J&rsquo;ai une relation tr\u00e8s personnelle avec les <strong>boulettes de falafel<\/strong> croustillantes et j&rsquo;ai grandi avec ce d\u00e9lice croustillant \u00e0 base de pois chiches et d&rsquo;herbes fra\u00eeches. Je n&rsquo;ai donc jamais eu besoin de m\u00e9langes de falafels pr\u00eats \u00e0 l&#8217;emploi et j&rsquo;ai toujours pu d\u00e9guster des wraps de falafels frais faits maison ou m\u00eame un sac de falafels. Pour que vous aussi, vous n&rsquo;ayez plus que des falafels frais \u00e0 la maison, je vous propose la recette originale de ma famille.     <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-sont-les-falafels\">Que sont les falafels ?<\/h2>\n\n\n\n<p>Les falafels (parfois appel\u00e9s falafels ou falafels) sont de petites boules croustillantes compos\u00e9es de <strong>pois chiches<\/strong>, d <strong>&lsquo;herbes<\/strong> fra\u00eeches et d <strong>&lsquo;\u00e9pices<\/strong>. Cette street food orientale du Levant est d\u00e9sormais tr\u00e8s populaire dans le monde entier, notamment dans la cuisine v\u00e9g\u00e9tarienne et v\u00e9g\u00e9talienne.   <\/p>\n\n\n\n<p>Les ingr\u00e9dients des falafels sont hach\u00e9s finement et ensuite frits dans de l&rsquo;huile chaude. Elle ne n\u00e9cessite pas beaucoup d&rsquo;ingr\u00e9dients et est tr\u00e8s facile \u00e0 pr\u00e9parer. Bien que cela soit \u00e9vident pour certains aujourd&rsquo;hui, on me demandait souvent dans le pass\u00e9 :<strong>\u00ab\u00a0De quoi sont faits les falafels<\/strong>?\u00a0\u00bb Les ingr\u00e9dients des falafels sont   <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pois chiches<\/strong>: c&rsquo;est l&rsquo;ingr\u00e9dient principal des falafels arabes.<\/li>\n\n\n\n<li><strong>Ail et oignon<\/strong>: l&rsquo;ail et l&rsquo;oignon donnent du go\u00fbt aux falafels et de l&rsquo;humidit\u00e9 \u00e0 la p\u00e2te \u00e0 falafels, ce qui les rend bien juteux.<\/li>\n\n\n\n<li><strong>Les \u00e9pices<\/strong>: Les \u00e9pices ajout\u00e9es sont <strong>le cumin<\/strong> et <strong>les graines de coriandre<\/strong>, qui donnent aux falafels une note particuli\u00e8rement \u00e9pic\u00e9e. Un peu de <strong>sel<\/strong> est \u00e9galement n\u00e9cessaire. <\/li>\n\n\n\n<li><strong>Herbes fra\u00eeches<\/strong>: le persil plat et la coriandre fra\u00eeche donnent non seulement beaucoup de go\u00fbt aux boulettes de falafel, mais apportent \u00e9galement une couleur verte fra\u00eeche \u00e0 l&rsquo;int\u00e9rieur.<\/li>\n\n\n\n<li><strong>Bicarbonate de soude<\/strong>: l&rsquo;agent levant est en fait facultatif, mais il rend les falafels un peu plus moelleux. J&rsquo;ai tendance \u00e0 en mettre moins que plus.   <\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-quels-pois-chiches-pour-les-falafels\"><strong>Quels pois chiches pour les falafels ?<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/3e195f5e-e6fb-47e4-b3e8-851800593651.jpeg\" alt=\"Les pois chiches s\u00e9ch\u00e9s doivent \u00eatre mis \u00e0 tremper dans l'eau pendant 12 heures avant d'\u00eatre pr\u00e9par\u00e9s pour les fallafels.\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n\n\n<p>Pour aller droit au but : N&rsquo;h\u00e9sitez pas \u00e0 utiliser <strong>des pois chiches s\u00e9ch\u00e9s<\/strong>!<\/p>\n\n\n\n<p>Si vous utilisez des pois chiches cuits en bo\u00eete, vous devez ajouter de la farine. La masse des falafels devient alors boueuse, parfois vraiment grumeleuse et se d\u00e9sagr\u00e8ge lors de la friture. Ne faites pas cela !  <\/p>\n\n\n\n<p>Si vous voulez des falafels croustillants et juteux, utilisez <strong>des pois chiches s\u00e9ch\u00e9s<\/strong>.<\/p>\n\n\n\n<p>Vous devez les faire tremper dans de l&rsquo;eau fra\u00eeche pendant au moins <strong>12 heures<\/strong>. Vous n&rsquo;avez pas besoin de les faire cuire. Vous pouvez ensuite les utiliser directement crues avec les autres ingr\u00e9dients.    <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-faire-des-falafels-soi-meme-comment-proceder\"><strong>Faire des falafels soi-m\u00eame : comment proc\u00e9der<\/strong><\/h2>\n\n\n\n<p>Faire des falafels soi-m\u00eame est un jeu d&rsquo;enfant ! La pr\u00e9paration des falafels peut \u00eatre divis\u00e9e en deux phases principales : la pr\u00e9paration du m\u00e9lange de pois chiches et le fa\u00e7onnage et la friture des boulettes de falafels. <\/p>\n\n\n\n<p>La pr\u00e9paration du m\u00e9lange de falafels est en fait tr\u00e8s <strong>rapide et facile<\/strong>. Vous devez laisser <strong>tremper<\/strong> les <strong>pois chiches s\u00e9ch\u00e9s dans de l&rsquo;eau fra\u00eeche pendant au moins 12 heures<\/strong>. Je le fais toujours avant d&rsquo;aller me coucher et je peux ensuite les utiliser directement \u00e0 midi.  <\/p>\n\n\n\n<p>Apr\u00e8s le trempage, vous pouvez passer les pois chiches crus directement dans un hachoir \u00e0 viande (c&rsquo;est ainsi que faisaient mes parents autrefois) ou les broyer dans un mixeur, avec l&rsquo;oignon, l&rsquo;ail et le persil plat.<\/p>\n\n\n\n<p>D&rsquo;apr\u00e8s mon exp\u00e9rience, <strong>un mixeur plongeant puissant<\/strong> est en fait g\u00e9n\u00e9ralement plus rapide qu&rsquo;un grand mixeur. Vous n&rsquo;avez donc pas n\u00e9cessairement besoin d&rsquo;un gros robot pour faire des falafels. <\/p>\n\n\n\n<p>Je laisse ensuite reposer la p\u00e2te \u00e0 falafel pendant <strong>environ une heure<\/strong> au r\u00e9frig\u00e9rateur afin d&rsquo;am\u00e9liorer la liaison de l&rsquo;amidon et la mall\u00e9abilit\u00e9.
