{"id":21665,"date":"2023-06-29T09:48:00","date_gmt":"2023-06-29T07:48:00","guid":{"rendered":"https:\/\/bistrobadia.de\/kibbeh-kroketten\/"},"modified":"2024-01-18T10:49:29","modified_gmt":"2024-01-18T09:49:29","slug":"croquetes-de-kibe","status":"publish","type":"post","link":"https:\/\/bistrobadia.de\/pt\/croquetes-de-kibe\/","title":{"rendered":"Croquetes de quibe &#8211; um cl\u00e1ssico do Levante!"},"content":{"rendered":"\n<p class=\"has-drop-cap\">N\u00e3o creio que haja uma iguaria que seja mais sin\u00f3nimo de cozinha levantina do que <strong>o kibbeh<\/strong>, a par do <a href=\"https:\/\/bistrobadia.de\/pt\/hummus\/\" target=\"_blank\" rel=\"noreferrer noopener\">hummus<\/a>, do <a href=\"https:\/\/bistrobadia.de\/pt\/fa\u00e7a-o-seu-pr\u00f3prio-falafel\/\" target=\"_blank\" rel=\"noreferrer noopener\">falafel<\/a> e do <a href=\"https:\/\/bistrobadia.de\/pt\/queijo-fresco-liban\u00eas-labneh\/\" target=\"_blank\" rel=\"noreferrer noopener\">labneh<\/a>. N\u00e3o sei quantas vezes j\u00e1 comi este prato em diferentes varia\u00e7\u00f5es. <strong>Os croquetes<\/strong> de kibbeh ou kibbeh maklieh s\u00e3o uma parte indispens\u00e1vel das <a href=\"https:\/\/bistrobadia.de\/pt\/categoria\/mezze-rezepte\/\" target=\"_blank\" rel=\"noreferrer noopener\">mesas de mezze<\/a> generosamente recheadas &#8211; e, desde crian\u00e7a, roubei sempre o primeiro croquete pronto da cozinha da minha m\u00e3e. Ainda hoje \u00e9 assim.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kibbeh: O que \u00e9 que isso quer dizer?<\/h3>\n\n\n\n<p>O kibbeh \u00e9 uma especialidade incrivelmente deliciosa da cozinha oriental, especialmente no Levante. Basicamente, o kibbeh consiste numa massa feita de carne mo\u00edda muito finamente e bulgur fino, al\u00e9m de algumas especiarias. A massa do kibbeh serve ent\u00e3o de inv\u00f3lucro exterior para um recheio de carne picada frita bem temperada e pinh\u00f5es. \u00c9 poss\u00edvel preparar varia\u00e7\u00f5es muito diferentes a partir desta massa.<\/p>\n\n\n\n<p>Uma das varia\u00e7\u00f5es mais conhecidas do quibe \u00e9 o croquete de quibe, com a sua forma verdadeiramente distinta. \u00c9 <strong>oval<\/strong>, com <strong>os cantos<\/strong> ligeiramente pontiagudos. A primeira vez que os fiz, foi, sem d\u00favida, um pouco dif\u00edcil. Mas com um pouco de pr\u00e1tica, rapidamente deixou de ser um problema.<\/p>\n\n\n\n<p>Para al\u00e9m dos croquetes de kibbeh, esta iguaria tamb\u00e9m est\u00e1 dispon\u00edvel como uma esp\u00e9cie de bolo (pode encontrar a receita no meu livro de receitas), em que a massa serve de base e cobertura e o recheio picado est\u00e1 no meio. Esta vers\u00e3o \u00e9 cozinhada no forno &#8211; ao contr\u00e1rio dos croquetes fritos.<\/p>\n\n\n\n<p>Os croquetes de kibbeh sabem melhor quando acabam de ser preparados. S\u00e3o super estaladi\u00e7os no exterior e deliciosamente suculentos no interior. No entanto, deve deix\u00e1-los arrefecer um pouco &#8211; caso contr\u00e1rio, pode queimar-se com o recheio quente. Estes croquetes s\u00e3o tamb\u00e9m chamados <strong>Kibbeh Maklieh<\/strong>.<\/p>\n\n\n\n<p>Os pequenos croquetes s\u00e3o ent\u00e3o frequentemente parte integrante de um mezze sumptuosamente recheado em ocasi\u00f5es especiais.<\/p>\n\n\n\n\n\n<h3 class=\"wp-block-heading\">O que h\u00e1 de especial na receita da nossa fam\u00edlia<\/h3>\n\n\n\n<p>Quando pedi \u00e0 minha m\u00e3e a sua receita de kibbeh, ela fartou-se de a dizer e eu mal conseguia acompanh\u00e1-la. Anotei os seguintes ingredientes para o quibe:<\/p>\n\n\n\n<p><strong>Para a massa do kibbeh:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Carne de bovino (magra)<\/li>\n\n\n\n<li>bulgur fino<\/li>\n\n\n\n<li>Cumin<\/li>\n\n\n\n<li>Canela<\/li>\n\n\n\n<li>Allspice<\/li>\n\n\n\n<li>Nutmeg<\/li>\n\n\n\n<li>manjeric\u00e3o fresco<\/li>\n<\/ul>\n\n\n\n<p>Depois de ter anotado apressadamente pelo menos os ingredientes grosseiros da massa, a minha m\u00e3e disse que o <strong>manjeric\u00e3o<\/strong> \u00e9 o seu ingrediente secreto pessoal e que d\u00e1 \u00e0 sua vers\u00e3o de kibbeh um aroma \u00f3timo e fresco. Posso confirmar isso com toda a certeza!<\/p>\n\n\n\n<p><strong>Para o recheio do kibbeh vai precisar de<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Carne picada<\/li>\n\n\n\n<li>Cebola<\/li>\n\n\n\n<li>Azeite de oliva<\/li>\n\n\n\n<li>Pinh\u00f5es (por vezes tamb\u00e9m usa nozes)<\/li>\n\n\n\n<li>Canela<\/li>\n\n\n\n<li>Sal, pimenta<\/li>\n<\/ul>\n\n\n\n<p>Depois pus m\u00e3os \u00e0 obra e fiz os croquetes de Kibbeh. Foi muito emocionante e, no in\u00edcio, foi um pouco dif\u00edcil conseguir a forma correcta, mas, ap\u00f3s um ou dois croquetes, resultou &#8211; e estavam incrivelmente saborosos!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Preparar a massa do quibe e o recheio<\/h3>\n\n\n\n<p><strong>Preparar o recheio<\/strong><\/p>\n\n\n\n<p>J\u00e1 conhecia este tipo de recheio da receita de sambousek, os bolinhos recheados e fritos. Por isso, foi muito r\u00e1pido de fazer. Simplesmente cortei cebolas e fritei-as com a carne mo\u00edda e os pinh\u00f5es numa frigideira at\u00e9 ficarem estaladi\u00e7as e temperadas com sal, pimenta e canela. \u00c9 muito r\u00e1pido e f\u00e1cil.<\/p>\n\n\n\n<p><strong>Preparar a massa do quibe<\/strong><\/p>\n\n\n\n<p>A massa do kibbeh tamb\u00e9m era bastante f\u00e1cil de fazer. A carne tem de ser mo\u00edda muito finamente numa esp\u00e9cie de farsa. Para o fazer, coloquei simplesmente a carne num liquidificador e depois triturei-a muito bem. Quando a carne estava suficientemente fina, juntei o manjeric\u00e3o e triturei tudo novamente at\u00e9 obter uma massa homog\u00e9nea.<\/p>\n\n\n\n<p>O bulgur fino \u00e9 muito importante para a massa do kibbeh! Se n\u00e3o encontrar bulgur fino no supermercado, pe\u00e7a <strong>grumos de trigo<\/strong> &#8211; \u00e9 assim que este tipo de bulgur tamb\u00e9m \u00e9 chamado. E se mesmo assim n\u00e3o o encontrar, pode simplesmente triturar o bulgur mais grosso num liquidificador. Depois, o bulgur fino s\u00f3 precisa de ser coberto com um pouco de \u00e1gua e deixado inchar durante algum tempo.<\/p>\n\n\n\n<p>Em seguida, amassa-se \u00e0 m\u00e3o a mistura fina de carne com o manjeric\u00e3o, com as especiarias e o bulgur inchado.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Croquetes de kibbeh em forma<\/h3>\n\n\n\n<p>Agora \u00e9 altura de moldar os croquetes! Para moldar os croquetes, j\u00e1 deve ter preparado a massa do quibe e o recheio. N\u00e3o se esque\u00e7a de ter \u00e0 m\u00e3o uma tigela com \u00e1gua fresca e fria. Precisar\u00e1 da \u00e1gua para molhar as m\u00e3os e moldar corretamente os croquetes.<\/p>\n\n\n\n<p>Depois, pegue numa parte da massa e pressione-a na sua m\u00e3o humedecida para formar um c\u00edrculo bastante fino. Coloque um pouco do recheio no meio e feche o c\u00edrculo para formar uma bola.<\/p>\n\n\n\n<p>Agora \u00e9 altura de fechar corretamente a bola e moldar o quibe na sua forma concisa. Humede\u00e7o sempre uma das m\u00e3os e acaricio as costuras com os dedos para as selar corretamente. A \u00e1gua torna a massa exterior mais male\u00e1vel e mais f\u00e1cil de trabalhar.<\/p>\n\n\n\n<p>Depois de as costuras estarem fechadas, dou-lhes forma. Para isso, pego na bola de quibe recheada e pressiono um pouco uma das metades da bola para fazer uma esp\u00e9cie de mossa. Em seguida, dou-lhe a forma de uma ponta e fa\u00e7o o mesmo com o outro lado. O primeiro croquete de quibe est\u00e1 pronto. Agora os outros. N\u00e3o te preocupes, com o tempo vai ficando cada vez mais r\u00e1pido.<\/p>\n\n\n\n<p>Se n\u00e3o lhe apetecer fazer esta forma, pode, naturalmente, fazer uma esp\u00e9cie de croquete redondo ou alm\u00f4ndega recheada.<\/p>\n\n\n\n<p>Os pequenos croquetes s\u00e3o depois simplesmente fritos em \u00f3leo quente durante alguns minutos at\u00e9 ficarem dourados.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Mais varia\u00e7\u00f5es de quibe<\/h3>\n\n\n\n<p>O quibe \u00e9 de facto incrivelmente vers\u00e1til e n\u00e3o se limita apenas a esta forma mais famosa. Basicamente, pode dar-se-lhe a forma que se quiser.<\/p>\n\n\n\n<p>Tamb\u00e9m pode utilizar os croquetes de quibe de muitas maneiras. H\u00e1 o kibe em molho de iogurte ou o kibe em molho de tomate com legumes. H\u00e1 tamb\u00e9m o kibe cru, que \u00e9 servido como uma esp\u00e9cie de t\u00e1rtaro (sem recheio) num prato com azeite.<\/p>\n\n\n\n<p>E por \u00faltimo, mas n\u00e3o menos importante, existem <strong>os kibes<\/strong> <strong>vegetarianos<\/strong> e <strong>veganos<\/strong>. J\u00e1 comi kibes feitos de <a href=\"https:\/\/bistrobadia.de\/pt\/kibe-de-batata\/\" target=\"_blank\" rel=\"noreferrer noopener\">batata<\/a>, ab\u00f3bora e lentilhas, e posso dizer-vos que todos eles s\u00e3o incrivelmente deliciosos. Com o passar do tempo, haver\u00e1 certamente aqui receitas para as outras variedades de kibe.
