N\u00e3o h\u00e1 praticamente nenhuma mesa no Levante sem este delicioso <strong>queijo creme feito de iogurte<\/strong>. O queijo creme faz sempre parte de um bom <strong>mezze<\/strong>! A receita b\u00e1sica n\u00e3o \u00e9 apenas incrivelmente vers\u00e1til, mas tamb\u00e9m incrivelmente <strong>r\u00e1pida <\/strong>e<strong> f\u00e1cil de<\/strong> preparar. E tamb\u00e9m \u00e9 muito <strong>barata<\/strong>! Vou mostrar-lhe aqui como funciona e como pode fazer o seu <strong>pr\u00f3prio labneh<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>O que \u00e9 exatamente o labneh e de onde vem?<\/strong><\/h2>\n\n\n\n<p>O Labneh \u00e9 um <strong>queijo fresco<\/strong> muito cremoso feito <strong>de iogurte<\/strong>. Por conseguinte, \u00e9 por vezes tamb\u00e9m designado por <strong>queijo de iogurte<\/strong>. Tamb\u00e9m intensifica o sabor. O Labneh tem um sabor muito fresco e forte como o iogurte: ligeiramente \u00e1cido e maravilhosamente cremoso a at\u00e9 cremoso.<\/p>\n\n\n\n<p>Quanto mais tempo deixar o iogurte no coador, mais l\u00edquido (soro) perder\u00e1, tornando-se assim mais firme e com um sabor mais intenso. Assim, pode decidir por si pr\u00f3prio qu\u00e3o cremoso quer que o seu queijo creme de iogurte seja.&nbsp;<\/p>\n\n\n\n<p>Por falar em cremosidade: o teor de gordura do iogurte tamb\u00e9m determina a consist\u00eancia e o sabor. Gosto de usar 10% de iogurte para o meu labneh. O facto de a gordura ser um transportador de sabor torna-o n\u00e3o s\u00f3 mais cheio, mas tamb\u00e9m mais suave.<\/p>\n\n\n\n<p>Se utilizar iogurte com um teor de gordura mais baixo, por exemplo, o seu queijo creme tamb\u00e9m ser\u00e1 cremoso, mas tamb\u00e9m ser\u00e1 definitivamente mais \u00e1cido do que se tiver mais gordura no iogurte. N\u00e3o se preocupe, isto parece mais ci\u00eancia do que \u00e9 necess\u00e1rio. Tudo est\u00e1 escrito de forma clara e concisa na minha receita abaixo.&nbsp;<\/p>\n\n\n\n<p><strong>Um pequeno truque da minha m\u00e3e:<\/strong><\/p>\n\n\n\n<p>A forma mais engra\u00e7ada de preparar o labneh \u00e9, sem d\u00favida, a da minha m\u00e3e: a dada altura, perdeu o pano de coar e procurou em todas as gavetas da casa. Nada, nenhum pano de coar. Que bom que a necessidade \u00e9 sempre a m\u00e3e da inven\u00e7\u00e3o.<\/p>\n\n\n\n<p>Assim, depois de ter revistado metade do apartamento, voltou a desaparecer por breves instantes na cozinha e regressou \u00e0 sala de estar com um caf\u00e9 e um sorriso. &#8220;Ent\u00e3o, encontraste o pano para o passaporte?&#8221;, perguntei.&nbsp;<\/p>\n\n\n\n<p>Ela bebeu o seu mocha cautelosamente e disse presun\u00e7osamente: &#8220;N\u00e3o, essa gaze pode ficar onde quer que esteja escondida! Pensei que desta vez ter\u00edamos de passar sem o queijo cremoso de iogurte, mas com um movimento da cabe\u00e7a em dire\u00e7\u00e3o \u00e0 cozinha e olhos risonhos, ela indicou que eu devia dar uma vista de olhos.<\/p>\n\n\n\n<p>Depois, quando entrei na cozinha, vi o suporte do filtro da m\u00e1quina de caf\u00e9 dobrado para fora. Quando me aproximei, vi que tinha um filtro de caf\u00e9 l\u00e1 dentro &#8211; e iogurte. Que inteligente! Tive de me rir, era t\u00e3o simples.&nbsp;<\/p>\n\n\n\n<p>Tamb\u00e9m peguei numa ch\u00e1vena da <a href=\"https:\/\/bistrobadia.de\/pt\/kaffee-auf-libanesisch-mokka-mit-kardamom\/\">moca<\/a> acabada de fazer e sentei-me novamente com a minha m\u00e3e. Est\u00e1vamos a beber a nossa moca quando ouvimos o meu irm\u00e3o da cozinha: &#8220;Baaaa! O que est\u00e1s a fazer?&#8221;! &#8211; O meu irm\u00e3o prefere beber caf\u00e9 com filtro&#8230;.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Onde<strong> comprar?<\/strong><\/h2>\n\n\n\n<p>\u00c9 claro que agora tamb\u00e9m pode comprar labneh em alguns supermercados bem abastecidos, delicatessens ou mercados orientais. Mas sejamos honestos: pode realmente fazer o queijo creme de forma t\u00e3o f\u00e1cil e r\u00e1pida que n\u00e3o vale a pena o esfor\u00e7o de o comprar.<\/p>\n\n\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Como e com que se come o labneh?<\/strong><\/h2>\n\n\n\n<p>Como disse no in\u00edcio &#8211; o labneh \u00e9 muito vers\u00e1til. Tradicionalmente, o queijo creme \u00e9 regado com um pouco de azeite e guarnecido com za&#8217;atar. \u00c9 sempre acompanhado por legumes frescos como petisco, azeitonas em conserva e, claro, <a href=\"https:\/\/bistrobadia.de\/pt\/p\u00e3o-pita-leban\u00eas\/\" target=\"_blank\" rel=\"noreferrer noopener\">p\u00e3o pita<\/a> fresco. O Labneh \u00e9 ent\u00e3o simplesmente arrastado atrav\u00e9s do labneh com o \u00f3leo e za&#8217;atar com um peda\u00e7o de p\u00e3o pita.<\/p>\n\n\n\n<p>A prop\u00f3sito, o <a href=\"https:\/\/bistrobadia.de\/pt\/gewuerz-zatar-zaatar-oder-zaatar\/\">Za&#8217;atar<\/a> \u00e9 uma mistura de especiarias muito popular no Levante, feita de tomilho, sementes de s\u00e9samo torradas, sumagre e uma pitada de sal.&nbsp;<\/p>\n\n\n\n<p>O Labneh tamb\u00e9m \u00e9 excelente como pasta para barrar ou mesmo como ingrediente para pratos salgados e doces. Tal como acontece com outros produtos de iogurte, existem muitos probi\u00f3ticos bons no Labneh, que s\u00e3o importantes para uma digest\u00e3o saud\u00e1vel e promovem a sa\u00fade intestinal.<\/p>\n\n\n\n<p>Se fizeres labneh sozinho e o iogurte perder o l\u00edquido no pano de coar, deves recolh\u00ea-lo. O l\u00edquido \u00e9 o <strong>soro de leite<\/strong>.&nbsp;<\/p>\n\n\n\n<p>O soro de leite \u00e9 um subproduto da produ\u00e7\u00e3o de todos os tipos de queijo e de requeij\u00e3o. Este l\u00edquido ligeiramente amarelado \u00e9 rico em prote\u00ednas, vitaminas e minerais. Pode utilizar o soro de leite recolhido para melhorar os batidos, por exemplo.
