C&rsquo;est le<strong> kibbeh de pommes de terre<\/strong>! Du moins sous sa forme de croquette. Le kibbeh est en effet incroyablement vari\u00e9 et peut \u00eatre pr\u00e9par\u00e9 et d\u00e9gust\u00e9 de diff\u00e9rentes mani\u00e8res. Mais commen\u00e7ons par le commencement &#8230;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le kibbeh ? Qu&rsquo;est-ce que c&rsquo;est au juste ?<\/h2>\n\n\n\n<p>Si tu connais d\u00e9j\u00e0 mon blog et que tu t&rsquo;y r\u00e9gales r\u00e9guli\u00e8rement de d\u00e9licieuses recettes, tu as peut-\u00eatre d\u00e9j\u00e0 d\u00e9couvert la recette classique <a href=\"https:\/\/bistrobadia.de\/fr\/croquettes-de-kibbeh\/\" target=\"_blank\" rel=\"noreferrer noopener\">du kibbeh<\/a>. Comme le kibbeh est tr\u00e8s polyvalent et a donc plusieurs visages, je vais parler de la <strong>forme de croquettes<\/strong> que tu vois sur la photo. Le kibbeh est un classique absolu de la cuisine orientale, en particulier de la cuisine du Levant.<\/p>\n\n\n\n<p>Le kibbeh se compose toujours d&rsquo;une p\u00e2te de boulgour fin + X. Tu peux remplacer le X par des pommes de terre, du potiron, des lentilles ou, comme dans la variante classique et la plus connue, de la viande. Dans le cas de la pomme de terre kibbeh, des pommes de terre cuites \u00e0 l&rsquo;eau sont m\u00e9lang\u00e9es \u00e0 du boulgour fin et \u00e0 des \u00e9pices pour former une p\u00e2te qui constitue ensuite l&rsquo;enveloppe ext\u00e9rieure des croquettes.<\/p>\n\n\n\n<p>Les ingr\u00e9dients de la p\u00e2te des kibbeh de pommes de terre sont les suivants<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pommes de terre<\/strong>: tu devrais choisir des pommes de terre \u00e0 chair ferme.<\/li>\n\n\n\n<li><strong>Boulgour fin<\/strong>: le boulgour est un bl\u00e9 broy\u00e9 que tu peux obtenir en diverses granulom\u00e9tries. Le boulgour fin est \u00e9galement connu sous le nom de <em>gruau de bl\u00e9<\/em>.<\/li>\n\n\n\n<li><strong>Basilic<\/strong>: apporte son go\u00fbt et son parfum inimitables.<\/li>\n\n\n\n<li><strong>Les \u00e9pices<\/strong>: Pour ma recette, tu as besoin de cumin, de cannelle, de piment, de muscade ainsi que de sel et de poivre.<\/li>\n<\/ul>\n\n\n\n<p>Une fois la p\u00e2te pr\u00eate, il suffit d&rsquo;\u00e9taler le kibbeh sur une assiette et de l&rsquo;arroser d&rsquo;huile d&rsquo;olive, tout comme le kibbeh de pommes de terre. Tu peux alors d\u00e9guster ce d\u00e9lice directement avec <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">du pain pita<\/a>. Sur une table de mezze, o\u00f9 l&rsquo;on sert (comme pour les tapas) de nombreuses petites assiettes, le kibbeh est souvent servi sous forme de croquettes. Et ces croquettes sont d\u00e9licieusement fourr\u00e9es.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Une d\u00e9licieuse farce \u00e0 base d&rsquo;oignons et de pignons de pin<\/h2>\n\n\n\n<p>Dans le kibbeh original, la farce est compos\u00e9e de viande hach\u00e9e avec des oignons, des \u00e9pices et des pignons. Pour ce kibbeh v\u00e9g\u00e9talien, nous le farcissons d&rsquo;<strong>oignons<\/strong> et <strong>de pignons<\/strong> <strong>grill\u00e9s<\/strong> dans de l&rsquo;huile d&rsquo;olive et d&rsquo;une bonne dose d&rsquo;\u00e9pices acidul\u00e9es. <a href=\"https:\/\/bistrobadia.de\/fr\/sumac-racine-de-table-du-levant\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>sumac<\/strong><\/a>.<\/p>\n\n\n\n<p>Les kibbeh de pommes de terre sont ensuite farcis avec ce m\u00e9lange \u00e0 base d&rsquo;oignons et mis dans leur forme typique presque en losange. Je t&rsquo;explique exactement comment proc\u00e9der dans la fiche recette ci-dessous. M\u00eame si les deux ou trois premi\u00e8res croquettes de kibbeh ne sont pas parfaites, tu y arriveras certainement avec un peu de pratique. Sinon, il suffit de les rouler en boulettes &#8211; elles seront d\u00e9licieuses quelle que soit la forme que tu leur donneras.<\/p>\n\n\n\n<p>Apr\u00e8s avoir form\u00e9 les kibbeh de pommes de terre, il ne te reste plus qu&rsquo;\u00e0 les faire frire rapidement dans de l&rsquo;huile chaude jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient bien dor\u00e9s. Elles sont alors d\u00e9licieusement croustillantes \u00e0 l&rsquo;ext\u00e9rieur et bien juteuses \u00e0 l&rsquo;int\u00e9rieur.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pr\u00e9parer et savourer plus tard<\/h2>\n\n\n\n<p>Tu peux bien s\u00fbr pr\u00e9parer les croquettes de pommes de terre Kibbeh un jour \u00e0 l&rsquo;avance et les faire frire juste avant le repas. Je te conseille de toujours servir et manger les kibbeh juste apr\u00e8s les avoir fait frire, car c&rsquo;est \u00e0 ce moment-l\u00e0 qu&rsquo;ils ont le meilleur go\u00fbt.<\/p>\n\n\n\n<p>Au cas o\u00f9 il te resterait quelques-unes de ces petites choses, tu peux aussi les <strong>congeler<\/strong>. Veille toutefois \u00e0 placer les petites croquettes c\u00f4te \u00e0 c\u00f4te (par exemple sur une assiette) pendant une heure au cong\u00e9lateur et \u00e0 les mettre ensuite dans un sac de cong\u00e9lation. Tu \u00e9viteras ainsi que les kibbeh de pommes de terre n&rsquo;adh\u00e8rent les uns aux autres lors de la cong\u00e9lation. Une fois congel\u00e9es, les croquettes farcies se conservent environ 6 mois.<\/p>\n\n\n\n<p>Apr\u00e8s la d\u00e9cong\u00e9lation, tu dois les repasser au four ou les faire frire bri\u00e8vement. M\u00eame si <strong><mark>Kibbet Batata<\/mark><\/strong>comme cette esp\u00e8ce <mark>Kibbeh<\/mark> en arabe, sont \u00e9galement d\u00e9licieuses en solo, les croquettes farcies se marient parfaitement avec des <a href=\"https:\/\/bistrobadia.de\/fr\/taboul\u00e9\/\" target=\"_blank\" rel=\"noreferrer noopener\">Tabouleh<\/a>, <a href=\"https:\/\/bistrobadia.de\/fr\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">Houmous<\/a> et <a href=\"https:\/\/bistrobadia.de\/fr\/fromage-frais-libanais-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">Labneh<\/a>. Mais peu importe ce que tu serviras avec ce d\u00e9lice, il sera toujours d\u00e9licieux !
