Pour moi, la brochette est aussi un souvenir de famille, un souvenir des journ\u00e9es ensoleill\u00e9es pass\u00e9es dehors.<\/p>\n\n<p>Chaque famille a sa propre recette, mais les bases sont les m\u00eames. Les viandes et les l\u00e9gumes peuvent varier, mais toutes les r\u00e9gions s&rsquo;accordent sur le mode de pr\u00e9paration : la viande doit \u00eatre grill\u00e9e sur un feu ou sur un barbecue. Et pour que votre <strong>brochette au barbecue<\/strong> soit tendre et juteuse, vous trouverez tous les conseils n\u00e9cessaires dans cette <strong>recette<\/strong> de Shish Kebab.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-shish-kebab-ein-kulinarisches-erlebnis-aus-der-levante\">Shish Kebab : une exp\u00e9rience culinaire du Levant<\/h2>\n\n<p>Le nom <em>Shish Kebab<\/em> provient du turc \u015ei\u015f <strong>Kebap<\/strong>, qui signifie \u00a0\u00bb <em>brochette\u00a0\u00bb<\/em> et <em>\u00ab\u00a0viande grill\u00e9e ou r\u00f4tie\u00a0\u00bb<\/em>. Cette d\u00e9signation dit en fait tout. Il s&rsquo;agit d&rsquo;une brochette de viande \u00e0 griller &#8211; et c&rsquo;est ce que je mets sur mon barbecue pendant la saison des grillades.<\/p>\n\n<p>L&rsquo;art d&#8217;embrocher et de griller de petits morceaux de viande existe bien s\u00fbr partout dans le monde. Mais chaque r\u00e9gion a ses particularit\u00e9s. Au fil du temps, la brochette d&rsquo;agneau a \u00e9volu\u00e9 au Levant et a pris des formes diff\u00e9rentes selon les r\u00e9gions, comme le <strong>kebab d&rsquo;Adana<\/strong> en Turquie, qui utilise un m\u00e9lange de viande d&rsquo;agneau et de b\u0153uf. Il s&rsquo;agirait alors d&rsquo;une brochette de viande hach\u00e9e. Un authentique chich kebab est traditionnellement fait avec <strong>de l&rsquo;agneau<\/strong>. L&rsquo;agneau est connu pour son go\u00fbt intense. Mais il est \u00e9galement possible d&#8217;embrocher d&rsquo;autres types de viandes ou d&rsquo;alternatives \u00e0 la viande.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-lammfleisch-der-klassiker\">L&rsquo;agneau &#8211; un grand classique<\/h3>\n\n<p>Lorsque l&rsquo;on parle de chich kebab, beaucoup pensent imm\u00e9diatement \u00e0 l&rsquo;agneau &#8211; et pour cause. L&rsquo;agneau est la viande <strong>classique<\/strong> pour cette brochette de barbecue et s\u00e9duit par son ar\u00f4me incomparable. Mais pour r\u00e9v\u00e9ler tout le potentiel de la viande d&rsquo;agneau, il faut choisir la bonne marinade &#8211; je vous la d\u00e9voilerai plus tard.<\/p>\n\n<p>La qualit\u00e9 de la viande d&rsquo;agneau joue un r\u00f4le essentiel dans le r\u00e9sultat final. Il vaut la peine de veiller \u00e0 la fra\u00eecheur et \u00e0 l&rsquo;origine de la viande et de l&rsquo;acheter directement chez le boucher.  <\/p>\n\n<p>Pour que tous les ar\u00f4mes soient mis en valeur lors de la cuisson au barbecue, prenez de l&rsquo;agneau avec un <strong>pourcentage de graisse<\/strong>. En effet, la graisse est un vecteur de go\u00fbt et maintient en outre la viande grill\u00e9e bien juteuse. Il est donc pr\u00e9f\u00e9rable de commander <strong>du gigot<\/strong> ou <strong>de l&rsquo;\u00e9paule d&rsquo;agneau<\/strong>.<\/p>\n\n<p>Mes parents avaient l&rsquo;habitude de prendre des petits morceaux de graisse d&rsquo;agneau pure et de les placer entre les morceaux de viande et les l\u00e9gumes. Ainsi, la brochette \u00e9tait encore plus juteuse.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-welche-fleischsorten-kann-ich-fur-shish-kebab-verwenden-wenn-ich-kein-lammfleisch-mag\">Quelles viandes puis-je utiliser pour le chich kebab si je n&rsquo;aime pas l&rsquo;agneau ?<\/h3>\n\n<p>Si vous n&rsquo;aimez pas l&rsquo;agneau, vous pouvez bien s\u00fbr opter pour une autre viande. Le shish kebab est polyvalent et vous permet \u00e9galement d&rsquo;exprimer vos pr\u00e9f\u00e9rences personnelles et de faire des exp\u00e9riences cr\u00e9atives. Outre l&rsquo;agneau, le <strong>b\u0153uf<\/strong> ou <strong>le poulet<\/strong> peuvent \u00e9galement \u00eatre utilis\u00e9s, chacun apportant son propre caract\u00e8re au plat. Pour les <strong>brochettes de poulet<\/strong>, vous pouvez essayer directement ma recette de <a href=\"https:\/\/bistrobadia.de\/fr\/brochettes-de-poulet-shish-taouk\/\">shish taouk<\/a>.<\/p>\n\n<p>Pour le b\u0153uf, vous pouvez utiliser de <strong>la hanche<\/strong> ou <strong>de l&rsquo;entrec\u00f4te<\/strong>. Ces coupes ont une bonne teneur en graisse pour que votre chich kebab soit bien juteux.  <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-veganer-kebab-eine-pflanzliche-alternative\">Kebab v\u00e9g\u00e9talien : une alternative v\u00e9g\u00e9tale<\/h3>\n\n<p>Pour ceux qui pr\u00e9f\u00e8rent un r\u00e9gime <strong>v\u00e9g\u00e9tarien<\/strong> ou <strong>v\u00e9g\u00e9talien<\/strong>, il existe <strong>des alternatives<\/strong> tout aussi d\u00e9licieuses. Le tofu, le seitan ou m\u00eame le jacquier, qui offrent une texture similaire \u00e0 celle de la viande, peuvent tr\u00e8s bien \u00eatre utilis\u00e9s pour faire une brochette sur le barbecue. Vous pouvez simplement reprendre la marinade et y laisser mariner le <strong>tofu<\/strong> ou le jacquier pendant la nuit, par exemple, ou si vous faites votre <strong>seitan<\/strong> vous-m\u00eame, vous pouvez y m\u00e9langer directement les \u00e9pices.<\/p>\n\n<p>Ces alternatives v\u00e9g\u00e9tales sont certes un tout autre <strong>plaisir pour les grillades<\/strong>, mais elles prouvent que la pr\u00e9paration des brochettes peut \u00eatre polyvalente. Ainsi, tout le monde peut profiter d&rsquo;un succulent shish kebab, quelles que soient ses habitudes alimentaires personnelles &#8211; bien que je donnerais alors effectivement un autre nom \u00e0 la brochette.  <\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-gewurze-und-marinaden-das-aroma-entscheidet\">\u00c9pices et marinades &#8211; l&rsquo;ar\u00f4me fait la diff\u00e9rence<\/h2>\n\n<p>D\u00e8s que les premi\u00e8res brochettes sont plac\u00e9es sur le barbecue, le spectacle des saveurs commence. Le parfum qui se d\u00e9gage alors me met vraiment directement l&rsquo;eau \u00e0 la bouche. Et ce n&rsquo;est pas seulement d\u00fb \u00e0 la viande, mais aussi aux \u00e9pices.<\/p>\n\n<p>Le <strong>secret<\/strong> de tout chich kebab r\u00e9side dans la marinade. Il permet non seulement d&rsquo;assouplir la viande, mais aussi de r\u00e9partir uniform\u00e9ment les \u00e9pices.<\/p>\n\n<p>Ensuite, il faut absolument ajouter de l&rsquo;ail, du citron, des \u00e9pices ainsi que des herbes pour faire la marinade parfaite. Si vous voulez vraiment que ce soit tr\u00e8s basique, les ingr\u00e9dients suivants suffisent. Ma recette personnelle suivra plus loin. Voici les bases :<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Huile d&rsquo;olive<\/li>\n\n\n\n<li>Gousses d&rsquo;ail<\/li>\n\n\n\n<li>Jus de citron (vous pouvez \u00e9galement utiliser le zeste de citron)<\/li>\n\n\n\n<li>sel et poivre<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-gewurze-und-aromatische-krauter\">\u00c9pices et herbes aromatiques<\/h3>\n\n<p>La cuisine levantine se distingue par son utilisation, certes puissante, mais encore subtile, des \u00e9pices. L&rsquo;ar\u00f4me naturel de la nourriture doit \u00eatre soulign\u00e9 et non masqu\u00e9. Veillez donc toujours \u00e0 cela lorsque vous assaisonnez et faites mariner vos aliments.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"h-das-essentielle-die-zutaten-fur-shish-kebab\">L&rsquo;essentiel &#8211; Les ingr\u00e9dients du chich kebab<\/h2>\n\n<p><strong>Pour les brochettes, vous avez besoin des ingr\u00e9dients suivants :<\/strong><\/p>\n\n<ul class=\"wp-block-list\">\n<li>Viande d&rsquo;agneau ou de b\u0153uf (avec un grain riche en graisse)<\/li>\n\n\n\n<li>Ail<\/li>\n\n\n\n<li>Zitronensaft<\/li>\n\n\n\n<li>\u00c9pices : Paprika en poudre, cumin, cardamome, noix de muscade, cannelle, sumac, flocons de piment, piment, sel et poivre.<\/li>\n\n\n\n<li>Huile d&rsquo;olive<\/li>\n\n\n\n<li>Oignons<\/li>\n\n\n\n<li>en option : poivrons color\u00e9s<\/li>\n<\/ul>\n\n<p>Classiquement, nous accompagnons toujours les brochettes grill\u00e9es d&rsquo;une d\u00e9licieuse salade d&rsquo;oignons avec du persil frais et du sumac.<\/p>\n\n<p>Pour la salade d&rsquo;oignons, vous avez besoin de<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Gros oignon<\/li>\n\n\n\n<li>Persil plat<\/li>\n\n\n\n<li>Sumac<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-wie-lange-sollte-das-fleisch-marinieren\">Combien de temps la viande doit-elle mariner ?<\/h3>\n\n<p>La viande pour le shish kebab doit \u00eatre marin\u00e9e <strong>pendant<\/strong> au moins <strong>60 minutes<\/strong> et jusqu&rsquo;\u00e0 <strong>12 heures<\/strong>. Si vous voulez que la viande soit <strong>\u00e0 point<\/strong>, utilisez un thermom\u00e8tre<strong>(temp\u00e9rature \u00e0 c\u0153ur<\/strong> d <strong>&lsquo;environ 58-60\u00b0C<\/strong>). Mais vous pouvez aussi toujours go\u00fbter directement un morceau de la brochette.<\/li>\n\n\n\n<li>Pour la salade d&rsquo;oignons, coupez les oignons en fines rondelles, hachez le persil, m\u00e9langez bien le tout avec le sumac et laissez reposer.<\/li>\n<\/ol>\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" data-src=\"https:\/\/images.surferseo.art\/d742b65e-4c19-44fa-a21a-7d58e306628b.jpeg\" alt=\"Faites mariner les oignons sumac avec du persil dans un bol.\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><\/figure>\n\n<p>La pr\u00e9paration et la cuisson de la recette sont donc super faciles et parfaites pour toutes les soir\u00e9es barbecue.  <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-mein-geheimtipp-fur-shish-kebab\">Mon secret pour le chich kebab<\/h3>\n\n<p>C&rsquo;est ce que j&rsquo;ai appris de mes parents : lorsque vous faites griller les brochettes de viande, vous devez mettre de c\u00f4t\u00e9 un <a href=\"https:\/\/bistrobadia.de\/fr\/pain-pita-libanais\/\" target=\"_blank\" rel=\"noreferrer noopener\">pain pita libanais<\/a> frais. Je d\u00e9chire ensuite le pain pita, je le pose sur ma main comme un linge et je pose ensuite la brochette grill\u00e9e dessus un instant.  <\/p>\n\n<p>Cela me permet de tamponner le <strong>jus de viande<\/strong> sur les brochettes de viande. Le pain pita est ainsi aromatis\u00e9 avec la marinade et le jus de viande et constitue alors un en-cas parfait pour accompagner la brochette. Se marie parfaitement avec le houmous, par exemple.<\/p>\n\n<p>En outre, le pain pita peut \u00e9galement servir d&rsquo;assiette de service tr\u00e8s simple. Apr\u00e8s avoir fini de griller les brochettes, je les pose sur une galette de pain et j&rsquo;en tamponne \u00e0 nouveau la viande. Le pain s&rsquo;impr\u00e8gne ainsi de fantastiques <strong>ar\u00f4mes de barbecue<\/strong>. Ensuite, la galette remplie de brochettes est recouverte d&rsquo;une autre galette. Ces deux salades ont une superbe acidit\u00e9 fra\u00eeche et offrent un bon contrepoint \u00e0 la viande savoureuse du shish kebab.<\/p>\n\n<p>Mais pour moi, le chich kebab est toujours accompagn\u00e9 d&rsquo;une salade d&rsquo;oignons avec du persil et du sumac, ainsi que d&rsquo;un bon morceau d&rsquo;houmous et de pain pita. Soit je d\u00e9chire un morceau de pain et j&rsquo;y mets un morceau de viande \u00e0 la broche et un peu de salade d&rsquo;oignons, puis je passe le tout dans du houmous cr\u00e9meux &#8211; soit je fais directement un <strong>wrap<\/strong> avec les m\u00eames composants.<\/p>\n\n<p>Pour le wrap, j&rsquo;\u00e9tale le houmous dans le pain pita, je r\u00e9partis la salade d&rsquo;oignons et je place la brochette au milieu du pain. La fra\u00eecheur acidul\u00e9e du tsatsiki se marie \u00e0 merveille avec les riches saveurs de la viande grill\u00e9e.
