Para mim, atayef sempre teve o estatuto:&nbsp;<em>C\u00f3digo Vermelho<\/em>&nbsp;&#8211; muito dif\u00edcil, mas muito saboroso. Por isso, foi muito mais agrad\u00e1vel experimentar que estas pequenas coisas cheias s\u00e3o muito f\u00e1ceis de fazer com um pouco de talento.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-o-que-e-o-atayef\">O que \u00e9 o Atayef?<\/h2>\n\n\n\n<p>Os Atayef s\u00e3o&nbsp;<strong>panquecas<\/strong>&nbsp;recheadas com uma esp\u00e9cie de pudim de leite chamado&nbsp;<a href=\"https:\/\/bistrobadia.de\/pt\/pudim-de-leite-ashta-com-maracuj%C3%A1\/\" target=\"_blank\" rel=\"noreferrer noopener\">ashta<\/a>. S\u00e3o depois guarnecidas com&nbsp;<strong>pist\u00e1cios<\/strong>&nbsp;picados e regadas com calda de a\u00e7\u00facar. O meu tio n\u00e3o se limita a reg\u00e1-las, afoga-as &#8211; mas bem, ele \u00e9 um viciado em a\u00e7\u00facar.<\/p>\n\n\n\n<p>A massa e o pudim quase n\u00e3o cont\u00eam a\u00e7\u00facar. Por conseguinte, a&nbsp;<strong>calda de a\u00e7\u00facar (attir)<\/strong>&nbsp;desempenha um papel crucial. Desta forma, cada um pode determinar o grau de do\u00e7ura. A&nbsp;<strong><a href=\"https:\/\/bistrobadia.de\/pt\/guia-de-%C3%A1gua-de-sangue-laranja\/\" target=\"_blank\" rel=\"noreferrer noopener\">\u00e1gua de<\/a>&nbsp;rosas e&nbsp;<a href=\"https:\/\/bistrobadia.de\/pt\/guia-de-%C3%A1gua-de-sangue-laranja\/\" target=\"_blank\" rel=\"noreferrer noopener\">de flor de laranjeira<\/a><\/strong>&nbsp;d\u00e1 ao atayef a sua t\u00edpica nota oriental.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-atayef-faca-as-suas-proprias-panquecas-recheadas\">Atayef &#8211; fa\u00e7a as suas pr\u00f3prias panquecas recheadas<\/h2>\n\n\n\n<p>Quando a minha m\u00e3e faz estas panquecas recheadas, \u00e9 isto que acontece:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ela faz as panquecas, barra uma de cada vez com o pudim, dobra a panqueca num funil e mergulha tudo em pist\u00e1cios picados.<\/li>\n\n\n\n<li>Depois passa para a panqueca seguinte: Espalha-a, dobra-a em forma de funil, mergulha-a em pist\u00e1cios picados e quer coloc\u00e1-la com a outra panqueca recheada.<\/li>\n\n\n\n<li>MAS&#8230; A primeira panqueca desapareceu! E, por estranho que pare\u00e7a, tamb\u00e9m falta um pouco da calda de a\u00e7\u00facar&#8230; Assim acontece com pelo menos os primeiros quatro atayef &#8211;&nbsp;<strong>misterioso<\/strong>!<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-o-segredo\">O segredo&#8230;<\/h2>\n\n\n\n<p>H\u00e1 uma particularidade na fritura do atayef: s\u00f3 se pode fritar de&nbsp;<strong>um<\/strong>&nbsp;lado!<\/p>\n\n\n\n<p>Enquanto o lado de&nbsp;<strong>baixo<\/strong>&nbsp;est\u00e1 a fritar ligeiramente na frigideira, o lado&nbsp;<strong>de cima<\/strong>&nbsp;lan\u00e7a pequenas bolhas, que depois se transformam em muitas pequenas crateras. Isto acontece porque a massa \u00e9 uma&nbsp;<strong>massa de levedura<\/strong>&nbsp;l\u00edquida. \u00c9 muito importante que apenas um lado seja frito. O lado de cima cozinha lentamente e permanece ligeiramente&nbsp;<strong>pegajoso<\/strong>. \u00c9 assim que as panquecas ficam unidas depois de cobertas.<\/p>\n\n\n\n<p>Admito: o desafio era real, mas dominei-o bem. Os tr\u00eas primeiros atayef correram muito mal, mas os restantes ficaram muito bons &#8211; mas eram todos deliciosos, mesmo os tr\u00eas primeiros.<\/p>\n\n\n\n<hr class=\"wp-block-separator
