Quand il fait un peu plus sombre dehors, je sers volontiers le rago\u00fbt avec les gousses vertes. C&rsquo;est pour moi une vraie nourriture de confort. Beaucoup de gens me demandent toujours \u00ab\u00a0Qu&rsquo;est-ce que c&rsquo;est que le gombo ? &#8211; alors je les laisse simplement go\u00fbter. La recette est simple ! Je te montre comment pr\u00e9parer le rago\u00fbt de gombo libanais appel\u00e9 <strong>bamya<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-qu-est-ce-que-le-gombo\">Qu&rsquo;est-ce que le gombo ?<\/h2>\n\n\n\n<p>Je parie que <strong>les gombos<\/strong> seront bient\u00f4t tr\u00e8s populaires chez nous aussi. Les gousses de la plante mauve <strong>gombo<\/strong> ne contiennent presque pas de graisse, mais une grande quantit\u00e9 de fibres alimentaires &#8211; celles-ci sont tr\u00e8s saines et bonnes pour la digestion. Les gousses de l\u00e9gumes ont un go\u00fbt doux \u00e0 tr\u00e8s l\u00e9g\u00e8rement acidul\u00e9 et, selon leur taille, une consistance et une texture tendres \u00e0 l\u00e9g\u00e8rement ligneuses. Je pense que leur go\u00fbt peut \u00eatre compar\u00e9 \u00e0 celui des haricots verts. On peut utiliser la gousse polygonale pour les salades, <a href=\"https:\/\/bistrobadia.de\/fr\/hummus-avec-gombo\/\" target=\"_blank\" rel=\"noreferrer noopener\">les cr\u00e8mes<\/a>, les <a href=\"https:\/\/bistrobadia.de\/fr\/gombos-\u00e0-la-sauce-tomate\/\" target=\"_blank\" rel=\"noreferrer noopener\">rago\u00fbts<\/a> et bien d&rsquo;autres choses encore.<\/p>\n\n\n\n<p>Au Liban, les gombos sont appel\u00e9s bamya ou bamyeh. Et ce rago\u00fbt porte tout simplement le nom de cette gousse fantastique. Au Liban, c&rsquo;est un classique absolu et sa pr\u00e9paration est vraiment simple. Faites revenir le tout, couvrez et laissez mijoter.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparer-les-gombos\">Pr\u00e9parer les gombos<\/h2>\n\n\n\n<p>D&rsquo;accord, mais il faut tout de m\u00eame faire attention \u00e0 l&rsquo;une ou l&rsquo;autre chose lors de la pr\u00e9paration des gousses. Lorsque les gombos <strong>sont cuits<\/strong>, ils produisent une sorte de <strong>mucus<\/strong> &#8211; pas de panique ! Cela peut para\u00eetre moins app\u00e9tissant qu&rsquo;il ne l&rsquo;est en r\u00e9alit\u00e9. Cette propri\u00e9t\u00e9 permet d&rsquo;<strong>\u00e9paissir<\/strong> le rago\u00fbt sans ajouter d&rsquo;amidon. Si on ne le souhaite pas, il existe bien s\u00fbr des solutions.<\/p>\n\n\n\n<p>Avant de faire cuire les gousses, tu peux les blanchir dans <strong>de l&rsquo;eau<\/strong> avec <strong>du vinaigre<\/strong> ou <strong>du jus de citron<\/strong> &#8211; et tu seras d\u00e9barrass\u00e9 des mucosit\u00e9s. Ma m\u00e8re avait une autre astuce pour moi. \u00ab\u00a0Fais-les frire avant, \u00e7a les emp\u00eachera de baver &#8211; comme les escargots\u00a0\u00bb. &#8211; Ok, alors je fais frire les gousses \u00e0 feu vif\u00a0\u00bb.<\/p>\n\n\n\n<p>En plus des gombos, tu as besoin des ingr\u00e9dients suivants pour pr\u00e9parer le rago\u00fbt :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>viande de b\u0153uf maigre<\/li>\n\n\n\n<li>Oignon<\/li>\n\n\n\n<li>Ail<\/li>\n\n\n\n<li>Bouillon de l\u00e9gumes<\/li>\n\n\n\n<li>Tomates pass\u00e9es<\/li>\n\n\n\n<li>bonne huile d&rsquo;olive<\/li>\n\n\n\n<li>\u00c9pices<\/li>\n\n\n\n<li>Sirop de grenade<\/li>\n\n\n\n<li>et volontiers un petit piment<\/li>\n<\/ul>\n\n\n\n<p>Pour ce rago\u00fbt, je choisis d&rsquo;ailleurs la <strong>petite<\/strong> vari\u00e9t\u00e9 de gombo, car elle est <strong>plus tendre<\/strong> que les grandes gousses plus longues. Tu trouveras plus loin les ingr\u00e9dients exacts ainsi que la pr\u00e9paration du plat.<\/p>\n\n\n\n<p>Traditionnellement, le bamya &#8211; comme presque tous les rago\u00fbts &#8211; est servi avec <a href=\"https:\/\/bistrobadia.de\/fr\/riz-au-beurre\/\" target=\"_blank\" rel=\"noreferrer noopener\">du riz<\/a> ou <a href=\"https:\/\/bistrobadia.de\/fr\/boulgour-au-beurre\/\" target=\"_blank\" rel=\"noreferrer noopener\">du boulgour<\/a> en guise d&rsquo;accompagnement. Mais elle est \u00e9galement d\u00e9licieuse avec <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">du pain pita<\/a> frais ou du boulgour au beurre.
