J&rsquo;aime vraiment exp\u00e9rimenter avec les classiques de la cuisine orientale et leur donner un nouveau souffle. Cette fois, c&rsquo;\u00e9tait au tour de l&rsquo;incroyablement d\u00e9licieuse cr\u00e8me d&rsquo;aubergines&nbsp;<a href=\"https:\/\/bistrobadia.de\/fr\/baba-ghanoush-cr%C3%A8me-d'aubergines\/\" target=\"_blank\" rel=\"noreferrer noopener\">Baba Ghanoush<\/a>. Mon Dieu, si seulement je l&rsquo;avais fait bien plus t\u00f4t : cette fusion est vraiment incroyablement d\u00e9licieuse et la recette est rapide et facile \u00e0 r\u00e9aliser.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-nouveau-classique-est-ne\">Un nouveau classique est n\u00e9<\/h2>\n\n\n\n<p>Pour moi, ces p\u00e2tes aux aubergines sont d\u00e9j\u00e0 un nouveau classique moderne ! Rarement deux cuisines du monde se sont aussi bien r\u00e9unies que dans cette recette :&nbsp;<a href=\"https:\/\/bistrobadia.de\/fr\/la-cuisine-du-levant\/\" target=\"_blank\" rel=\"noreferrer noopener\">le Levant<\/a>&nbsp;rencontre l&rsquo;Italie ! Et pour moi, cette recette m\u00e9rite aussi son propre nom. Je la baptise :&nbsp;<strong>Basta Ghanoush<\/strong>!<\/p>\n\n\n\n<p>En fait, pour cette recette, tu as simplement besoin de la cr\u00e8me d&rsquo;aubergine classique du Levant. Le baba ghanoush est particuli\u00e8rement appr\u00e9ci\u00e9 pour son go\u00fbt intense avec de d\u00e9licieux ar\u00f4mes de grill\u00e9 et d&rsquo;agrumes. Tu trouveras d&rsquo;ailleurs la recette de ce classique ici :&nbsp;<a href=\"https:\/\/bistrobadia.de\/fr\/baba-ghanoush-cr%C3%A8me-d'aubergines\/\" target=\"_blank\" rel=\"noreferrer noopener\">Vers la recette<\/a>.<\/p>\n\n\n\n<p>Ce qui profite vraiment aux p\u00e2tes d&rsquo;aubergines : pour le baba ghanoush, les aubergines enti\u00e8res sont simplement plac\u00e9es sur le gril &#8211; et de pr\u00e9f\u00e9rence directement au-dessus de la flamme ou sur des charbons chauds. La peau de l&rsquo;aubergine doit alors \u00eatre bien carbonis\u00e9e. La fum\u00e9e p\u00e9n\u00e8tre alors dans la chair et donne \u00e0 l&rsquo;aubergine le go\u00fbt fum\u00e9 caract\u00e9ristique qui fait la particularit\u00e9 de cette cr\u00e8me d&rsquo;aubergine.<\/p>\n\n\n\n<p>Pour les p\u00e2tes aux aubergines, j&rsquo;ai l\u00e9g\u00e8rement modifi\u00e9 la recette du baba ghanoush. Je n&rsquo;ai rien chang\u00e9 aux ingr\u00e9dients. Ceux-ci restent les m\u00eames :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Aubergine<\/li>\n\n\n\n<li>Tahini<\/li>\n\n\n\n<li>Jus de citron<\/li>\n\n\n\n<li>Ail<\/li>\n\n\n\n<li>sel, poivre<\/li>\n<\/ul>\n\n\n\n<p>Mais comme les spaghettis absorbent alors une grande partie du go\u00fbt, j&rsquo;ai augment\u00e9 la quantit\u00e9 de tahini et de citron pour que les p\u00e2tes d&rsquo;aubergine soient plus savoureuses. Tu trouveras la recette compl\u00e8te plus bas dans la fiche recette.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-rapide-et-facile-a-faire\">Rapide et facile \u00e0 faire<\/h2>\n\n\n\n<p>La cuisson la plus rapide est celle de l&rsquo;aubergine au barbecue. C&rsquo;est l\u00e0 que tu obtiendras le plus de saveur. Mais ce n&rsquo;est pas toujours possible. C&rsquo;est pourquoi tu peux aussi faire cuire l&rsquo;aubergine pour les p\u00e2tes d&rsquo;aubergine au four \u00e0 la temp\u00e9rature la plus \u00e9lev\u00e9e possible. Cela prend certes plus de temps, mais le four fait alors tout le travail et tu peux t&rsquo;occuper d&rsquo;autres choses, par exemple de mettre la table et de cuire les p\u00e2tes.<\/p>\n\n\n\n<p>Tu sais que l&rsquo;aubergine est cuite lorsque sa peau s&rsquo;est bien ratatin\u00e9e. L&rsquo;aubergine s&rsquo;affaisse \u00e9galement apr\u00e8s que tu l&rsquo;aies sortie du four. Ensuite, il ne te reste plus qu&rsquo;\u00e0 l&rsquo;\u00e9plucher. Tu peux le faire tr\u00e8s facilement \u00e0 la main. Veille toutefois \u00e0 ce que l&rsquo;aubergine soit d\u00e9j\u00e0 un peu refroidie, sinon tu pourrais vite te br\u00fbler les doigts.<\/p>\n\n\n\n<p>Pour \u00e9plucher l&rsquo;aubergine, il suffit de pincer le haut du tronc dans la peau et de la retirer. Il suffit de r\u00e9p\u00e9ter cette op\u00e9ration jusqu&rsquo;\u00e0 ce que tout soit enlev\u00e9. Ensuite, tu coupes le trognon et tu peux r\u00e9duire la chair en pur\u00e9e avec du tahini, de l&rsquo;ail et du jus de citron pour que les p\u00e2tes d&rsquo;aubergine soient bien cr\u00e9meuses.<\/p>\n\n\n\n<p>Tu peux aussi cuire\/griller les aubergines la veille et les utiliser d\u00e8s que tu as envie de p\u00e2tes aux aubergines. Ma m\u00e8re, par exemple, fait toujours griller quelques aubergines de plus et cong\u00e8le la chair une fois qu&rsquo;elle a refroidi. Ainsi, elle a toujours de la pulpe d&rsquo;aubergine fum\u00e9e \u00e0 disposition.<\/p>\n\n\n\n<p>Une fois que tu as termin\u00e9 la cr\u00e8me, tu peux directement m\u00e9langer les p\u00e2tes chaudes avec elle. J&rsquo;aime y ajouter un peu de persil hach\u00e9, un peu d&rsquo;huile d&rsquo;olive et quelques graines de grenade. Non seulement c&rsquo;est joli, mais cela donne aussi une touche de fra\u00eecheur.<\/p>\n\n\n\n<p>Pour l&rsquo;instant, je te souhaite beaucoup de plaisir en essayant ces p\u00e2tes aux aubergines et
