sauce, mais je n&rsquo;ai pas encore essay\u00e9.<\/p>\n\n<p>Je pr\u00e9f\u00e8re faire de l&rsquo;amba frais, et dans ce cas, le pot ne dure pas longtemps.
