Quando fica um pouco mais escuro l\u00e1 fora, gosto de servir o guisado com as vagens verdes. Para mim, esta \u00e9 uma verdadeira comida de conforto. Muitas pessoas perguntam sempre: &#8220;O que \u00e9 o quiabo?&#8221; &#8211; ent\u00e3o deixe-as experimentar. A receita \u00e9 simples! Vou mostrar-lhe como fazer o guisado de quiabo liban\u00eas chamado <strong>Bamya<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-o-que-e-o-quiabo\">O que \u00e9 o quiabo?<\/h2>\n\n\n\n<p>Aposto que, em breve, <strong>o quiabo<\/strong> tamb\u00e9m ser\u00e1 muito popular neste pa\u00eds. As vagens da planta malva <strong>quiabo<\/strong>t\u00eam quase nenhuma gordura, mas uma elevada propor\u00e7\u00e3o de fibras alimentares &#8211; o que \u00e9 muito saud\u00e1vel e bom para a digest\u00e3o. As vagens t\u00eam um sabor suave a muito ligeiramente \u00e1cido e uma consist\u00eancia e textura tenras a ligeiramente lenhosas, consoante o seu tamanho. Penso que se pode comparar um pouco o sabor com o do feij\u00e3o verde. Pode utilizar a vagem poligonal em saladas, <a href=\"https:\/\/bistrobadia.de\/pt\/hummus-com-quiabo\/\" target=\"_blank\" rel=\"noreferrer noopener\">cremes<\/a>, <a href=\"https:\/\/bistrobadia.de\/pt\/quiabo-em-molho-de-tomate\/\" target=\"_blank\" rel=\"noreferrer noopener\">guisados<\/a> e muito mais.<\/p>\n\n\n\n<p>No L\u00edbano, o quiabo chama-se bamya ou bamyeh. E este guisado foi simplesmente batizado com o nome desta fant\u00e1stica vagem. No L\u00edbano, \u00e9 um cl\u00e1ssico absoluto e muito simples de preparar. Salteia-se tudo muito rapidamente, tapa-se e deixa-se cozer em lume brando.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparar-os-quiabos\">Preparar os quiabos<\/h2>\n\n\n\n<p>Bem, h\u00e1 uma ou duas coisas a ter em conta quando se preparam as vagens. Quando se <strong>cozinha<\/strong> o quiabo, este segrega uma esp\u00e9cie de <strong>baba<\/strong> &#8211; n\u00e3o \u00e9 preciso entrar em p\u00e2nico! Isto parece mais desagrad\u00e1vel do que \u00e9 na realidade. Esta propriedade permite <strong>engrossar<\/strong> o guisado sem adicionar amido. Se n\u00e3o quiser que isto aconte\u00e7a de todo, h\u00e1 obviamente uma solu\u00e7\u00e3o.<\/p>\n\n\n\n<p>Antes de cozinhar as vagens, pode primeiro escald\u00e1-las em <strong>\u00e1gua<\/strong> com <strong>vinagre<\/strong> ou <strong>sumo de lim\u00e3o<\/strong> &#8211; e ficar\u00e1 livre de baba. A minha m\u00e3e tinha outro truque para mim. &#8220;Frita-as primeiro, assim j\u00e1 n\u00e3o ficam com baba &#8211; como os carac\u00f3is.&#8221; &#8211; &#8220;Est\u00e1 bem, ent\u00e3o eu frito as vagens a quente.&#8221;<\/p>\n\n\n\n<p>Para al\u00e9m do quiabo, s\u00e3o necess\u00e1rios os seguintes ingredientes para o guisado:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>carne magra<\/li>\n\n\n\n<li>Cebola<\/li>\n\n\n\n<li>Alho<\/li>\n\n\n\n<li>Caldo de legumes<\/li>\n\n\n\n<li>Tomates deformados<\/li>\n\n\n\n<li>bom azeite<\/li>\n\n\n\n<li>Especiarias<\/li>\n\n\n\n<li>Xarope de rom\u00e3<\/li>\n\n\n\n<li>e com prazer tamb\u00e9m um pouco de malagueta<\/li>\n<\/ul>\n\n\n\n<p>A prop\u00f3sito, utilizo a variedade <strong>pequena<\/strong> de quiabo para este guisado, uma vez que \u00e9 <strong>mais tenra<\/strong> do que as vagens maiores e mais compridas. Pode encontrar os ingredientes exactos e a prepara\u00e7\u00e3o do prato abaixo.<\/p>\n\n\n\n<p>Tradicionalmente, a bamya &#8211; como quase todos os guisados &#8211; \u00e9 servida com <a href=\"https:\/\/bistrobadia.de\/pt\/arroz-com-manteiga\/\" target=\"_blank\" rel=\"noreferrer noopener\">arroz<\/a> ou <a href=\"https:\/\/bistrobadia.de\/pt\/bulgur-com-manteiga\/\" target=\"_blank\" rel=\"noreferrer noopener\">bulgur<\/a> como acompanhamento.
