La marjolaine aussi parfois. Ah oui, l&rsquo;origan aussi. M\u00eame si ces merveilleuses herbes ont leur propre nom, on dit parfois \u00ab\u00a0Za&rsquo;atar\u00a0\u00bb pour les trois seules. C&rsquo;est fou, non ? \u00ab\u00a0Va donc acheter du Za&rsquo;atar !\u00a0\u00bb &#8211; Euh&#8230;. d&rsquo;accord. Le mieux est d&rsquo;apporter le <strong>m\u00e9lange d&rsquo;\u00e9pices<\/strong> <strong>Za&rsquo;atar<\/strong> &#8211; tous les habitants du Levant en raffolent de toute fa\u00e7on. C&rsquo;est avec plaisir que je t&rsquo;expliquerai plus en d\u00e9tail ce qu&rsquo;est le za&rsquo;atar et comment tu peux fabriquer toi-m\u00eame ce grand m\u00e9lange d&rsquo;\u00e9pices du Levant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Qu&rsquo;est-ce que Za&rsquo;atar ?<\/h2>\n\n\n\n<p>Le za&rsquo;atar est un m\u00e9lange d&rsquo;\u00e9pices originaire du Levant, c&rsquo;est-\u00e0-dire du Proche-Orient. Au Liban, en Syrie, en Isra\u00ebl et en Palestine, ce m\u00e9lange d&rsquo;\u00e9pices est un \u00e9l\u00e9ment tr\u00e8s important de la cuisine. Pour moi, le parfum de ce m\u00e9lange d&rsquo;\u00e9pices est LE parfum de la lavande !<\/p>\n\n\n\n<p>Za&rsquo;atar se compose de<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Thym<\/li>\n\n\n\n<li>Sumac<\/li>\n\n\n\n<li>Graines de s\u00e9same<\/li>\n\n\n\n<li>Sel<\/li>\n<\/ul>\n\n\n\n<p>Tu as peut-\u00eatre quelques points d&rsquo;interrogation dans la t\u00eate apr\u00e8s avoir lu le mot \u00ab\u00a0<strong>sumac<\/strong>\u00ab\u00a0. Nous y reviendrons dans un instant. Tout d&rsquo;abord, je dois parler du thym.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Thym sauvage<\/strong> ou hysope ?<\/h2>\n\n\n\n<p>Comme tu le sais probablement d\u00e9j\u00e0, il existe diff\u00e9rentes sortes de thym. Pour le m\u00e9lange d&rsquo;\u00e9pices Za&rsquo;atar, on utilise au Levant le <strong>thym sauvage<\/strong> (Origanum syriacum). Contrairement au thym ordinaire, il est beaucoup plus r\u00e9sistant \u00e0 la chaleur et a un go\u00fbt beaucoup plus intense, qui peut m\u00eame \u00eatre l\u00e9g\u00e8rement poivr\u00e9. Ma m\u00e8re aime aussi faire mac\u00e9rer le thym sauvage dans de l&rsquo;huile pour l&rsquo;utiliser ensuite dans des salades, par exemple.<\/p>\n\n\n\n<p><strong>Le thym sauvage<\/strong> est parfois aussi appel\u00e9 <strong>hysope biblique<\/strong> ou <strong>origan syrien<\/strong>. Dans ce cas, il y a souvent confusion : L&rsquo;hysope vraie (Hyssopus officinalis) est en effet une esp\u00e8ce v\u00e9g\u00e9tale totalement diff\u00e9rente et n&rsquo;a donc rien \u00e0 voir avec le thym que nous connaissons. Si tu entends parler d&rsquo;hysope en association avec le za&rsquo;atar, il s&rsquo;agit alors de thym sauvage. Comme le thym sauvage ne se trouve pas partout, tu peux aussi utiliser le thym r\u00e9gulier du supermarch\u00e9.<\/p>\n\n\n\n<p>Au Levant, les recettes de za&rsquo;atar varient l\u00e9g\u00e8rement en fonction des go\u00fbts et des r\u00e9gions. Il y a des m\u00e9langes qui contiennent du thym, de l&rsquo;origan ET de la marjolaine. Dans certains, il s&rsquo;est m\u00eame gliss\u00e9 du cumin, ce qui est tr\u00e8s atypique &#8211; ce n&rsquo;est vraiment pas n\u00e9cessaire, je trouve. Je pr\u00e9f\u00e8re le m\u00e9lange minimaliste &#8211; s\u00e9same, thym, sel et sumac. Attendez&#8230; du sumac ?<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/bistrobadia.de\/wp-content\/uploads\/2016\/10\/Zumach_web.jpg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" style=\"--smush-placeholder-width: 1024px; --smush-placeholder-aspect-ratio: 1024\/683;\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Sumac<\/h2>\n\n\n\n<p>Le sumac (Rhus coriaria) est une \u00e9pice obtenue \u00e0 partir des fruits rouges du sumac \u00e9pic\u00e9 (vinaigrier). Grossi\u00e8rement moulue, la poudre pourpre est saupoudr\u00e9e sur <a href=\"https:\/\/bistrobadia.de\/fr\/salade-color\u00e9e-fattoush\/\" target=\"_blank\" rel=\"noreferrer noopener\">les salades<\/a> et utilis\u00e9e dans <a href=\"https:\/\/bistrobadia.de\/fr\/burger-crispy-\u00e0-l'halloumi\/\" target=\"_blank\" rel=\"noreferrer noopener\">les dips<\/a> ou pour la pr\u00e9paration de<a href=\"https:\/\/bistrobadia.de\/fr\/brochettes-de-poulet-shish-taouk\/\" target=\"_blank\" rel=\"noreferrer noopener\">marinades<\/a> (pour barbecue<a href=\"https:\/\/bistrobadia.de\/fr\/brochettes-de-poulet-shish-taouk\/\" target=\"_blank\" rel=\"noreferrer noopener\">)<\/a>. Le tout dans un pot d&rsquo;\u00e9pices, le za&rsquo;atar a un go\u00fbt de noisette d\u00e9licieux gr\u00e2ce au s\u00e9same grill\u00e9, le sumac y apporte une belle fra\u00eecheur ; et le thym &#8211; c&rsquo;est la note de t\u00eate et de c\u0153ur de l&rsquo;ensemble.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00c0 quoi sert le za&rsquo;atar ?<\/h2>\n\n\n\n<p>Et pour quoi puis-je utiliser ce za&rsquo;atar ?<br>Essaie le <a href=\"https:\/\/bistrobadia.de\/fr\/zatar-brot-manakish\/\" target=\"_blank\" rel=\"noreferrer noopener\">manakish<\/a>. Ce sont de d\u00e9licieuses galettes de p\u00e2te qui sont enduites d&rsquo;un m\u00e9lange de za&rsquo;atar, d&rsquo;oignons et d&rsquo;huile d&rsquo;olive et qui passent rapidement au four. L&rsquo;odeur qui s&rsquo;\u00e9chappe alors de ton four est envo\u00fbtante !<\/p>\n\n\n\n<p><br>Mais tu peux aussi tout simplement servir ce m\u00e9lange \u00e0 c\u00f4t\u00e9 d&rsquo;une bonne huile d&rsquo;olive et de pain frais. Trempe d&rsquo;abord le pain dans l&rsquo;huile, puis dans le d\u00e9licieux m\u00e9lange d&rsquo;\u00e9pices. L&rsquo;utilisation avec le labneh, le <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">fromage frais<\/a> levantin <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">\u00e0 base de yaourt<\/a>, est particuli\u00e8rement connue et appr\u00e9ci\u00e9e. Il suffit de l&rsquo;arroser d&rsquo;huile d&rsquo;olive et de le saupoudrer de za&rsquo;atar. Il suffit ensuite d&rsquo;y faire passer une <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">galette<\/a> ou un morceau de baguette pour obtenir l&rsquo;une des bouch\u00e9es les plus c\u00e9l\u00e8bres du Levant.<\/p>\n\n\n\n<p>Za&rsquo;atar va aussi tr\u00e8s bien avec :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Fromage<\/li>\n\n\n\n<li><a href=\"https:\/\/bistrobadia.de\/fr\/\u0153ufs-pour-le-petit-d\u00e9jeuner-\u00e0-l'huile-de-zaatar\/\" target=\"_blank\" rel=\"noreferrer noopener\">des \u0153ufs<\/a> (cuits ou frits &#8211; peu importe)<\/li>\n\n\n\n<li><a href=\"https:\/\/bistrobadia.de\/fr\/salade-de-pois-chiches-avec-vinaigrette-au-zaatar\/\" target=\"_blank\" rel=\"noreferrer noopener\">Salade<\/a><\/li>\n\n\n\n<li>Marinades<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Mieux vaut acheter ou faire soi-m\u00eame ?<\/h2>\n\n\n\n<p>Tu peux d\u00e9sormais acheter du za&rsquo;atar dans des <strong>supermarch\u00e9s<\/strong> bien achaland\u00e9s, au <strong>march\u00e9 oriental<\/strong> ou <strong>en ligne<\/strong>. Si je ne veux pas faire le m\u00e9lange d&rsquo;\u00e9pices moi-m\u00eame, j&rsquo;aime bien acheter des produits en ligne, car la recette est souvent plus authentique que celle du supermarch\u00e9. Lors de l&rsquo;achat, assure-toi que le thym utilis\u00e9 est du thym sauvage et qu&rsquo;il n&rsquo;y a pas d&rsquo;autres ingr\u00e9dients comme du cumin ou autre.<\/p>\n\n\n\n<p>Mais tu peux aussi faire ton propre za&rsquo;atar de mani\u00e8re tr\u00e8s simple, <strong>rapide<\/strong> et <strong>\u00e9conomique<\/strong>. Tu trouveras ma recette ici, plus bas, dans la fiche recette.<\/p>\n\n\n\n<p>Si tu as fait le za&rsquo;atar toi-m\u00eame, tu peux simplement mettre le m\u00e9lange d&rsquo;\u00e9pices dans un bocal propre et sec et bien le fermer. Le tout se conserve alors <strong>pendant six<\/strong> bons <strong>mois<\/strong>. Tu peux bien s\u00fbr encore l&rsquo;utiliser apr\u00e8s cette p\u00e9riode, mais le s\u00e9same risque de ne plus \u00eatre aussi frais. Mais tu auras probablement consomm\u00e9 ton za&rsquo;atar depuis longtemps.
