Sem o molho de s\u00e9samo, o hummus seria simplesmente uma papa de gr\u00e3o-de-bico com alho e lim\u00e3o. \u00c9 a cremosidade do tahini que faz dos populares dips &amp; cremes do Levant o que eles s\u00e3o: Verdadeiras iguarias!<\/p>\n\n\n\n<p>Costumava comprar tahini a granel no supermercado oriental. Sabe como \u00e9: o tahini que compra \u00e9 muitas vezes um pouco mais velho e j\u00e1 percorreu um longo caminho. Por isso, demora muito tempo a chegar \u00e0 prateleira da loja. Tamb\u00e9m se senta na loja durante algum tempo. Isto faz com que o \u00f3leo de s\u00e9samo se separe da pasta de gergelim. O resultado \u00e9 um bonito double-decker, mas \u00e9 necess\u00e1rio mistur\u00e1-lo bem antes de o poder usar como ingrediente. A qualidade \u00e9 tamb\u00e9m frequentemente vari\u00e1vel. Por vezes, obt\u00e9m-se tahini muito bom e outras vezes, infelizmente, um pouco amargo demais.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-100-gergelim\">100% gergelim<\/h5>\n\n\n\n<p>Entretanto, prefiro comprar muitas sementes de gergelim descascado e fazer o meu pr\u00f3prio tahini. \u00c9 t\u00e3o f\u00e1cil que me perguntei porque demorei tanto tempo a levantar a minha A**** e finalmente a tentar. Porque tudo o que precisa \u00e9 de sementes de s\u00e9samo. \u00c9 tudo o que precisa!<\/p>\n\n\n\n<p>Claro que tamb\u00e9m \u00e9 necess\u00e1rio um liquidificador que tenha um pouco de pot\u00eancia e n\u00e3o tenha um colapso circulat\u00f3rio ap\u00f3s 5 minutos e desista do fantasma por causa da respira\u00e7\u00e3o ofegante. Mas n\u00e3o precisa de mais nada al\u00e9m de sementes de s\u00e9samo.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-misturar-ate-o-medico-chegar\">Misturar at\u00e9 o m\u00e9dico chegar<\/h5>\n\n\n\n<p>A primeira vez que fiz o meu pr\u00f3prio tahini, fiquei um pouco c\u00e9ptico. Como \u00e9 que \u00e9 suposto 100% s\u00e9samo transformar-se numa pasta t\u00e3o aveludada e oleosa? E o meu liquidificador consegue mesmo moer estes pequenos gr\u00e3os? As minhas d\u00favidas encolheram a cada segundo que as pequenas sementes de s\u00e9samo rodavam no misturador. No in\u00edcio parecia que nada estava a acontecer e estavam apenas a ser rodados em c\u00edrculos como um carrossel, mas ao fim de alguns minutos algo aconteceu.<\/p>\n\n\n\n<p>Em primeiro lugar, a consist\u00eancia tornou-se escamosa e podia-se ver directamente como os gr\u00e3os se transformavam em refei\u00e7\u00e3o grosseira. Alguns momentos depois, o misturador j\u00e1 podia conter mais sementes de s\u00e9samo. Depois tudo aconteceu muito rapidamente. As sementes anteriormente ainda solteiras tornaram-se uma massa, depois uma bola, depois tornou-se cremosa, depois, a certa altura, realmente l\u00edquida. Emocionante! Quando pus a m\u00e3o na misturadora, reparei que a massa no interior estava realmente quente. Isso ficou a dever-se ao atrito. E \u00e9 exactamente por isso que o \u00f3leo saiu das sementes de s\u00e9samo at\u00e9 que tudo se misturou numa papa. O resultado: o melhor tahini!<\/p>\n\n\n\n<p>Ap\u00f3s a mistura, coloco o tahini num frasco esterilizado e tenho sempre algum para as pr\u00f3ximas por\u00e7\u00f5es de hummus. E quando est\u00e1 vazio, o misturador tem de voltar ao trabalho \ud83d\ude09<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-antes-da-mistura-vem-a-torrefaccao\">Antes da mistura vem a torrefac\u00e7\u00e3o<\/h5>\n\n\n\n<p>A beleza do tahini caseiro \u00e9 que ele se revela da maneira que se quer. Antes de as sementes de s\u00e9samo entrarem no misturador, s\u00e3o primeiro suavemente tostadas numa frigideira. \u00c9 importante ficar com ele e continuar a mexer e agitar as sementes de s\u00e9samo para que n\u00e3o ardam. Adoro quando o cheiro maravilhoso do gergelim assado se espalha pela cozinha. Pode determinar voc\u00ea mesmo o grau de torrefac\u00e7\u00e3o e, portanto, a intensidade do sabor do seu tahini. Asso as sementes de s\u00e9samo durante um m\u00e1ximo de 10 minutos em lume m\u00e9dio. As sementes de s\u00e9samo permanecem ent\u00e3o bastante leves, mas recebem calor suficiente para intensificarem o seu sabor.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-o-primeiro-mutabbal-com-o-seu-proprio-tahini\">O primeiro mutabbal com o seu pr\u00f3prio tahini<\/h5>\n\n\n\n<p>H\u00e1 muitas lendas sobre o mutabbal. Alguns dizem que o mutabbal \u00e9 um creme feito a partir de beringela e tahini. Isto \u00e9 correcto. Outros dizem que o mutabbal \u00e9 um creme feito de gr\u00e3o-de-bico e tahini. Isto tamb\u00e9m \u00e9 correcto. Serei breve. O Mutabbal \u00e9 uma forma de fazer um creme. <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/pt\/hummus\/\" target=\"_blank\">Hummus<\/a>, <a rel=\"noreferrer noopener\" href=\"https:\/\/bistrobadia.de\/pt\/creme-de-beringela-baba-ghanoush\/\" target=\"_blank\">baba ghanoush<\/a>, etc. pertencem ao tipo de mutabbal. Um creme feito com alho, lim\u00e3o e montes de tahini. O meu primeiro mutabbal com tahini caseiro foi hummus. E posso dizer-vos que foi o melhor h\u00famus que alguma vez fiz.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\" id=\"h-porque-deve-fazer-o-seu-proprio-tahini\">Porque deve fazer o seu pr\u00f3prio tahini?<\/h5>\n\n\n\n<p>Infelizmente, n\u00e3o creio que se consiga obter tahini em todos os supermercados. E se o fizer, \u00e9 muitas vezes muito caro. A qualidade tamb\u00e9m varia frequentemente. Se fazes o teu pr\u00f3prio tahini, \u00e9s o mestre da qualidade! Trate-se de sementes de gergelim org\u00e2nico descascadas. Determine voc\u00ea mesmo a intensidade do sabor torrando o gergelim.
