Et ce&nbsp;<strong>pain<\/strong>&nbsp;aromatique&nbsp;<strong>aux olives<\/strong>&nbsp;ne r\u00e9pond pas seulement \u00e0 ces exigences, il contient aussi toute la gastronomie du Levant. Enfin, pas tout \u00e0 fait, mais&nbsp;<strong>l&rsquo;halloumi<\/strong>, les&nbsp;<strong>olives<\/strong>&nbsp;et&nbsp;<strong>la menthe s\u00e9ch\u00e9e<\/strong>&nbsp;figurent en t\u00eate de la liste des ingr\u00e9dients de la cuisine levantine. Et c&rsquo;est avec ces ingr\u00e9dients que nous pr\u00e9parons un&nbsp;<strong>Hellimli Bitta<\/strong>!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-halloumi-le-fromage-de-chypre\">Halloumi &#8211; le fromage de Chypre<\/h2>\n\n\n\n<p>L&rsquo;halloumi est le fromage qui fait la renomm\u00e9e de Chypre et qui est appr\u00e9ci\u00e9 dans le monde entier. Pour le pain aux olives de Chypre appel\u00e9 Hellimli Bitta, ce fromage est indispensable ! Le&nbsp;<strong>fromage qui couine<\/strong>&nbsp;est produit depuis l&rsquo;Antiquit\u00e9 sur l&rsquo;\u00eele m\u00e9diterran\u00e9enne et constitue, avec les olives et les agrumes, l&rsquo;un des&nbsp;<strong>principaux<\/strong>&nbsp;produits d&rsquo;exportation. L&rsquo;or blanc de l&rsquo;\u00eele peut \u00eatre fabriqu\u00e9 \u00e0 partir de&nbsp;<strong>lait<\/strong>&nbsp;de vache, de ch\u00e8vre ou de brebis.<\/p>\n\n\n\n<p>Le pH est plus \u00e9lev\u00e9 que celui d&rsquo;un fromage en tranches normal et c&rsquo;est la raison pour laquelle le halloumi ne fond&nbsp;<strong>pas<\/strong>. C&rsquo;est pour cette raison qu&rsquo;il est souvent utilis\u00e9 sur le barbecue et qu&rsquo;il est plus connu sous le nom de&nbsp;<strong>fromage \u00e0 griller<\/strong>. Notez toutefois que tous les fromages \u00e0 griller ne sont pas de vrais halloumi ! En outre, le pH est responsable de la consistance ferme du fromage et de son grincement. La fente caract\u00e9ristique au milieu de la meule est obtenue en pliant le fromage avant de le presser.<\/p>\n\n\n\n<p><strong><strong>Les principales caract\u00e9ristiques d&rsquo;un bon halloumi en bref :<\/strong><\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Le halloumi est l&#8217;embl\u00e8me culinaire de Chypre (et au mieux, tu ach\u00e8teras l&rsquo;original).<\/li>\n\n\n\n<li>L&rsquo;halloumi est fabriqu\u00e9 \u00e0 partir de lait de ch\u00e8vre, de brebis et\/ou de vache.<\/li>\n\n\n\n<li>Le halloumi a une texture \u00e9lastique et couine lorsqu&rsquo;on le m\u00e2che.<\/li>\n\n\n\n<li>Gr\u00e2ce au proc\u00e9d\u00e9 de fabrication, le halloumi ne fond pas \u00e0 haute temp\u00e9rature.<\/li>\n\n\n\n<li>Le halloumi pr\u00e9sente une fente au milieu en raison du processus de pliage et de pressage.<\/li>\n\n\n\n<li>Le halloumi a un go\u00fbt \u00e9pic\u00e9 et est tr\u00e8s sal\u00e9.<\/li>\n\n\n\n<li>Le halloumi n&rsquo;est pas v\u00e9g\u00e9tarien, car il est fabriqu\u00e9 (comme le parmesan) avec l&rsquo;ajout de pr\u00e9sure. Il existe toutefois aujourd&rsquo;hui des proc\u00e9d\u00e9s qui ne n\u00e9cessitent pas de pr\u00e9sure animale.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-hellimli-bitta-cuire-un-pain-juteux-aux-olives\">Hellimli Bitta : cuire un pain juteux aux olives<\/h2>\n\n\n\n<p>Maintenant, tu sais en tout cas quelles conditions l&rsquo;halloumi doit remplir pour ton pain aux olives. Outre l&rsquo;halloumi, les olives sont un ingr\u00e9dient important. Je te recommande&nbsp;<strong>les olives Kalamata<\/strong>, car elles ont un go\u00fbt particuli\u00e8rement \u00e9pic\u00e9 et fruit\u00e9. Comme j&rsquo;aime m&rsquo;\u00e9pargner quelques \u00e9tapes de travail, j&rsquo;ach\u00e8te toujours celles qui sont d\u00e9noyaut\u00e9es. Le troisi\u00e8me ingr\u00e9dient important est la menthe s\u00e9ch\u00e9e. Veille \u00e0 ce que la menthe s\u00e9ch\u00e9e soit de bonne qualit\u00e9, afin qu&rsquo;elle soit \u00e9galement bien aromatique.<\/p>\n\n\n\n<p>Passons \u00e0 la cuisson du pain aux olives. La p\u00e2te est assez humide et rappelle un peu la focaccia, car elle colle facilement aux mains. Mais la&nbsp;<strong>technique<\/strong>: allonger, plier et replier, rappelle \u00e9galement la pr\u00e9paration de ce classique italien.<\/p>\n\n\n\n<p>Apr\u00e8s avoir bien pli\u00e9 le pain aux olives et lui avoir laiss\u00e9 le temps de lever, on le saupoudre de&nbsp;<strong>graines de s\u00e9same<\/strong>&nbsp;et on le fait cuire dans le four chaud jusqu&rsquo;\u00e0 ce qu&rsquo;il soit croustillant. C&rsquo;est bien s\u00fbr \u00e0 la sortie du four qu&rsquo;il est le meilleur ! Il suffit de le couper en tranches et de le servir avec un peu d&rsquo;huile d&rsquo;olive, de&nbsp;<a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a>&nbsp;ou&nbsp;<a href=\"https:\/\/bistrobadia.de\/fr\/beurre-zaatar\/\" target=\"_blank\" rel=\"noreferrer noopener\">de beurre de
