Sans la pur\u00e9e de s\u00e9same, le houmous ne serait qu&rsquo;une pur\u00e9e de pois chiches avec de l&rsquo;ail et du citron. Ce n&rsquo;est que gr\u00e2ce \u00e0 l&rsquo;onctuosit\u00e9 du tahini que les dips &amp; cr\u00e8mes populaires du Levant deviennent ce qu&rsquo;ils sont : De v\u00e9ritables d\u00e9lices !<\/p>\n\n\n\n<p>Avant, j&rsquo;achetais toujours du tahini en masse dans les supermarch\u00e9s orientaux. Tu connais certainement cela aussi : souvent, le tahini que tu ach\u00e8tes est d\u00e9j\u00e0 un peu vieux et a fait de longs voyages. Il faut donc beaucoup de temps pour qu&rsquo;il arrive dans les rayons du magasin. De plus, il reste encore un certain temps dans le magasin. De ce fait, l&rsquo;huile de s\u00e9same se s\u00e9pare de la pur\u00e9e de s\u00e9same. Le r\u00e9sultat est certes une belle double couche, mais il faut la m\u00e9langer vigoureusement avant de pouvoir l&rsquo;utiliser comme ingr\u00e9dient. De plus, la qualit\u00e9 est souvent variable. Parfois, on obtient un tahini vraiment bon et parfois, malheureusement, un peu trop amer.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-100-sesame\">100% s\u00e9same<\/h5>\n\n\n\n<p>Entre-temps, je pr\u00e9f\u00e8re acheter des tonnes de s\u00e9same d\u00e9cortiqu\u00e9 et faire mon propre tahini. C&rsquo;est tellement facile que je me suis demand\u00e9 pourquoi il m&rsquo;avait fallu tant de temps pour faire monter mon A**** et enfin l&rsquo;essayer. Car tout ce dont tu as besoin, c&rsquo;est du s\u00e9same. C&rsquo;est tout ce qu&rsquo;il y a \u00e0 mettre dedans !<\/p>\n\n\n\n<p>Bien s\u00fbr, tu as aussi besoin d&rsquo;un mixeur qui a un peu de puissance et qui ne fait pas de collapsus au bout de 5 minutes et ne rend pas l&rsquo;\u00e2me \u00e0 cause d&rsquo;un souffle court. Mais comme ingr\u00e9dients, tu n&rsquo;as besoin de rien d&rsquo;autre que de s\u00e9same.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-mixer-jusqu-a-ce-que-le-medecin-vienne\">Mixer jusqu&rsquo;\u00e0 ce que le m\u00e9decin vienne<\/h5>\n\n\n\n<p>La premi\u00e8re fois que j&rsquo;ai fait du tahini moi-m\u00eame, j&rsquo;\u00e9tais encore un peu sceptique. Comment diable une p\u00e2te aussi velout\u00e9e et huileuse peut-elle \u00eatre obtenue \u00e0 partir de 100% de s\u00e9same ? Et mon mixeur parvient-il \u00e0 broyer ces petits grains ? Mes doutes s&rsquo;amenuisaient au fur et \u00e0 mesure que les petites graines de s\u00e9same tournaient dans le mixeur. Au d\u00e9but, il ne se passait rien et elles tournaient en rond comme dans un man\u00e8ge, mais apr\u00e8s quelques minutes, quelque chose se passait.<\/p>\n\n\n\n<p>Au d\u00e9but, la consistance \u00e9tait floconneuse et on voyait directement les graines se transformer en grumeaux. Quelques instants plus tard, le mixeur pouvait d\u00e9j\u00e0 contenir plus de s\u00e9same. Puis tout est all\u00e9 tr\u00e8s vite. Les graines individuelles se sont transform\u00e9es en masse, puis en boule, puis en cr\u00e8me, puis en liquide. Passionnant !!! Quand j&rsquo;ai mis ma main sur le mixeur, j&rsquo;ai remarqu\u00e9 que la masse \u00e9tait vraiment chaude. C&rsquo;\u00e9tait d\u00fb au frottement. Et c&rsquo;est pr\u00e9cis\u00e9ment pour cette raison que l&rsquo;huile est sortie du s\u00e9same jusqu&rsquo;\u00e0 ce que tout soit m\u00e9lang\u00e9 en une p\u00e2te. Le r\u00e9sultat : le meilleur tahini !<\/p>\n\n\n\n<p>Apr\u00e8s le mixage, je mets le tahini dans un bocal st\u00e9rilis\u00e9 et j&rsquo;en ai toujours pour les prochaines portions de houmous. Et quand il est vide, le mixeur doit \u00e0 nouveau intervenir \ud83d\ude09<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-avant-de-mixer-il-faut-griller\">Avant de mixer, il faut griller<\/h5>\n\n\n\n<p>Ce qui est bien avec le tahini fait maison, c&rsquo;est qu&rsquo;il devient ce que tu veux qu&rsquo;il soit. Avant de mettre le s\u00e9same dans le mixeur, il faut d&rsquo;abord le faire griller d\u00e9licatement dans une po\u00eale. Il est important de s&rsquo;y tenir et de remuer constamment le s\u00e9same pour qu&rsquo;il ne br\u00fble pas. J&rsquo;adore l&rsquo;odeur d\u00e9licieuse du s\u00e9same grill\u00e9 qui se r\u00e9pand dans la cuisine. Tu peux d\u00e9terminer toi-m\u00eame le degr\u00e9 de torr\u00e9faction et donc l&rsquo;intensit\u00e9 du go\u00fbt de ton tahini. Je fais griller le s\u00e9same pendant 10 minutes maximum \u00e0 feu moyen. Le s\u00e9same reste alors plut\u00f4t clair, mais il re\u00e7oit suffisamment de chaleur pour renforcer son go\u00fbt.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-le-premier-mutabbal-avec-son-propre-tahini\">Le premier mutabbal avec son propre tahini<\/h5>\n\n\n\n<p>Le mutabbal fait l&rsquo;objet de nombreuses l\u00e9gendes. Certains disent que le mutabbal est une cr\u00e8me d&rsquo;aubergine et de tahini. C&rsquo;est exact. D&rsquo;autres disent que le muttabal est une cr\u00e8me de pois chiches et de tahini. C&rsquo;est \u00e9galement correct. Je vais faire court. Le mutabbal est une fa\u00e7on de faire une cr\u00e8me. <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\">Le houmous<\/a>, le <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/baba-ghanoush-cr\u00e8me-d'aubergines\/\" target=\"_blank\">baba ghanoush<\/a>, etc. font partie du type de mutabbal. Une cr\u00e8me compos\u00e9e d&rsquo;ail, de citron et de beaucoup de tahini. Mon premier mutabbal avec le tahini fait maison \u00e9tait du houmous. Et je peux te dire que c&rsquo;\u00e9tait le meilleur houmous que j&rsquo;ai jamais fait moi-m\u00eame.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-pourquoi-devrais-tu-faire-ton-propre-tahini\">Pourquoi devrais-tu faire ton propre tahini ?<\/h5>\n\n\n\n<p>Je trouve que le tahini ne se trouve malheureusement pas forc\u00e9ment dans tous les supermarch\u00e9s. Et quand c&rsquo;est le cas, c&rsquo;est souvent tr\u00e8s cher. En plus, la qualit\u00e9 varie souvent. Si tu fais ton propre tahini, tu es le ma\u00eetre de la qualit\u00e9 ! Offre-toi du s\u00e9same bio d\u00e9cortiqu\u00e9. D\u00e9termine l&rsquo;intensit\u00e9 du go\u00fbt en torr\u00e9fiant toi-m\u00eame le s\u00e9same. Et pour finir, un point tr\u00e8s important : tu sais exactement qu&rsquo;il n&rsquo;y a que du s\u00e9same \u00e0 100%.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-voici-une-petite-faq\">Voici une petite FAQ<\/h5>\n\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1583240401012\"><strong class=\"schema-faq-question\">Ai-je besoin de s\u00e9same d\u00e9cortiqu\u00e9 ou non d\u00e9cortiqu\u00e9 pour le tahini ?<\/strong> <p class=\"schema-faq-answer\">Tout d\u00e9pend de ce qu&rsquo;il en est. C&rsquo;est dans la coque que se trouvent la plupart des nutriments. Le s\u00e9same non d\u00e9cortiqu\u00e9 contient donc g\u00e9n\u00e9ralement le plus de nutriments, le s\u00e9same d\u00e9cortiqu\u00e9 en ayant moins. Le tahini de s\u00e9same non d\u00e9cortiqu\u00e9 est un peu plus amer, plus fonc\u00e9 et moins fin. Le tahini au s\u00e9same d\u00e9cortiqu\u00e9 est moins amer et plus velout\u00e9. <\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1583240828777\"><strong class=\"schema-faq-question\">Ai-je besoin d&rsquo;huile pour faire du tahini ?<\/strong> <p class=\"schema-faq-answer\">Non ! Lors du mixage, le s\u00e9same n&rsquo;est pas seulement broy\u00e9, mais aussi chauff\u00e9 par le frottement. C&rsquo;est ainsi que l&rsquo;huile propre au s\u00e9same s&rsquo;\u00e9chappe et que l&rsquo;on obtient la fameuse pur\u00e9e de s\u00e9same. <\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1583242777035\"><strong class=\"schema-faq-question\">Combien de temps le tahini fait maison peut-il \u00eatre conserv\u00e9 ?<\/strong> <p class=\"schema-faq-answer\">Le tahini se conserve plusieurs semaines dans un bocal bien st\u00e9rilis\u00e9. Conserve le tahini dans un endroit frais, sec et sombre. N&rsquo;oublie cependant pas que le tahini finira par rancir et ne sera plus aussi d\u00e9licieux si tu ne le consommes pas. <\/p> <\/div> <\/div>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity
