En effet, plus le produit est de <strong>qualit\u00e9<\/strong>, plus il est savoureux. Le gras est un vecteur de go\u00fbt, alors choisissez quelques morceaux d&rsquo;agneau avec un bord de gras.<\/p>\n\n<p>Vous \u00eates en train de planifier votre prochain barbecue et vous ne savez pas combien de viande vous devez facturer par personne ? Ce n&rsquo;est pas non plus une t\u00e2che facile, car il y a des gens qui mangent de grandes portions ou de petites portions.<\/p>\n\n<p>Par d\u00e9faut, je compte <strong>150 g \u00e0 200 g<\/strong> de viande <strong>par personne<\/strong>. En fonction de la quantit\u00e9 de graisse et d&rsquo;os dans la viande d&rsquo;agneau, j&rsquo;en ach\u00e8te parfois plus. En fait, j&rsquo;ach\u00e8te toujours un peu plus parce que j&rsquo;ai peur qu&rsquo;il n&rsquo;y ait pas assez de nourriture&#8230; en g\u00e9n\u00e9ral, il reste tellement de choses \u00e0 la fin de la soir\u00e9e que chacun re\u00e7oit une bo\u00eete \u00e0 lunch \u00e0 la maison.<\/p>\n\n<p>Vous pouvez aussi simplement demander conseil \u00e0 votre boucher si vous n&rsquo;\u00eates pas s\u00fbr du nombre de c\u00f4telettes. Il a \u00e9galement toujours quelques conseils pour la marinade et le temps de cuisson de l&rsquo;agneau. Mais vous ne savez pas ce qu&rsquo;il y a dedans. Il peut \u00eatre particuli\u00e8rement dangereux en cas d&rsquo;allergie. C&rsquo;est pourquoi je vous conseille &#8211; de pr\u00e9parer vous-m\u00eame la marinade pour les c\u00f4telettes. C&rsquo;est \u00e9galement tr\u00e8s rapide et facile avec ma recette de base et le temps de pr\u00e9paration est super court.<\/p>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/be38da35-42e3-4359-8c45-38f02c13d59a.jpeg\" alt=\"\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n<h3 class=\"wp-block-heading\" id=\"h-lamm-wurzen-mediterrane-aromen\">Assaisonner l&rsquo;agneau &#8211; Saveurs m\u00e9diterran\u00e9ennes<\/h3>\n\n<p>Il existe de nombreuses <strong>marinades pour barbecue<\/strong>, mais je pr\u00e9f\u00e8re les m\u00e9langes d&rsquo;\u00e9pices levantins et m\u00e9diterran\u00e9ens &#8211; c&rsquo;est \u00e9vident.<\/p>\n\n<p>Comme base, vous pouvez toujours utiliser <strong>de l&rsquo;huile d&rsquo;olive<\/strong>, <strong>de l&rsquo;ail<\/strong> et <strong>du sel<\/strong>. <strong>Des herbes<\/strong> fra\u00eeches comme le thym, le romarin, l&rsquo;origan, la coriandre ou la menthe s&rsquo;y associent alors. Mais <strong>des \u00e9pices<\/strong> comme le cumin, la coriandre, le <a href=\"https:\/\/bistrobadia.de\/fr\/sumac-racine-de-table-du-levant\/\">sumac<\/a>, le piment ou la cannelle s&rsquo;y pr\u00eatent \u00e9galement de mani\u00e8re fantastique. Parfois, m\u00eame une petite pinc\u00e9e suffit.<\/p>\n\n<p>Vous pouvez bien s\u00fbr utiliser des m\u00e9langes pr\u00eats \u00e0 l&#8217;emploi comme les <strong>herbes de Provence<\/strong>, les <strong>herbes italiennes<\/strong> ou les <strong>\u00e9pices pour agneau<\/strong>.<\/p>\n\n<p>Si vous aimez que votre viande soit particuli\u00e8rement tendre, ajoutez <strong>du jus de citron<\/strong> frais \u00e0 votre marinade. L&rsquo;acidit\u00e9 rend la viande tendre comme du beurre.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-lange-soll-das-fleisch-marinieren\">Combien de temps la viande doit-elle mariner ?<\/h3>\n\n<p>Pour que la marinade p\u00e9n\u00e8tre bien dans la viande, il ne faut pas en faire trop peu ! La viande d&rsquo;agneau doit ensuite y reposer <strong>pendant 12 \u00e0 24<\/strong> heures au r\u00e9frig\u00e9rateur. Si vous n&rsquo;avez plus beaucoup de temps, au moins <strong>4 heures<\/strong>. Et si vous avez encore moins de temps, il suffit de frotter l&rsquo;agneau avec du sel et de le d\u00e9guster avec un d\u00e9licieux <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/fr\/beurre-zaatar\/\" target=\"_blank\">beurre Za&rsquo;atar<\/a>.<\/p>\n\n<p>Le temps de pr\u00e9paration des c\u00f4telettes d&rsquo;agneau grill\u00e9es est donc vraiment tr\u00e8s court. Seule la marinade a besoin de plus de temps pour s&rsquo;impr\u00e9gner. Pour la <strong>viande d&rsquo;agneau<\/strong>, la <strong>temp\u00e9rature \u00e0 c\u0153ur<\/strong> doit se situer <strong>entre 55 et 65 \u00b0C<\/strong>. La <strong>viande d&rsquo;agneau<\/strong> doit \u00eatre cuite <strong>\u00e0 temp\u00e9rature ambiante<\/strong>:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Rose fonc\u00e9<\/strong> (\u00e0 point) : <strong>55-60 \u00b0C<\/strong><\/li>\n\n\n\n<li><strong>Rose clair<\/strong> (moyen) : <strong>61-64 \u00b0C<\/strong><\/li>\n\n\n\n<li>Bien <strong>cuit<\/strong> (well done) : <strong>65+ \u00b0C<\/strong><\/li>\n<\/ul>\n\n<p>Le temps de cuisson des c\u00f4telettes d&rsquo;agneau d\u00e9pend un peu de votre barbecue, ou si vous utilisez un barbecue au charbon de bois ou au gaz. Si vous utilisez un <strong>barbecue au charbon de bois<\/strong>, veillez \u00e0 mettre un peu moins de charbon sur le bord du barbecue afin d&rsquo;avoir une r\u00e9partition <strong>directe<\/strong> de la chaleur au centre et <strong>indirecte<\/strong> sur le bord. J&rsquo;ai un barbecue \u00e0 gaz sur mon balcon. Celui-ci dispose d&rsquo;une grande surface \u00e0 chaleur directe et d&rsquo;une grille de maintien au chaud \u00e0 chaleur indirecte, id\u00e9ale pour laisser reposer la viande.<\/p>\n\n<p>Grillez les c\u00f4telettes d&rsquo;agneau <strong>pendant environ 1 \u00e0 2 minutes<\/strong> \u00e0 <strong>chaleur directe<\/strong> \u00e9lev\u00e9e, puis mettez-les \u00e0 <strong>chaleur indirecte<\/strong> <strong>pendant 4 \u00e0 5 minutes<\/strong> pour les laisser reposer. Le jus de viande se d\u00e9pose alors. Si vous n&rsquo;\u00eates pas s\u00fbr que la viande a atteint le niveau de cuisson souhait\u00e9, vous pouvez simplement la couper et la tester. Si elle est encore trop saignante, vous pouvez continuer \u00e0 la cuire dans la zone indirecte et la couper \u00e0 nouveau apr\u00e8s <strong>1 \u00e0 2 minutes<\/strong>.<\/p>\n\n<p>Plus la viande est grill\u00e9e longtemps, plus elle devient <strong>dure<\/strong>. Veillez donc \u00e0 ne pas l&rsquo;exposer trop longtemps \u00e0 la chaleur et \u00e0 respecter le temps de pr\u00e9paration. En effet, la plupart des gens aiment que leurs grillades <strong>soient<\/strong> l\u00e9g\u00e8rement <strong>ros\u00e9es<\/strong> &#8211; elles sont ainsi <strong>tendres<\/strong> et <strong>juteuses<\/strong>.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-zutaten-fur-saftige-lammkoteletts-und-die-marinade\">Ingr\u00e9dients pour des c\u00f4telettes d&rsquo;agneau juteuses et la marinade<\/h2>\n\n<p>Heureusement, pour cette recette simple et rapide, vous n&rsquo;avez besoin que d&rsquo;une poign\u00e9e d&rsquo;ingr\u00e9dients qui donnent un go\u00fbt bombastique.
