On trouve toutes sortes de houmous dans les supermarch\u00e9s, mais je n&rsquo;ai encore jamais trouv\u00e9 cette fantastique cr\u00e8me d&rsquo;aubergine fum\u00e9e. Du moins pas une que l&rsquo;on puisse r\u00e9ellement d\u00e9guster. Pourtant, ni l&rsquo;un ni l&rsquo;autre ne doit manquer \u00e0 un bon mezze ! Le baba ghanoush est v\u00e9g\u00e9talien et une bombe gustative absolue !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-baba-ghanoush-directement-du-feu\">Baba Ghanoush : directement du feu<\/h3>\n\n\n\n<p>Chez nous, il n&rsquo;y a pas de BBQ sans baba ghanoush. Justement parce qu&rsquo;on peut mettre l&rsquo;aubergine en premier sur le barbecue. Le mieux est de la placer directement au-dessus de la flamme ou dans les charbons ardents. L&rsquo;aubergine obtient ainsi son d\u00e9licieux ar\u00f4me fum\u00e9 qui conf\u00e8re \u00e0 la cr\u00e8me son go\u00fbt caract\u00e9ristique. Si tu n&rsquo;as pas la possibilit\u00e9 de faire griller l&rsquo;aubergine, tu peux aussi la mettre au four \u00e0 feu vif et ajouter ensuite du sel fum\u00e9 pour relever le go\u00fbt. Cependant, le temps de cuisson est beaucoup plus long au four. Sur le gril, c&rsquo;est vraiment super rapide.<\/p>\n\n\n\n<p>Si tu as une cuisini\u00e8re \u00e0 gaz chez toi, je t&rsquo;envie. Ma m\u00e8re a une petite grille qu&rsquo;elle pose directement sur sa cuisini\u00e8re pour y faire griller les aubergines. C&rsquo;est super pratique, car on ne doit pas toujours allumer le barbecue. J&rsquo;ai achet\u00e9 un r\u00e9chaud de camping pour cela &#8211; \u00e7a marche aussi tr\u00e8s bien !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-parfait-pour-tremper\">Parfait pour tremper !<\/h3>\n\n\n\n<p>Le baba ghanoush ne doit pas \u00eatre r\u00e9duit en pur\u00e9e au mixeur, car il perdrait alors sa belle texture. La chair de l&rsquo;aubergine est si tendre apr\u00e8s la cuisson que tu peux l&rsquo;\u00e9craser \u00e0 la fourchette avec le tahini, l&rsquo;ail et le jus de citron, puis la m\u00e9langer. La pulpe se d\u00e9sagr\u00e8ge alors \u00e0 un moment donn\u00e9 et on obtient une cr\u00e8me bien textur\u00e9e.<\/p>\n\n\n\n<p>Au Levant, la recette du baba ghanoush varie parfois fortement d&rsquo;un pays \u00e0 l&rsquo;autre. En Syrie, par exemple, on y ajoute une bonne dose de yaourt. Si tu veux faire un vrai BBQ levantin, tu ne devrais pas manquer le baba ghanoush. Pour accompagner le BBQ, il est pr\u00e9f\u00e9rable de servir <a href=\"https:\/\/bistrobadia.de\/fr\/salade-color\u00e9e-fattoush\/\" target=\"_blank\" rel=\"noreferrer noopener\">du fattoush<\/a>
